OAT FLOUR PIZZA CRUST



Oat Flour Pizza Crust image

Delicious, thick pizza crust without the gluten.

3 cups oat flour ((gluten-free if needed))
1 cup arrowroot powder
1 tsp. garlic granules ((or garlic powder))
1 tbsp. Italian seasoning
½ tsp. ground black pepper
1 tsp. salt
2 tbsp. oil
1½ cups water ((You might not use all of it, but have it handy))

Steps:

  • In a large mixing bowl, whisk together all the dry ingredients.
  • Stir in the wet ingredients. Do NOT add more than 1 cup of water at this stage.
  • When you can't stir any longer, use your hands to knead the dough, adding a little more water if needed.
  • Once you are done kneading the dough, note that the longer it rests, the more the flour will absorb the liquid. So you either need to spread it over your pizza pan immediately while it's still easy to work with, or you'll end up needing to knead in more water to make the dough more pliable. Your best bet is to spread it over a pizza pan immediately after mixing.
  • Bake at 400 F. for 20 minutes, or until cooked through. Top your pizza and return to the oven for 15-20 minutes, or until the cheese is melted.

170 g gluten-free oats ((~ 1 3/4 cups))
3 eggs
60 g cheddar cheese, grated ((~ 3/4 cup when grated))
Salt
Black pepper
Oil for greasing
Tomato sauce ((or similar))
Grated cheese
Your choice of toppings

Steps:

  • Preheat the oven to 190°C (Gas Mark 5 / 375°F).
  • Add the oats to a high-powered blender, and blitz until a fine flour is formed.
  • Transfer the oat flour to a large bowl, and add the eggs, grated cheddar, and some salt and pepper. With clean hands, mix well.
  • Line a baking sheet with baking paper, and lightly grease it.
  • Transfer the pizza dough to the baking sheet, and press it out into your desired shape (mine was a rectangle that measured approximately 11 x 9 inches). You want the crust to be quite thin - I found it easiest to disperse the dough in several dollops around the baking sheet before pressing it into one large crust.
  • When you're happy with your crust shape, place it in the oven for around 15 minutes, until lightly browned.
  • Add the tomato sauce, grated cheese, and your chosen toppings, then return to the oven for a further 15 minutes, or until the pizza is cooked to your liking.
