DRESSED UP GRILLED CHEESE SANDWICHES

Mayonnaise, for spreading
8 slices country white bread
8 slices Monterey Jack cheese
1 medium vine-ripened tomato, sliced
1 small red onion, thinly sliced
1 avocado, sliced

Steps:

  • Preheat a griddle over low heat.
  • Spread a thin layer of mayonnaise on one side of each slice of bread¿this will give the bread an even golden color when griddled. Flip 4 slices over and layer each with 1 slice Monterey Jack, 1 slice tomato, 1 slice red onion, 1 slice avocado and 1 more slice Monterey Jack. Top with another slice of bread, mayonnaise side up.
  • Place the sandwiches on the preheated griddle and toast until the bread is golden brown and the cheese is melted, about 2 minutes per side.

This sandwich is a little tangy from the tomatoes, a little spicy from the chipotle chilies,and just plain delicious.

1 (6 ounce) can tomato paste
3 -5 tablespoons chopped canned chipotle chiles
1 tablespoon mild molasses
12 slices sourdough bread, 3/4 inch thick
18 ounces sharp cheddar cheese, thinly sliced
4 plum tomatoes, sliced
1 small red onion, thinly sliced
1 cup fresh cilantro leaves
6 tablespoons butter, room temperature

Steps:

  • Blend tomato paste, chilies and molasses in processor until smooth.
  • Spread 1 tablespoon chipotle mixture over 1 side of each bread slice.
  • Arrange 6 slices of bread, chipotle side up, on work surface.
  • Divide half of cheese among bread slices.
  • Top with tomatoes, then onion, cilantro, and remaining cheese.
  • Top sandwiches with remaining bread, chipotle side down.
  • Spread butter on outside of sandwich tops and bottoms.
  • Heat a large griddle over medium heat.
  • Place sandwiches on griddle, cook until bread is golden and cheese is melted, about 5 minutes on each side.
  • Keep your heat on medium to low or the bread will burn.
  • Eat the sandwiches warm from the griddle.

4 oz thin slices cooked chicken breast
2 tablespoons butter, softened

Steps:

  • On 1 side of 2 bread slices, evenly spread apple butter. Top each with 1 slice of cheese, half of the chicken, a second slice of cheese and remaining bread slices.
  • In 10-inch nonstick skillet, melt 1 tablespoon of the butter over medium-low heat. Place sandwiches in skillet. Spread tops of bread with remaining 1 tablespoon butter. Cook 5 minutes, turning once, until cheese is melted and bread is golden brown.
