I recently received this recipe from a friend who makes his own maple syrup. My family often requests these slightly sweet kabobs for our summer Sunday dinner cookout.

Number Of Ingredients 8

8 small new potatoes or 1 large potato, cut into 8 chunks
3 carrots, cut into 8 pieces (2 inches each)
1 pork tenderloin (1 pound)
1 large green or large sweet red pepper
8 large mushrooms
1/4 cup butter, cubed
1/4 cup maple syrup
1-1/2 teaspoons grated orange zest

Steps:

  • Place potatoes and carrots in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until crisp-tender. Drain., Cut pork into 12 equal pieces and pepper into eight chunks. Onto four metal or wood skewers, thread meat and vegetables alternately; set aside., In a small saucepan, combine the butter, syrup and orange zest; cook and stir over low heat until butter is melted. , Grill kabobs, uncovered, over medium heat for 5 minutes; turn and baste with butter mixture. Cook for 12-14 minutes longer or until the meat juices run clear, turning and basting frequently.

2 pounds flank steak
2 tablespoons Montreal steak seasoning
1 12-ounce jar roasted red peppers, halved
1 cup shredded pepper jack cheese
1 tablespoon canola oil
1 teaspoon Montreal steak seasoning
1/2 cup plain yogurt
1/2 tablespoon hot sauce
1/2 tablespoon Worcestershire sauce
1/2 tablespoon chopped fresh parsley

Steps:

  • Preheat a grill to medium. Butterfly the steak by cutting horizontally through the center until the two halves open flat. Cover with plastic wrap and pound it to about 1/4 inch thick. Cut into 3 equal rectangles.
  • Lay out each steak rectangle. Season with 1 tablespoon steak seasoning. Lay a piece of the roasted red pepper along the bottom edge of each. Sprinkle each with 1/3 cup cheese. Starting at the bottom edge, roll each rectangle into a tight log. Place the 3 rolls parallel to one another. Pierce the 3 rolls with 6 evenly spaced skewers so each skewer goes through the center of all rolls. Slice the rolls between the skewers to make 6 skewers with 3 pieces on each. Season with the remaining 1 tablespoon steak seasoning.
  • Make the spicy yogurt sauce: Combine the steak seasoning, yogurt, hot sauce, Worcestershire sauce and parsley in a bowl.

  • Thread a small chunk each of Black Forest ham, weisswurst or bratwurst, and slab bacon onto 12 small skewers. Bake on a foil-lined baking sheet at 450 degrees F until just starting to brown, about 10 minutes. Mix 3 tablespoons maple syrup with a pinch of cayenne; brush on both sides of the skewers and sprinkle generously with coarsely ground black pepper. Continue baking until the bacon is crisp, 7 to 9 more minutes. Brush with the remaining syrup mixture and sprinkle with more black pepper.

4 sourdough bread slices
2 tablespoons unsalted butter
4 cheddar cheese slices
8 bacon strips
½ cup maple syrup
⅓ cup brown sugar
black pepper, to taste

Steps:

  • Preheat the oven to 400°F (200°C), and double line a large baking sheet with aluminum foil fitted with a wired rack; set aside.
  • In a small mixing bowl add maple syrup and brown sugar, then mix until combined with no lumps.
  • Place bacon strips evenly on the wired rack and generously brush maple syrup mixture over the top of the bacon and bake for 12 to 15 minutes. Remove from the oven, flip each strip and brush on the remaining mixture. Return to the oven and continue to cook for another 8-10 minutes or until it reaches your desired level of crispiness, then garnish with coarse black pepper.
  • Heat a skillet over medium heat. Butter one side of each slice of bread. Place the buttered side down on the skillet, add 2 slices of cheddar cheese then top with the remaining slice of bread, buttered side out.
  • Cook until bread is toasted and golden and cheese starts to melt, about 2 minutes. Flip, and cook until cheese melty and bread toasted and golden. Remove from heat, and set aside for 5 mins.
  • Cut each grilled cheese sandwich into even 1.5x1.5-inch squares, set aside.
  • Assemble each skewer starting with a grilled cheese square, then bacon strip, alternating until the end by spiralling the bacon strip in-between each square until finished. Serve and enjoy!

6 tablespoons sesame ginger salad dressing, divided
1 tablespoon reduced-sodium soy sauce

1 tablespoon lime juice
1/4 teaspoon pepper
1 tablespoon sesame seeds, toasted

Steps:

Glaze
1/2 cup pure maple syrup
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
4 cups fruit chunks such as pineapple, peaches, and/or bananas

Steps:

  • Build a charcoal fire for direct grilling. Soak the bamboo skewers in a bowl of water and set aside.
  • Combine the glaze ingredients in a medium bowl and mix well. Add the fruit and toss gently to coat with the glaze. Cover and refrigerate.
  • Thread the fruit on the soaked skewers, alternating each fruit type. Place the skewers on the grill and cook directly over medium-high heat for 1 1/2 minutes on each side, or until browned and caramelized. Serve warm.

This is one of my favorite pork marinade! It tastes so good, everyone will want this recipe! You can also try this one with chicken. Enjoy! Note : the preparation time does not include the marinating time.

2 lbs pork tenderloin, cut in cubes (fillet)
6 tablespoons maple syrup
3 1/2 tablespoons light soy sauce
4 garlic cloves, minced
1 teaspoon coriander (dry & ground)
1 teaspoon olive oil (or canola)
fresh black pepper (crushed)
salt (to taste)

Steps:

  • Blend all the ingredients for the marinade except the salt. Put the pork cubes in a large freezer bag, then put the marinade on top of the pork. Remove excess air from the bag and blend it well so all the pork cubes are covered in the marinade. Put the bag in the fridge for 6 hours or for the night.
  • Use metal skewers to do this recipe.
  • Set your oven on Broil. Put the pork & vegetables that you selected (I recommend bell peppers, onions, mushrooms, etc.) on your metal skewers. Put in the oven for 10-20 min (it depends of the force of your oven). Turn the skewers half-time so they'll cooked uniformly. Salt to taste before serving. If you salt the skewers before cooking them, the meat will loose a lot of juices, we don't want that! ;-).
  • Serve on hot cooked rice or couscous.
  • Bon appétit!
