Like most guys, mine has never been a fan of meatloaf, but this recipe guarantees him back for seconds, thanks to some special ingredients.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, liquid smoke, ground black pepper, salt, garlic powder and cayenne pepper and mix well.
- On a lightly greased cookie sheet, shape the mixture into a loaf. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.
- Bake at 375 degrees F (190 degrees C) for 1 1/2 hours.

MOM'S FAVORITE MEATLOAF
I don't really like meatloaf at all, but when mom made this one, she really had a hit with the entire family! Not your typical meatloaf -- very tasty! Use fresh sausage, not frozen! Use more crackers if the loaf seems too moist before cooking. Excellent for sandwiches the next day!!

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup.
- Bake at 425 degrees F (220 degrees C) for one hour, or until the edges are just crispy and the top has a crust.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.

- Preheat your oven to 350°F (175°C) and lightly grease a 9x5 loaf pan or line a rimmed baking sheet with parchment paper.
- In a large mixing bowl, add the ground beef, quick oats, diced onion, eggs, meatloaf seasoning, and ketchup. Mix until just combined, do not over-mix.
- Transfer the meatloaf mixture into your prepared loaf pan then shape so that the loaf is mounded at the top. Or transfer the loaf mixture to your baking sheet and form it into a loaf approximately the same size as a loaf pan (9x5-inch).
- Bake at 350°F (175°C) for 50 minutes, remove from the oven and coat with an additional 1/3 cup of ketchup or BBQ sauce if desired. Return to the oven and finish cooking for an additional 10-20 minutes. Your meatloaf is done when it has an internal temperature of 160°F (71°C).
- Remove from the oven when done, drain off the excess grease, and then allow your meatloaf to rest for 10 minutes before slicing and serving.

BILL'S FAVORITE MEATLOAF
Am recording this recipe because my husband loves this variation (and I may forget what I added the next time I make it)! It is a very simple meatloaf, but gets rave reviews from my husband and guests (including picky eaters). I use a loaf pan to shape the meatloaf, and unmold it onto a broiler pan to reduce fat.

Steps:
- In large bowl, beat egg and milk/cream together.
- Add Worcestershire sauce, Ketchup, and seasonings.
- Note: If using dried minced onion, stir in at this point.
- Soak bread in the egg/milk/seasonings mixture, until all moisture is absorbed. Add breadcrumbs to soak up extra liquid, if needed.
- Stir in onions and ground beef. Mix well.
- Turn out into an 8 x 4" or 9 x 5" loaf pan, that is lined with plastic wrap, packing mixture well.
- Invert and unmold loaf pan onto a broiler pan, removing plastic wrap.
- Bake at 400 degrees for 45-60 minutes or until done in the center.
- Serve with brown gravy, if desired.

- Drain the sauce from the vegetables/pasta of the vegetable-beef soup and reserve.

- TO MAKE MINI-MEATLOAF MUFFINS: Preheat oven to 375°. Combine stuffing and milk to let the stuffing moisten. Once the stuffing is moist, combine the ground beef, sausage, eggs, minced onion, and stuffing until mixed through.
- Spray your muffin tins with cooking spray.
- Fill muffins tins to the top and press in evenly.
- Make a small indentation in the middle of each "muffin" with the back of a spoon.
- Bake at 375° for 18-20 minutes.
- Meanwhile, mix the ketchup glaze according to directions.
- Fill the indentation with the ketchup mixture and spread it around a little. Bake 10 minutes longer or until meat is no longer pink and a meat thermometer reads 160°.
- Let stand 10 minutes before removing from the baking pan.
- TO FREEZE MINI-MEATLOAF MUFFINS: Remove meatloaf muffins from baking pan and let cool. Open freeze "muffins" on a cookie sheet until firm.
- Once they are frozen, transfer to labeled freezer bags. Seal and freeze for up to 3 months.
- TO USE FROZEN MINI-MEATLOAF MUFFINS: Completely thaw in the refrigerator. Place loaves in a greased baking dish. Bake at 350° for 30 minutes or until heated through, or cover and microwave on High for 1 minute or until heated through.

- Heat a 10 inch skillet with the olive oil and saute the onions and bell peppers until softened.
- Allow the mixture to cool while you assemble the rest of the ingredients.
- In a large bowl add the meat, tomato sauce, seasonings, eggs and crackers.
- Mix the ingredients together using a large fork so you don't over compact the meat.
- Next mix in the cooled vegetables.
