ORANGE CREAMSICLE MOUSSE
Steps:
- In a large bowl, beat cream cheese until it is light and fluffy.
- Add in the confectioners' sugar, orange juice, orange extract, and salt and beat until everything is combined.
- Gently fold in the whipped topping.
- Equally divide orange mousse into cups and refrigerate uncovered until thickened, (about 1 hour up 24 hours).
- When ready to serve, top with remaining whipped topping

- Whip the Cream: In the bowl of your stand mixer, using the whisk attachment, beat the cream on low speed until foamy. Add the confectioners' sugar and vanilla and continue whipping, increasing the speed to medium, until it reaches firm peaks. Make the Mousse: In the bowl of your stand mixer, combine the thawed frozen orange juice concentrate, granulated sugar, and marshmallow fluff. Beat until smooth. Add 1 cup of the whipped cream and mix until just combined with no white streaks. If you want, add a few drops of orange food coloring and mix it in. Pour into a large bowl and refrigerate to set. Can be made a day in advance. Stir before assembling the parfaits. To Serve: Put a spoonful of the mousse in the bottom of each serving bowl (preferably glass so you can see the layers). Scoop some ice cream into each bowl and top with more of the mousse. Add more ice cream, mousse, and top with whipped cream. Garnish with orange slices and serve immediately.

- Place all ingredients in a food processor or blender; pulse until well combined.
- Divide the mixture between the popsicle molds, and then lightly knock the molds to release any air bubbles.
- Freeze until almost solid but still soft enough to insert a stick.
- Insert a large stick in the middle and place back in the freezer until completely frozen and solid (about 8 hours or overnight).

Steps:
- Microwave the cream cheese for 20-30 seconds and stir (should be very soft and room temperature). Blend with whipped cream by gently folding or stirring. Set aside.
- In a seperate bowl, thoroughly mix pudding with the warmed orange drink to dissolve. Let sit for a few minutes, then mix again. Gently fold or stir in the cream cheese mixture a little at a time (it's great to get a swirl like effect).
- Cover top of mousse with plastic wrap and chill for at least 4 hours. Scoop into dessert or champagne glasses using a large melon baller and garnish with fresh orange slices on the side of the glasses and top with a mint leaf.

- Mix Jell-O with 1 cup boiling water.
- Dissolve Jell-O completely and add 1 cup cold water and let it sit for 5 minutes.
- Using electric beater, beat in pudding mix until well combined.
- Fold in Cool Whip.
- Chill and serve until set.
- 4 servings (1 cup each).

- Dissolve the gelatin in 1 C boiling water.
- Add 1 C cold water and let set up for 5 minutes.
- Using an electric mixer, beat dry pudding mix into the jello until well blended. May have to set up for 5 minutes in refrigerator.
- Fold in mandarin oranges and cool whip.
- Chill either in a bowl or in individual mousse dishes.
