Orecchiette pasta (in Italian, it means "little ears") is tossed in a skillet with crumbled sausages, fresh cherry tomatoes, white wine, garlic, and fresh spinach. Topped with grated pecorino cheese to give this dish a burst more flavor!

Number Of Ingredients 10

2 Tbsp. extra virgin olive oil - divided
4 links of Italian sausage, removed from casings, crumbled
6 garlic cloves- sliced
1/8 tsp. red pepper flakes
1/4 cup white wine
8 to 10 cherry tomatoes- sliced
3 cups packed baby spinach
salt and pepper to taste
1/2 pound of Orecchiette pasta
2 Tbsp. grated pecorino cheese, and extra for serving

Steps:

  • In a large, deep skillet, on medium heat, heat 1 tablespoon of olive oil. Add the garlic and crumbled sausage.
  • Cook until sausage is brown and fully cooked, about 4 to 5 minutes.
  • Stir in the pepper flakes and sauté for 1 minute with the sausage.
  • Pour in white wine and cherry tomatoes, and season with salt and pepper to taste. Simmer for 2 minutes, until the cherry tomatoes have softened.
  • Stir in the 2nd tablespoon of olive oil, then add in the spinach. Stir until the spinach wilts. Turn off the heat and set it aside.
  • Meantime, bring a large pot of water to boil. Add 1 teaspoon of salt to the water and add in the Orecchiette pasta. Cook the orecchiette until they are al-dente. Reserve 1/4 cup of salty water. Drain the pasta.
  • Transfer orecchiette pasta to the skillet with sausage mixture. Slowly add in the reserved pasta water. Turn the heat back onto a low heat, and sauté while stirring everything until well combined, about 1 minute. Remove pan from heat.
  • Stir in 2 tablespoons of grated pecorino cheese. Taste and season with salt and pepper to taste. Transfer to serving plates and serve.

Orecchiette with sausage and spinach is simple and fast to make with a tasty Italian sausage, spinach, garlic, and white wine sauce.

8 ounces uncooked orecchiette pasta
16 ounces Italian sausages (see note)
1/2 medium onion (chopped)
4 cloves garlic (minced)
1/2 teaspoon Dijon mustard
1/2 cup dry white wine
3 cups (packed) fresh baby spinach
2 tablespoons fresh basil (optional)
Salt & pepper (to taste)
For serving: freshly grated parmesan cheese (optional, to taste)

Steps:

  • Cook the pasta al dente according to package directions.
  • Meanwhile, crumble the sausage meat into a skillet (take it out of casings if using whole sausages). Add the onion to the skillet as well, and sauté over medium-high heat for 8-10 minutes or until it's cooked through and nicely browned. If there's more than about 1-2 tablespoons of fat left in the skillet, spoon out the excess, but be sure to leave some since we're not adding any extra butter or oil.
  • Reduce the heat to medium and stir in the garlic and Dijon mustard (cook for about 30 seconds).
  • Pour in the wine and cook until reduced by half (about 1-2 minutes).
  • Add in the spinach and basil. Toss (using tongs or two large spoons) until the spinach has wilted, then add in the drained pasta and toss again.
  • Season with salt & pepper as needed. Serve immediately with freshly grated parmesan cheese over top.

3 tablespoons extra-virgin olive oil
8 ounces bulk sweet Italian sausage
1 bunch scallions, chopped (white and green parts separated)
1 teaspoon chopped fresh rosemary
1 14-ounce can cherry tomatoes
12 ounces orecchiette
8 cups baby spinach (about 4 ounces), roughly chopped
1/2 cup grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned, about 3 minutes. Add the scallion whites and rosemary and cook until the scallions begin to wilt, about 2 minutes. Add the tomatoes with their juices and 1⁄2 cup of the boiling water. Let simmer while you cook the pasta.
  • Add the pasta to the pot of boiling water and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain.
  • Add the pasta to the tomato sauce along with the spinach and half of the scallion greens. Toss to coat the pasta and wilt the spinach, about 1 minute, gradually adding the reserved pasta water as needed to loosen. Season with salt, drizzle with the remaining 1 tablespoon olive oil and remove from the heat.
  • Sprinkle the cheese over the pasta and toss well. Divide among plates or shallow bowls and top with the remaining scallion greens.

12 oz (350 g) uncooked orecchiette pasta
2 1/2 cups (625 mL) water
4 garlic cloves, pressed
1 tsp (5 mL) crushed red pepper flakes (optional)
1/2 tsp (2 mL) salt
2 cups (500 mL) grape tomatoes
1 oz (30 g) Parmesan cheese, grated (about 1/4 cup/50 mL packed)
5 oz (150 g) fresh baby spinach leaves (8 cups/2 L)

Steps:

  • Cook sausage in (12-in./30-cm) Skillet over medium-high heat 8-10 minutes, breaking into crumbles with Mix 'N Chop. Drain canned tomatoes using medium Stainless Mesh Colander into Stainless (4-qt./4-L) Mixing Bowl; reserve 1 cup (250 mL) of the tomato liquid for later use in the recipe.Add drained canned tomatoes, tomato liquid from mixing bowl, pasta, water, pressed garlic, pepper flakes, if desired, and salt to Skillet. 1 pound orecchiette pasta
2 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage, removed from casings
1 yellow onion, diced
3 cloves garlic, sliced
2 pints grape or pear tomatoes, quartered
1/2 teaspoon crushed red pepper flakes
One 15-ounce can cannellini beans, rinsed and drained
1/2 cup grated Parmesan, plus additional for garnish
1/2 cup fresh basil leaves, cut into chiffonade, plus additional for garnish

Steps:

  • Bring a pot of salted water to a boil and cook the orecchiette according to package instructions.
  • Meanwhile, heat the oil in a large, heavy-bottomed skillet over medium-high heat. Add the sausage and cook, breaking it up with the back of a spoon, until it starts to brown, 4 to 5 minutes. Remove the sausage to a bowl with a slotted spoon, leaving all the oil in the skillet.
  • Add the onions to the oil and cook until they start to soften and turn translucent, about 2 minutes. Add the garlic to the skillet and cook, stirring, for 30 seconds. Add the tomatoes and red pepper flakes and cook, stirring occasionally, until the tomatoes start to blister and split, about 4 minutes. Add salt and pepper.
  • Add the beans and return the sausage to the skillet. Cook until warmed through. Add the pasta and toss until it is completely coated. Add the Parmesan in batches, stirring to incorporate and letting it melt before more is added. Stir in the basil.
  • Plate the pasta and top with more Parmesan and basil. Serve immediately.

1 (10 ounce) box frozen spinach
6 -8 slices bacon
1 small onion, chopped
3 garlic cloves, minced
2 tablespoons olive oil
1 lb orecchiette, cooked (bowtie pasta works well too)
salt and pepper

Steps:

  • Cook pasta according to directions on the box.
  • While frying your bacon, defrost spinach in the microwave according to directions.
  • Sauté onion in olive oil until tender; add the garlic and sauté two more minutes. Add the spinach to the onions.
  • Crumble the bacon and add to the mixture.
  • Turn the heat to low to keep spinach mixture warm while the pasta finishes cooking.
  • When pasta is cooked, drain and place in shallow bowls, spoon spinach mixture over pasta and serve.

36 ounces cherry tomatoes, on the vine, cut in half
1 (16 ounce) package Italian chicken sausage (use 3-5 links to your taste, I use 3)
4 ounces pancetta, pre-chopped
1 small onion, minced
3 garlic cloves, minced
2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
1/3 cup red wine
1 (8 ounce) package cremini mushrooms, sliced
3 tablespoons fresh basil, chopped
2 tablespoons fresh oregano, chopped
1 cup Baby Spinach, chopped
salt
1 (16 ounce) package orecchiette (or small shells if you can't find Orecchiette)

Steps:

  • Heat a large skillet over medium heat. Add butter and oil. Once the butter is melted, add the onion and garlic. Cook until the onion is starting to get soft.
  • Turn the temp up to medium high and add the pancetta, cook until crispy. Remove the casings from the sausage then add to skillet and brown. Pour in the wine and scrape up those delicious browned bits.
  • Toss in the mushrooms and stirring occasionally, cook till they are slightly softened.
  • Add the tomatoes (any extra juices too), basil and oregano, and salt to taste, and stir to combine. Turn heat to low, cover and simmer for one to two hours, stirring occasionally.
  • While the sauce is simmering, cook the pasta (make sure you have good salty water) until just al-dente. Drain the pasta, reserving 1/2 cup pasta water (DO NOT RINSE).
  • Back to the skillet -- add the spinach and cook till it begins to wilt. Then toss in the pasta and stir to combine everything -- stir frequently until everything is heated through. (add some reserved pasta water if the sauce seems too thick)
  • Spoon into bowls and top with fresh Parmesan cheese. Enjoy!

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 small onion, minced
3 cloves garlic, minced
1 (4 ounce) package chopped pancetta
1 (12 ounce) package Italian chicken sausage (such as Trader Joe's® Chicken Sicilian Sausage)
⅓ cup red wine
1 (8 ounce) package crimini mushrooms, sliced
20 cherry tomatoes, halved, or more to taste

Steps:
