This Mississippi sweet potato pie is very popular in the South. It's a particular favorite at our house because we always have plenty of sweet potatoes in our garden. Try it with a dollop of whipped cream. -Bonnie Holcomb, Fulton, Mississippi

Ingredients

1 sheet refrigerated pie crust
1-2/3 cups sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg
Pinch salt
1 cup mashed sweet potatoes
2 large eggs, room temperature
1/2 cup butter, softened
1/4 cup light corn syrup
3/4 cup evaporated milk

Steps:

Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, combine sugar, flour, nutmeg and salt. In a large bowl, beat potatoes, eggs, butter, corn syrup and flour mixture. Gradually stir in milk. Pour into crust., Bake for 55-60 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

Ingredients

2 cups sweet potatoes (mashed) boil them with skin on . Peel when cool.
1 Tbp butter or margarine
3/4 cup sugar
1/2 tps salt
1 tps cinnamon
1/2 tps ground ginger
1/4 tps ground clover (optional)
1 2/3 cups evaporated milk
1 tps vanilla extract
2 eggs

Steps:

Preheat oven to 425 degrees F. Mix the first 8 ingredients to taste before adding the eggs. Bake at 425 for the first 15 minutes reduce heat to 350 and for 45 minute. Mattie suggests serving with vanilla ice cream or a do-lop of whipped cream.
