1 tablespoon dried parsley
1 tablespoon minced garlic
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon ground black pepper
½ teaspoon dried crushed rosemary
½ teaspoon salt
½ teaspoon crushed red pepper, or to taste
½ teaspoon lemon juice
2 tablespoons grated Parmesan cheese

Steps:

  • Stir together the olive oil, basil, parsley, garlic, thyme, oregano, black pepper, rosemary, salt, red pepper, and lemon juice in a bowl. Sprinkle the Parmesan cheese over the surface of the oil mixture.

1 cup chopped walnuts
1 cup sugar
½ cup honey

Steps:

  • Grease a large baking sheet with butter.
  • Mix sugar and honey together in a large microwave-safe glass bowl; mixture will be very thick. Place in the microwave and cook on high for 1 minute. Stir, and cook 1 minute more. Stir mixture again, and cook until mixture boils and sugar is dissolved, an additional 30 seconds to 2 minutes.
  • Stir walnuts into the bowl with the sugar mixture. Heat in the microwave another 3 to 4 minutes. Stir in butter, salt, cinnamon, and vanilla extract. Microwave until mixture is caramel in color, an additional 1 to 2 minutes.
  • Carefully remove bowl from microwave, and quickly stir in baking soda until incorporated. Immediately pour mixture onto the buttered cookie sheet. Allow to cool until brittle is set, about 15 minutes. Break into pieces and store in an airtight container.

MYRNA'S TUNA MOUSE

Myrna was a co-worker back 20 years ago. Unfortunately Myrna is no longer with us, but once in a while I run into some else that was at the potluck where Myrna brought this dish, asking if I still make Myrna's tuna mouse, I do, rather often too. It is not very tuna tasting, and so easy to put together. I am always asked for the recipe whenever I make this. I use this dish either for lunch which serves 8 or as a appetizer, which easily serves 12-14. I have had my fish shaped pans for over 20 years, and the key to keeping them from rusting, is never leave them in water, or wash in dishwasher. Hand wash and dry, and they will serve you for a long time. cooking time equals

Number Of Ingredients 13

2 (7 ounce) tuna in water, 400 g
7 ounces frozen shrimp, 200 g
4 eggs
1 (14 ounce) can chopped tomatoes
2 1/2 teaspoons ground mustard, Colemann
1 teaspoon ground pepper
2 teaspoons salt
1 1/4 cups sour cream, 300 ml
6 teaspoons gelatin powder or 10 sheets gelatin sheets
5 ounces fresh Baby Spinach
2 lemons
4 black olives
12 dinner rolls or 2 French baguettes, in slices

Steps:

  • Hard boil eggs for 9 minutes, and place under running cold water.
  • Defrost scrimp, and place in colander to drain. I usually squish them gently to get as much water off as possible.
  • Open and drain tuna cans, and pour content into a large bowl.
  • Using hand mixer mix with half the sour creme, you can use creme fraiche instead.
  • Peel hard boiled eggs, and using egg slicer, first slice one direction, and careful turn sliced egg, and slice the other direction, so you have these long chopped egg pieces, you can of course also do this by hand.
  • Carefully fold eggs and scrimp into tuna mix.
  • In a different bowl mix chopped tomatoes, and the other half of the sour crème, mustard powder, salt and pepper.
  • Reserving 100 ml of the juice from the tomatoes, in a cup measure cup.
  • Gently fold the tomato mix into the tuna mix.
  • Dissolve gelatin powder according to package direction, and using the reserved tomato juice, pour this into the dissolved gelatin, with whisking, to cool it abit.
  • Pour gelatin and tomato mix into tuna mix with you stir, it will set rather fast.
  • Rinse form with cold water, don't dry them.
  • Pour tuna mouse into forms, cover with wrap and place in refrigerator for at least 5 hours.
  • For serving:.
  • On a serving platter cover with spinach leaves.
  • Fill the sink with hot or almost boiling water, run a butter knife around the edge of the mouse pan and then gently dip the fish form in the hot water for about 15 sec, and quickly turning the pan over, on top of the spinach leaves.
  • Decorate with lemon wedges.
  • If using fish pans, gently pres the black olives into the mouse, where the eyes would be.
  • Serve with dinner rolls or baguette slices.
  • Enjoy.

Made with extra-virgin olive oil, this challah is especially rich and complex tasting. A little bit of grated citrus zest, if you choose to use it, adds a welcome brightness to the soft, slightly sweet loaf, which is also flavored with orange juice. (Don't use store-bought orange juice with preservatives; it can inhibit yeast growth. It's best to squeeze the oranges yourself.) If you'd prefer a more classic challah, substitute a neutral oil such as safflower or grapeseed for the olive oil and leave out the zest. This recipe makes one large loaf (about 1 pound). Feel free to double it if you're feeding a crowd or if you'd like to toss one loaf into the freezer, where it will keep well for up to 3 months.

1/2 cup/118 milliliters fresh orange juice at room temperature (from about 2 medium oranges; see tip)
2 1/4 teaspoons/1/4 ounce/7 grams active dry yeast (1 packet)
1/3 cup/78 milliliters olive oil
3 large eggs, at room temperature
1 large egg yolk, at room temperature
3 tablespoons/37 grams sugar
1 teaspoon kosher salt
1/4 to 1/2 teaspoon grated orange or lemon zest, to taste (optional)
3 to 3 1/2 cups/360 to 420 grams bread flour, plus more for kneading dough

Steps:

  • In the bowl of an electric mixer, combine orange juice and 1 tablespoon water. Sprinkle yeast over top and let sit until frothy, about 5 minutes.
  • Add oil, 2 eggs, 1 yolk, the sugar, the salt and the zest, if using, and beat with a dough hook until just combined. Add in flour, 1 cup/125 grams at a time, until dough comes together into a sticky mass. You may or may not use all of the flour, so at the end, add it gradually. The dough should come away from the sides of the bowl but not be at all stiff. You're looking for a slightly sticky, soft dough.
  • Transfer dough to floured work surface and knead until smooth, about 5 minutes. Transfer to an oiled bowl and turn the dough over. Cover bowl with a clean dish towel and let rise in a draft-free place until doubled, about 1 1/2 to 3 hours, depending on the temperature in your kitchen. (It may take longer in colder kitchens.) Press down dough to expel all the air, cover bowl, and let rise for another 45 minutes.
  • In a small bowl, make egg wash by combining the remaining 1 egg with 1 teaspoon water. To make a classic braided challah, cut dough into three equal pieces and roll them each into ropes 12 inches long. Or, to make a braided round loaf, cut dough into six equal pieces and roll them each into thinner ropes 12 inches long.
  • Braid the challah: If you are making a classic challah with three ropes, just braid them into a loaf, tucking the edges under. To braid it into a round loaf, first lay three ropes parallel to one another on the work surface, leaving 1 inch between them. Take one of the remaining ropes and hold it perpendicular to the three ropes, across the center. Weave that rope through the three ropes, as if you were creating a lattice for a pie; leave the edges free. Repeat with remaining two ropes. The resulting shape should look somewhat like a pound or number sign, but with a woven center. Then, starting from the ends of the three ropes closest to you, braid the loose edges of the ropes and pinch the ends together. Repeat with the remaining ends of the ropes; you should end up with a lattice in the middle with 4 braids radiating out from it. Tuck the braids underneath the lattice to create a round loaf, place on a small rimmed baking sheet, then brush with egg wash. Let rise uncovered for 45 minutes.
  • Meanwhile, heat oven to 375 degrees with a rack in the middle. Gently brush a second coat of egg wash on the dough, then bake for 25 to 35 minutes, until challah is a deep rich brown and the bottom sounds hollow when tapped. (When it starts smelling like freshly baked bread, start checking.) Cool on a wire rack before serving.

Put oil in large skillet saute ginger and garlic approximately 1 minute. Add onion, bell pepper saute approximately 2 minutes. Add curry paste and blend with other ingredients. Brown chicken with along with other ingredients in the skillet. Add Coconut cream and baby carrots to skillet and cover and simmer for approximately 30 minutes.
