2 eggs
1 cup sugar
1/2 cup olive oil
3/4 cup milk
1 1/4 cups flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 tablespoons orange zest
2 tablespoons orange marmalade
1/3 cup slivered almonds

Steps:

  • Mix together wet ingredients plus sugar and zest.
  • add dry ingredients (reserving the marmalade and almond slivers).
  • bake 30 minutes at 375°F.
  • When unmoulded, melt the marmalade and spread over the cake.
  • Toast the almonds briefly in a dry skillet and distribute on top of the cake.

  • Combine the sugar and eggs in a medium-size bowl. Whisk well until light and fluffy (30-40 seconds).
  • While the cake is cooling in the pan, make the glaze by combining the powdered sugar and orange juice and in a small bowl. Stir until smooth.
