- Cut three bacon strips in half; cook until partially cooked but not crisp. Drain on paper towels., Season chicken with salt and pepper; place in a 3-qt. slow cooker. Top each thigh with a half piece of bacon. Top with onion, pineapple and barbecue sauce., Cover and cook on low for 4-5 hours or until chicken is tender. Cook remaining bacon until crisp; drain and crumble. Sprinkle over each serving.

CHICKEN LUAU
This modern version of a Hawaiian recipe combines chicken with spinach and coconut milk. A more traditional recipe for this dish would use taro leaves instead of spinach, and additional cooking time. You may also try making this recipe with two teaspoons fresh ginger, sliced, in place of the garlic, or in addition to the garlic. Taken from a Hawaiian tourist web site.

Steps:
- Remove bones and skin from chicken breasts and cut meat into 1 inch cubes.
- Heat oil and saute chicken until lightly browned; add garlic and saute one minute.
- Pour chicken stock over the browned meat and garlic, and simmer 10 minutes or until chicken is tender.
- Drain the thawed spinach, then stir spinach and coconut milk into the chicken mixture. Simmer five minutes.
- Serve with rice.
LUAU CHICKEN
This recipe was originally called "Chicken Delight" and came from my mother. I don't know where she got it from. I re-named it "Luau Chicken" for use at a Hawaiian themed party.

Steps:
- Depending on how many people you have, you can increase or decrease this recipe very easily.
- Put the drummettes or wings or chicken pieces in a baking dish.
- Mix the dressing with packaged dry onion soup mix and can (s) of whole berry cranberries.
- If you are making this for a few people, just use one bottle of dressing, one can of cranberries, and one envelope of onion soup mix.
- Increase portions for more drummetes or wings.
- Pour mix of dressing, cranberries and soup over the drummettes or wings, and bake at 350 for an hour and 15 minutes.
CHICKEN AND PORK LAU LAU

- For the luau leaves, have a large bowl of ice water standing by. In a large pot fitted with a steamer basket (or use a stainless steel colander with handles), steam the luau leaves until soft but still bright green, and then plunge the steamer basket into the ice water to stop the cooking. Set the steamer basket on a utility platter or over a pot to let drain well and cool.
- Lay the steamed luau leaves out on your work surface, then lay a piece of chicken or a piece of pork on each leaf topped with a piece of fish. Season with sea salt. Enclose the meat and fish in the luau leaves and then package them in ti leaves or aluminum foil. If you are using ti leaves, arrange the leaves perpendicular to each other in across arrangement. The stem of the ti leaf acts as the "string" to tie the package shut. The chicken and pork lau lau can then be cooked in an imu (the earthen oven) or in a conventional oven at 350 degrees F until cooked through, about 1 hour. - Prepare fresh coconut milk or use canned coconut milk. Cut chicken into bite-sized pieces. In saucepan, heat oil; add crushed garlic. Add chicken and brown. Sprinkle with 1 teaspoon salt and add 1 cup water. Cover and simmer until chicken is tender. Wash taro leaves; remove tough stems. Place leaves in a pan with 1 1/2 cups water and 1/2 teaspoon salt. Simmer, partially covered, for one hour. Drain and squeeze water out. Drain chicken; combine with luau leaves. Add coconut milk and bring to a boil. Serve immediately. Note: Fresh spinach may be substituted if luau is not available. Fun Fact: Always held at sunset, usually near the beach where the sun sets beautifully over the ocean, a Hawaiian lu¯'au typically lasts several hours. While you are enjoying the feast, talented performers entertain and educate you about Hawaiian culture with colorful and dramatic dances in traditional costumes. The hula is the most popular dance, where girls in grass skirts perform graceful movements to the strums of the ukulele. Usually the audience gets an opportunity to learn the dance as well. - Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet combine the pineapple juice, brown sugar, ketchup, ginger, garlic salt, cornstarch and soy sauce. Simmer all together for 5 minutes over low heat.
- Place cooked chicken, bell pepper, onion, and water chestnuts in a 9x13 inch baking dish. Pour skillet mixture/sauce over the top. Cover dish with aluminum foil and bake in the preheated oven for 1 hour.

- Drain pineapple, reserving 1 cup juice and six pineapple slices (save remaining juice and pineapple for another use). In a large resealable plastic bag, combine the brown sugar, ground mustard, garlic salt, pepper and reserved pineapple juice; add chicken. seal bag and turn to coat; refrigerate for at least 2 hours, turning occasionally., In a small bowl, combine the mayonnaise, Dijon mustard and dill. Refrigerate until serving., Drain and discard marinade. Grill the chicken, covered, over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Grill pineapple slices for 1 minute on each side. , Spread mayonnaise mixture on roll bottoms. Layer with lettuce if desired, chicken and pineapple. Replace roll tops.
