1 (3-pound) chicken, cut into 8 pieces
3 cups buttermilk
1 cup honey
2 teaspoons chopped chipotle chiles in adobo
8 cups vegetable oil
4 cups all-purpose flour
2 teaspoons cornstarch
Kosher salt and freshly ground pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika

Steps:

  • In a large bowl, combine the chicken and buttermilk; refrigerate at least 24 hours and up to 2 days. In a food processor, combine the honey and chiles; blend until smooth. Set the chipotle honey aside.
  • In a large Dutch oven, heat the oil to 350 degrees F. In a large bowl, whisk together the flour, cornstarch, 2 teaspoons salt, 1 1/2 teaspoons pepper, garlic powder, onion powder, and paprika.
  • Working in batches, remove the chicken from the marinade and dredge in the seasoned flour; repeat. Add the chicken to the hot oil and fry until cooked through, about 12 to 15 minutes per batch. Repeat with the remaining chicken.

1 chicken whole or 4 leg quarters
salt and pepper
4 cloves garlic
2 stalks of lemongrass
3 bay leaves
2 stalks of celery
cilantro leaves

Steps:

  • Pound the lemongrass. Make sure to get the juices out. Rub it on to the chicken. Mince the garlic and mix it together with salt and pepper. Rub it to the chicken. Slip more of the mix under the skin. You need some TLC while rubbing it under the skin, you don't want the skin to tear. Throw in some bay leaves, peppercorns, cilantro leaves and celery (or any herbs and spices to add more flavor) in a steamer. Steam the chicken for 30 minutes. Hang it to dry or for faster results pat try with paper towels. Proceed to the next step or you can put it in the fridge until you are ready to cook it. Make sure to bring the chicken out an hour before cooking. Now here's where you decide what to do next: a: Submerge the chicken in a pot full of oil and deep fry it on high heat. b: Bake it at 375F in an oven, or in my case, the turbo broiler, until very crispy. When you hear the skin crackling, voila, it's done! Either you bake it or fry it, you will enjoy a tasty, crispy fried chicken ala Max's. As I've said before have some banana ketchup and Worcestershire sauce. And if you would want to have some heat, add some hot sauce. Go ahead, mix that sauce just the way you like it and enjoy this crispy fried chicken.

Ingredients:
1 whole spring chicken (cornish game hen)
6 pieces dried bay leaves
1/4 cup chopped cilantro or parsley
4 cups water
3 cups cooking oil
2 tsp salt
1 tsp ground black pepper

Steps:

  • Cooking Procedure 1. In a steamer, pour the water and bring to a boil. 2. Add the dried bay leaves and chopped cilantro in the boiling water 3. Steam the chicken for 45 minutes 4. Remove the chicken from the steamer and allow the excess liquid to drip. Let the chicken cool down. 5. Rub salt and pepper all over the chicken. 6. In a deep-fryer or tall pot, pour the cooking oil and apply heat. 7. When the cooking oil is hot enough, deep-fry the chicken for about 12 minutes. (If the chicken is not entirely immersed in oil, flip the chicken to fry the other side for another 12 minutes or until color turns golden brown) 8. Remove the chicken from the fryer and allow oil to drip. 9. Serve hot with fried kamote (fried sweet potato). Share and Enjoy

My neighbor gave me this recipe around 1962. It originated from Max, the owner of the former Chicken Roost Restaurant in Hamilton, Ontario, Canada. Double the sauce recipe for large quantities of chicken. It has a wonderful aroma while baking. If you don't have homemade or canned chicken stock, use a tablespoon of chicken soup base mix dissolved in 1 cup hot water.

celery, chopped (optional)
onion, chopped (optional)
broiler chickens or broiler-fryer chicken
1 cup chicken stock, homemade, canned
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 teaspoon paprika
1/2 teaspoon salt, to taste
1/4 cup vegetable oil

Steps:

  • Line deep pan with chopped celery and onion (optional).
  • Cut chicken into serving pieces.
  • Mix all the sauce ingredients; chicken stock, Worcestershire sauce, garlic powder, pepper, paprika, salt and vegetable oil.
  • Dip chicken pieces in sauce and place in a pan in a single layer.
  • Bake in a preheated 450 degrees Fahrenheit oven for 15 minutes.
  • Reduce heat to 250 degrees Fahrenheit.
  • Bake for another hour, basting frequently with sauce. Set your timer for every 15 to 20 minutes for a basting reminder.
