Tuiles image

A tuile is a crisp, thin cookie that adds a bit of sweetness and crunch to servings of ice cream, sorbet, mousse and other creamy desserts. These plain tuiles are good, but tuiles are also commonly flavored with cocoa, orange, espresso and other flavors. Tuiles are pliable when just baked and still warm, so you can shape them into the traditional curved shape.

Number Of Ingredients 4

7 tablespoons (100 grams) unsalted butter, softened
3/4 cup plus 2 tablespoons (100 grams) confectioners' sugar
2/3 cup (97 grams) all-purpose flour
3 large egg whites

Steps:

  • In an electric mixer fitted with the paddle attachment, beat the butter at medium speed until creamy, about 30 seconds. Add the confectioners' sugar and flour and mix until combined. Add the egg whites one at a time, beating after each addition just until well blended, about 1 minute in all. Refrigerate the batter for 30 minutes.
  • Preheat the oven to 350 degrees F. Have a rolling pin at hand. Spray a baking sheet with nonstick cooking spray or line it with parchment paper.
  • Spoon 2 teaspoons of the batter onto the baking sheet and with a small, offset metal spatula, spread it evenly into a 3-inch circle. Repeat to form more tuiles, baking only 6 to 8 at a time. Refrigerate the remaining batter while you bake the tuiles.
  • Bake the tuiles for 4 to 6 minutes, until lightly browned around the edges. Remove from the oven and immediately shape the tuiles, lifting up each one with a metal spatula and draping it over the rolling pin so it curves, just until set. Repeat with the remaining batter. Store the tuiles in a cool dry place in an airtight container for up to 1 week.

Yield Makes about 2 dozen small cookies

Number Of Ingredients 7

1/4 cup sugar
1 tablespoon finely chopped fresh orange zest
2 tablespoons unsalted butter, softened
1 large egg white
1/4 teaspoon vanilla
2 tablespoons all-purpose flour
a nonstick bakeware liner such as a Silpat; a small offset spatula; 4 wooden spoons with round handles or 4 pencils

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Put nonstick liner on a baking sheet.
  • Grind together sugar and zest in a food processor 1 minute. Add butter and blend until combined well, then add egg white, vanilla, and a pinch of salt and blend until incorporated. Add flour and pulse until just combined.
  • Spoon 1/2 teaspoon batter in a 5-inch line at one end of nonstick liner, then spread into a strip (about 3/4 inch wide and 5 inches long) with offset spatula. Make 3 more strips on same liner and bake until golden all over, 5 to 7 minutes. Cool strips on baking sheet 30 seconds (to facilitate removal), then carefully remove 1 strip with cleaned spatula and invert onto a work surface. Working quickly, wrap strip twice in a spiral around handle of a wooden spoon and transfer (still wrapped around handle) to a rack to cool and harden, about 1 minute. Repeat with remaining strips. (If strips become too brittle to work with, return to oven a few seconds to soften.) When cool and hard, remove wooden spoons and transfer tuiles to a tray. Make more tuiles in same manner, cooling and cleaning nonstick liner and spatula between batches.

Citrus Lace Tuiles with Buttercream image

1 2/3 cups sugar
1 cup all-purpose flour
3/4 cup fresh orange juice
2 tablespoons fresh lemon juice
14 tablespoons unsalted butter, melted and cooled to room temperature
3/4 teaspoons grated lemon zest
3/4 teaspoons grated orange zest
Buttercream, recipe follows
Raspberries, for garnish
1/2 cup egg whites
1/2 cup sugar
8 ounces (2 sticks) softened butter
4 ounces softened goat cheese (recommended: mild Coach Farms)
1 teaspoon vanilla

Steps:

  • Using an electric mixer fitted with the whisk attachment, mix together the sugar and flour until well combined. With the mixer on low speed, drizzle in the orange juice and the lemon juice and mix until smooth. Drizzle in the cooled melted butter slowly and add the zests. Increase the speed to medium and mix until the batter is completely smooth. Refrigerate at least 4 hours (overnight is best).
  • Preheat the oven to 350 degrees F. For each tuile, drop a heaping teaspoon of batter onto a non-stick baking sheet with a non-stick liner, leaving three inches in between. Using a small, offset spatula or the back of a spoon dipped in cold milk to prevent sticking, gently pat each mound of batter into a very thin, even 4-inch round. Bake tuiles until they are golden brown all over, 9 to 11 minutes.
  • Using a cannoli mold and working very quickly, roll each tuile around the mold. When the tuiles have cooled, carefully slide off the mold. Tuiles may be made smaller to form around mini tuile molds.
  • Using a piping bag fitted with a star tip, fill each tuile shell with buttercream. Garnish with fresh seasonal fruit.
  • Place egg whites and sugar in a stainless steel mixing bowl. Set bowl in a pot of simmering water, whisking constantly, until hot to the touch. Place whites in the bowl of an electric mixer fitted with the whisk attachment. Whip on highest setting until whites are cool and stiff. Add softened butter bit by bit until all the butter has been added. Add the vanilla and the softened goat cheese bit by bit until all has been added and the buttercream is stiff.

2 egg whites
1/2 cup superfine sugar
1 1/2 teaspoons ground cinnamon
1 orange, rind of (finely grated)
1/2 cup all-purpose flour
6 tablespoons butter, melted
1 tablespoon water (boil it right before you add it in)

Steps:

  • Preheat oven to 400 and line two or three large baking sheets with non-stick baking parchment (you may want to lightly sprinkle the sheets with water before laying the parchment paper down).
  • Whisk the egg whites until softly peaking, then whick in the sugar until smooth and glossy.
  • Add the cinnamon and the orange rind.
  • Sift the flour into the mixture and fold in the melted butter.
  • When well blended, add 1 tbl of recently boiled water to thin the mixture.
  • Place a teaspoonful of the mixture down on the sheet and flatten out with the back of the spoon into a circle. Keep the circles far apart and only put 4 or 5 on each sheet.
  • Bake, one sheet at a time, for 7 minutes, or until just golden brown.
  • Cool for just a few seconds on the sheet and then rmove the with a metal spatula and immediately roll around the handle of a wooden spoon so that the ends overlap each other. Place on a rack to cool.
