FANCY MEATLOAF
"I was invited to cook dinner for Nora Ephron." As was wont to happen at one point in New York. Back in 2009, Sam Sifton was invited to a potluck in which "guests were meant to bring food inspired by Ephron's career or by the woman herself." He drew meatloaf, a dish she was known for. Here, in this recipe adapted from Gourmet, he pairs beef, veal, pancetta and Parmesan. The end result, he described, as "luxurious." And what did Ms. Ephron think? She called it "remarkable."

- Heat oven to 375 degrees. Soak bread in milk for 10 minutes.
- Mix beef, veal, eggs, pancetta, Parmesan, parsley and lemon zest in a large bowl. Season liberally with salt and pepper. Squeeze the bread to remove excess milk, then chop and add it to the meat. Mix gently until well combined, but do not overmix. Transfer onto a board and shape into a fine meatloaf, shy of a foot in length and 4 inches across. Loosely cover and refrigerate for 15 minutes.
- Heat oil and butter in a large, ovenproof skillet over medium-high heat. Add meatloaf and sear without moving it until it is browned, about 5 minutes. Carefully slide a spatula under the meatloaf, then gently use another spatula to help turn it and brown the second side, again without moving it for 5 minutes. Transfer to a plate.
- Pour out all but 2 tablespoons of the fat, return skillet to the stove and raise heat to high. Add wine and deglaze pan, scraping up browned bits stuck to it with a wooden spoon. Return meatloaf to the skillet and then transfer to the oven, basting occasionally with the pan juices, until a meat thermometer inserted into the center of the loaf reads 150 degrees, about 25 minutes.
- Transfer the meatloaf to a platter and let stand, tented with foil, 10 minutes. Slice, pour the pan juices over the top and serve.

- First thing to do is to heat the pan and add some olive oil. Into the pan, tear up some sage and rosemary. Then, add 2 chopped onions and 2 chopped carrots. Add salt and black pepper. Slowly fry on a medium low heat for 20-25 minutes. Let it caramelize.
- Next is a surprising star ingredient, which is fennel. Use 4 medium-sized fennel bulbs cut into wedges. Lay the bulbs in the bottom of the roasting pan. Then, add a few chopped fennel tops for extra flavor. Season them with salt and black pepper, then, drizzle some olive oil. Give it all a good toss. Roast your fennel for 30 minutes in the oven at 180 degrees C.
- Next, take a mix of 1 kilo of minced pork shoulder and 1 kilo of minced beef brisket. Into the mince, add cooled down fried onions and carrots and 200 g of bread crumbs. Then, add 2 eggs and 2 teaspoons of grain mustard. To take the meatloaf to the next level, tear in a ball of mozzarella. Mix that a really good mix. Once mixed, form it into a loaf shape and lay it in your dish of half roasted fennel. Then, crisscross the rashes of smoked bacon. To keep it juicy, wet some greaseproof paper and cover your meatloaf.
- Place your meatloaf into the oven at 180 degrees C and roast it initially for 30 minutes.
- In 30 minutes, remove your meatloaf out of the oven and prepare a delicious sauce. Take 500 ml of chicken stock and 1 tablespoon of sundried tomato paste. Then, add 2 tablespoons of black current jam. Give it a good stir.
- Pour the sauce over your meatloaf. Place some fresh sage and rosemary on top.
- Place the meatloaf back into the oven for 45 minutes at 180 degrees C.
- In 45 minutes the dish is ready.

TWENTY-FIVE INGREDIENT MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- Heat oil in heavy skillet. Add green onions, celery, garlic, carrot, onion and peppers and saute until sweated, about 5 minutes. Do not overcook. Set aside to cool. Combine salt, black and white peppers, cayenne, cumin, garlic powder, paprika, thyme, sugar and eggs in a large bowl and beat well. Add half-and-half and ketchup and blend thoroughly. Add meats, breadcrumbs, cilantro and cooled vegetables to egg mixture and blend thoroughly with hands for about 5 minutes. With damp hands, form the mixture into an oval resembling a long loaf of bread. Place on a cookie sheet that has been lined with foil and sprayed with cooking spray. Cover with foil. Bake 45 minutes, then uncover and bake 15 minutes more. Let rest for 20 minutes before slicing and serving.
MIGHTY MEATY MEATLOAF
Steps:
- Position rack in center of oven and preheat the oven to 350 degrees F.
- Heat the vegetable oil in a skillet over medium heat. Add the onion, celery, bell pepper, garlic, salt, basil, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes. Remove from the heat and set aside to cool.
- In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.
- In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Baby Bam, Dijon mustard, and Worcestershire sauce, and whisk to combine. Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.
- Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape. Wash hands again.
- To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and 15 minutes.
- Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan, An adult should help you here. Be careful, hot grease can really burn. Slice to serve.
- Place all the ingredients in a mixing bowl. Stir well to combine, using a wooden spoon.
- Store in an airtight container for up to 3 months.

- For the meatloaf: Preheat oven to 375 degrees. Place a large skillet over medium heat, and add the olive oil, onions and garlic. Sauté until translucent and tender, 3 to 4 minutes. Remove from heat and set aside to cool.
- In a large mixing bowl, combine ground beef, eggs and milk. Mix well by hand, and add bread crumbs, mustard, barbecue sauce, horseradish, and cooked onions and garlic. Mix again, and add the parsley, salt, pepper and thyme. Mix well until thoroughly combined.
- Spread the croutons across a shallow 8-inch-square baking dish. Top with the meatloaf mix, patting the surface so it is level. Bake until the internal temperature reads 165 degrees on an instant-read thermometer and the top is nicely browned, about 1 hour. Toward the end of baking, prepare the chili shrimp.
- For the chili shrimp: In a small mixing bowl, combine the chili powder, cayenne pepper, paprika and flour. Dredge the shrimp in the mixture until well coated. Place a small skillet over medium heat, and add the chili oil. When it is hot, add the shrimp and cook for 2 minutes a side.
- To finish, cut the meatloaf into 4 slices. Place a slice on each of 4 plates, and top with a chili shrimp. If desired, serve with mashed potatoes.

- Preheat oven 350'.
- In a large bowl combine Italian sausage and hamburger.
- In a small skillet add butter and saute garlic,onion and green pepper together til lightly brown.Add worcestershire sauce and simmer another minute.Add mixture to the bowl that the meat is inches.
- Add kosher salt,tomato sauce,whipping cream,egg mix well.
- Add breadcrumbs and crumbled durkee french fried onion rings,Italian seasoning,basil,Accent and black pepper.
- Combine all together and place in a lightly greased casserole dish.
- Bake for 1 hour.
- NOTE: You may need to add more milk if its to dry while mixing together. Also more or less breadcrumbs, onion and peppers depending on your taste.
