MOM'S SPICY CHICKEN TOMATO STEW

My mother's recipe, I've never had another chicken stew like it! Overflowing with chicken, tomato, and chili flavor! Great with grilled cheese sandwiches on a winter day.

2 pounds bone-in, skin-on chicken thighs
4 cups water, or as needed to cover
6 medium potatoes, peeled and cubed, or more to taste
2 (14.5 ounce) cans diced tomatoes, undrained
1 small white onion, chopped, or to taste
1 tablespoon chili powder, or more to taste
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste
2 (14.5 ounce) cans cream-style corn

Steps:

  • Arrange chicken in a single layer in the bottom of a large Dutch oven. Add water to cover and bring to a boil. Lower heat and simmer until no longer pink at the bone and the juices run clear, 20 to 35 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Use a slotted spoon to remove chicken to a plate to cool; leave cooking liquid in the pot. When cool enough to handle, remove and discard chicken skin and bones. Shred meat and set aside.
  • Add potatoes, diced tomatoes, onion, chili powder, salt, and pepper to the pot. Cook until potatoes are tender, 20 to 25 minutes.
  • Add corn and shredded chicken to stew. Cook until heated through, 5 to 10 minutes. Taste and adjust seasonings. Simmer for another 10 to 15 minutes before serving.

A creamy chicken stew that is perfect for when you are craving comfort food.

2 tablespoons salted butter
2 pounds boneless, skinless chicken thighs, or more to taste
3 medium carrots, sliced
1 medium onion, diced
2 stalks celery, chopped
4 cloves garlic, minced
2 cups chicken broth, divided
4 cups diced potatoes
2 tablespoons gluten-free all-purpose flour
1 tablespoon Worcestershire sauce
2 large bay leaves
1 teaspoon poultry seasoning
1 teaspoon dried thyme leaves
1 teaspoon freshly ground black pepper
½ teaspoon dried rosemary
½ teaspoon salt
1 cup heavy cream
½ cup frozen peas

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), add butter, and select Saute function. Add chicken thighs to melted butter and sear, 4 to 5 minutes per side. Remove chicken and set aside.
  • Add carrots, onion, and celery; cook until onions begin to soften, about 5 minutes. Add garlic and saute until fragrant, about 1 minute. Add 1/2 cup chicken broth and stir to deglaze the pot.
  • Add chicken thighs back to the pot along with remaining chicken broth, potatoes, flour, Worcestershire sauce, bay leaves, poultry seasoning, thyme, pepper, rosemary, and salt. Stir together, then close and lock the lid.
  • Switch to high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Remove chicken and shred or cut into bite-sized pieces. Return to the pot. Remove and discard bay leaves.
  • Set cooker to Saute. Add heavy cream and bring to a boil. Add frozen peas to boiling stew and cook, stirring as needed, until heated through, about 5 minutes.

This is one of my Mom's recipes, just as she had it written. I used to love to have it at her house for Sunday dinner. Makes a great winter meal, steaming hot and filling. (Cook time includes time to cook chicken initially.)

1 large cheap old chicken
2 carrots, coarsely chopped
2 celery ribs, coarsely chopped
1 large onion, chopped
2 bay leaves
1 tablespoon garlic powder
1/2 teaspoon salt
1/2 cup soy sauce
1 package knox herb soup mix
3 potatoes, peeled and coarsely chopped
1 (10 ounce) package frozen peas
2 cups Bisquick
1 cup water

Steps:

  • Place first 7 ingredients in large pot; cover with water.
  • Add soy sauce; simmer until chicken is tender, about 1 1/2 hours.
  • Remove chicken from pot; cool and debone.
  • Replace chicken to pot.
  • Add Knox soup mix, potatoes, and frozen peas.
  • Simmer for 1/2 hour.
  • Mix Bisquick with 1 cup water.
  • Drop the dough by large tablespoonfuls into simmering stew (about 15 dumplings).
  • Cover and simmer for 10 minutes.
  • Uncover and simmer for another 10 minutes.

  • In a large oven-safe pot or Dutch oven, sauté bacon in butter over medium heat until crisp and browned (about 3-5 minutes). Remove bacon with a slotted spoon and set aside.
  • Pat chicken dry with a paper towel and season with salt and pepper. Increase heat to medium-high; sear chicken in the butter/bacon fat until browned on all sides (about 5 minutes) – it does not need to be cooked through at this point. Remove from the pot and set aside.
  • Add carrots, celery and onion to the drippings in the pot. Cook, stirring regularly, until the onion starts to soften, about 3 minutes. Add garlic and cook for 1 more minute. Stir in flour, bay leaf, thyme, poultry seasoning and paprika. Cook over medium heat about 2 minutes.
  • Add 4 cups of broth, potatoes, browned chicken and bacon to the pot. Bring to a boil; cover, reduce heat to low, and simmer (covered) for about 15-20 minutes (or until the potatoes are tender). Stir in the green beans and cream. Simmer, uncovered, for about 5-10 minutes (or until heated through).
