- Preheat oven to 425 degrees. Sift together flour, salt, soda. Cream butter and sugar until fluffy. Add eggs beat until smooth. Smooth. Stir in mincemeat. Gradually add flour mixture and mix well. Cook at 425 degrees for 10 minutes (or 350 for 15 min.)

- In a large bowl, cream together the shortening and sugar until fluffy. Add the eggs one at a time, beating after each addition. Sift together the flour, baking soda and salt; stir into the creamed mixture. Finally, stir in the mincemeat.
- Drop dough by teaspoons onto the prepared baking sheets. Bake 8 to 10 minutes in the preheated oven. Remove from baking pans to cool on wire racks.

PRIZE OATMEAL COOKIES
This is my mom's basic chocolate chip cookie recipe, and the one I grew up with. It's from a Canadian church cookbook. It's my favorite for oatmeal cookies. The cookies stay nice and moist and chewy. They are good with any combination of dates, raisins, chocolate chips, butterscotch chips, pecans, and walnuts. 1 tsp cinnamon can be added for nuts, dates or raisins. (I decreased the salt from 1 tsp to 1/2 tsp since I use salted butter.)

Steps:
- Preheat oven to 375.
- Mix brown sugar, butter, eggs, and vanilla. (It is important not to melt the butter, just soften it a little. Melted butter will make your cookies flat.).
- Add flour, salt and baking soda.
- Mix in oatmeal and chocolate chips, etc.
- Drop in teaspoonfuls onto greased cookie sheet.
- Bake 10 - 12 minute.
- Take out of oven, cool, and eat 5 at one sitting.(They will look a little too soft at first, but continue to firm up as they cool. You don't want them to get hard and crunchy.).
