NINFA'S GREEN SAUCE

This green sauce is popular in many Mexican restaurants around Houston. Ninfa's was one of the first to serve this sauce. The recipe has been printed in the Houston Chronicle several times. I've adapted it slightly. Mama Ninfa Rodriquez Laurenzo opened the original Ninfa's Restaurant on Navigation street in 1973. Her food differed from the usual Tex-Mex restaurants in town. She seemed to achieve fame in the kitchen overnight. Some of her famous guests included George Bush, Michael Douglas, John Travolta, Rock Hudson, and Aerosmith! Mama Ninfa lost her battle with cancer last year, but her much loved Mexican food lives on. The original Ninfa's is still there, and there are several other locations here in Houston as well.

3 medium avocados
3 medium green tomatoes
4 fresh tomatillos
3 garlic cloves
3 sprigs fresh cilantro
2 -3 jalapenos
1 1/2 cups sour cream
1/2 teaspoon salt, to taste

Steps:

  • Peel avocados and place them in a blender.
  • In a medium saucepan, boil tomates, tomatillos, garlic, and jalapenos for 15 minutes.
  • Remove from saucepan and place all ingredients in a blender with avocados.
  • Add sour cream and blend until smooth.

This sauce is often served at taquerias. It is a thin sauce and served with burritos, tacos etc.The first time I had it I loaded my tacos with it thinking it was like Anerican style guacamole. It was so hot, I had to throw my tacos away and order more. Now I know to use caution with this. Leave the seeds in the jalapeno, or take them out depending on your desired level of heat. Since you never know how hot a jalapeno is until you take a bite, please start off with just a little jalapeno and add more to suit your taste.And if you are really brave you can add more than one!

1/2 lime, juice of
1/2 teaspoon salt
1 jalapeno, stemmed, cut into pieces
2 tablespoons chopped cilantro
1/2 cup cold water
2 teaspoons olive oil
1 tablespoon roughly chopped onion

Steps:

  • Put the avocado, lime juice, salt, jalapeno, cilantro, water and olive oil in a food processor. Puree until smooth.
  • Add the onion and pulse to roughly blend inches.
  • Serve immediately.

This was submitted to a local Methodist church's cookbook by Jack Lorenzo, Ninfa's son.Ninfa Lorenzo was the owner/chef of a Mexican restaurant with several locations around the Houston area.Everything that I've ever had at her restaurant is great- Tex-Mex at its finest!You may increase the amount of garlic,cilantro,or pepper sauce according to your taste.

1 ripe avocado (soft to the touch)
1/4 cup sour cream
1/4 cup milk
1 teaspoon onion, minced
1 garlic clove, mashed to a pulp with 1/4 t. salt
1 tablespoon fresh cilantro, minced
1/2 teaspoon hot pepper sauce
2 -3 tablespoons lemon juice

Steps:

  • Peel avocado and mash to a smooth pulp.
  • Add remaining ingredients and blend with a whisk.
  • Let stand for at least an hour before serving to develop flavor.
  • Serve with tortilla chips and enjoy!

1 ripe avocado
1/4 cup sour cream
1/4 cup milk
1 teaspoon minced onion
1 garlic clove, mashed to a pulp with 1/4 teaspoon of salt
1 tablespoon of minced fresh cilantro (or 1/4 teaspoon of dry)
1/2 teaspoon hot pepper sauce
6 tablespoons lemon juice

Steps:

  • Peel the Avocado and smash to a smooth pulp. Add the remaining ingredients and blend with a wire whip. Let stand for at least an hour before serving.
  • Increase to taste garlic, cilantro or pepper sauce.

I have loved Ninfa's for a long time. Recently I found a book with handwritten recipes from several Texas area restaurants, so I'm sharing them.

1 -2 chiles de arbol
1 -2 dried red pepper, if you can't get chiles de arbol
4 medium tomatoes, halved
3 garlic cloves
4 sprigs cilantro
1 teaspoon salt
1 -2 jalapeno (optional)
1 -2 tablespoon oil (Recipe doesn't specify the type.)
1/2 cup tomato sauce (optional)

Steps:

  • Place the dried chiles on a cookie sheet and toast in a 325-degree oven for 3 to 4 minutes. Stem and seed them, and then set aside.
  • In a medium skillet, simmer the tomatoes and garlic, in just enough water to prevent scorching until softened-about 20 minutes. Transfer to a blender and puree along with the cilantro, salt, toasted chiles, and if desired, jalapenos, for 1 to 2 minutes.
  • Sauté the pureed salsa in a skillet with hot oil for 1 to 2 minutes.
  • If the salsa is pale, you may wish to add some tomato sauce to deepen the color.
  • This salsa may be made in advance and either refridgerated or frozen.
