A BETTER WAY TO COOK MUSHROOMS
Wondering how to cook mushrooms without the fat? Try dry sautéing them! This method is an easy and fast way to perfectly cook mushrooms, but without extra butter or oil.

- Add mushrooms to a hot pan: Heat a large relatively stick-free skillet on high heat. Add the sliced mushrooms and stir. Lower the heat to medium high. You can sprinkle the mushrooms with salt at any point during the cooking process.
- Stir frequently: Once the mushrooms heat up to a certain point, they will start releasing their moisture. Moderate the heat so that the mushrooms are hot enough to release moisture, but not so hot as to get too browned or dry up.
- When the mushrooms have given up most of their moisture, remove from heat (about 5 to 10 minutes).
- Finish the mushrooms (optional). Swirl in a little butter for flavor, sprinkle with salt, pepper, or parsley, deglaze the pan with some marsala , or use the cooked mushrooms as part of another recipe. Did you love this recipe? Give us some stars below!

When cooking the mushrooms, make sure they are spread into one layer in the pan and not crowded - this way they will brown instead of steam.

Steps:
- Using a damp paper towel, brush all dirt from mushrooms. Cut away and discard any hard stems. Chop into 1/4-inch slices or, if there are larger mushrooms like portobello, cut into 1/4-inch cubes.
- Heat olive oil in a large, wide skillet over medium heat. Add mushrooms and spread into one layer. Cook, without moving, until browned on one side, 3 to 5 minutes. Stir then cook another 3 to 5 minutes or until mostly golden brown on all sides. Season to taste with salt and black pepper.
- At the same time as seasoning with the salt and pepper, stir in butter, garlic, thyme and lemon zest. Cook until the garlic is fragrant and the butter absorbs into mushrooms, about 2 minutes. Take the skillet off of the heat and stir in lemon juice.
