PAN GRILLED PORK CHOPS
These chops are so easy and very tender. It's based on a recipe in the Mama Dip's Kitchen cookbook. Be sure to follow the important steps of letting the chops rest with the salt and seasoning before cooking, then browning the sides slowly, followed by a covered "rest". Mama Dip is a traditional Southern U.S. cook, chef, restauranteur and cookbook author.

Steps:
- Sprinkle the salt, thyme and pepper on the pork chops.
- Let sit on counter top for 30 minutes.
- Place oil in large cast iron skillet (or heavy stainless steel skillet) and heat until medium hot.
- Place chops in the pan, placing them so they don't touch each other.
- Cook each side slowly (lower heat if necessary) until nice and golden brown on each side.
- This will take about 4 minutes per side.
- Cover the pan with a tight fitting lid.
- Turn off the heat, and let the chops sit for about 8- 10 minutes, depending on thickness of chops.
- After removing chops, you can de-glaze the pan with a little water, wine or broth and a touch of butter and serve as a sauce.

EASY GRILLED PORK CHOPS

- Begin by making the marinade. In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes. Easy, right?
- Sprinkle both sides of the pork chops with salt and pepper and place in a re-sealable plastic bag with the marinade. Let rest on the counter for 1 hour. That's easy.
- Heat a grill or grill pan over medium heat. Remove the pork chops from the bag and lightly sprinkle with salt and pepper. Place on the grill and cook until the pork chop releases from the grill, about 4 minutes. Flip and cook on the other side for another 3 minutes. If using a grill pan, be sure to do in batches so you don't steam the chops. And don't worry if you have neither; you can do this in a pan. See, easy!
EASY PAN-GRILLED PORK CHOPS WITH SPICY RUB RECIPE
Steps:
- Gather the ingredients.
- Combine seasonings-thyme, chipotle chili powder, chili powder, Cajun seasoning, salt, and pepper-and cover pork thoroughly. Let the chops stand at room temperature for about 10 to 15 minutes.
- Coat the grill pan or broiler rack with olive oil.
- Pan grill over medium heat or broil about 4 inches from the heat source for about 6 minutes.
- Turn and grill for 6 to 8 minutes longer-until chops are cooked through.
- Cook time depends on the thickness of chops, but check to make sure meat is at least 145 F in the center of the thickest chop. Use an instant-read thermometer to check the internal temperature of the chops.
- Serve with potatoes and a leafy green vegetable or salad.

- Salt and pepper both sides of the pork chops.
- Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
- Heat the canola oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.
- Delicious and simple! Serve with smashed new potatoes.

- In a large saucepan, combine salt, sugar and 2 cups water; cook and stir over medium heat until salt and sugar are dissolved. Remove from heat. JALAPEñO GRILLED PORK CHOPS
Juicy jalapeños offer discernible heat, but they have a higher purpose beyond that: They provide welcome freshness with their distinct vegetal flavor. - Make the pork chops: In a food processor, blitz the jalapeños, garlic, cilantro stems, rice vinegar, olive oil, salt and sugar until smooth. Place the pork chops in a large bowl or resealable container and pour the marinade over them; turn the chops to evenly coat. Cover and refrigerate for at least 30 minutes and up to 24 hours.
- While the chops marinate, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to medium-high.
- Make the relish: In a small bowl, toss the jalapeño, red onion, rice vinegar, salt, sugar and 2 tablespoons water. Set aside to quick-pickle until ready to serve, or refrigerate for up to 24 hours.
- Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. With the marinade clinging to them, place the pork chops on the hot greased grate. Grill until the chops are charred at the edges and no longer pink in the middle, 2 to 3 minutes per side. The meat is ready to flip when it releases easily from the grates. (If using a gas grill, close the lid between flips.) Alternatively, cook the chops on the stovetop in batches. Heat a large skillet or grill pan over medium-high. Add enough oil to lightly coat the bottom of the pan, and heat until shimmering. Add the chops, with the marinade clinging to them, to the pan. Sear until browned and caramelized at the edges and no longer pink in the middle, 3 to 4 minutes per side. Discard any remaining marinade.
- Serve the chops with the relish and cilantro on top. If you'd like, serve rice alongside.

- Season both sides of the 4 pork chops with a mixture of salt and pepper. Then, stir in 1 1/2 Tablespoons olive oil, mustard, juice of 1 lemon, and rosemary in a small bowl and spread on both sides of the 4 pork chops. Let marinate into a large ziploc bag for about 30 minutes at room temperature or overnight in the refrigerator.
- If meat was refrigerated, let it come to room temp before cooking. Heat a large grill pan over high heat until sizzling hot, add 1 1/2 Tablespoons olive oil (make sure to swirl the pan to coat it with oil), and place the pork chops inside in a single layer.
- Let cook for about 3 minutes on one side and turn to cook for about 3 minutes on the other side. Grill marks will appear! Turn the chops to position in a way to make checkboard grilled marks, reduce heat to medium, and let cook for 5 minutes.
- The part of the chops that are close to the bone should be placed standing up vertically to cook for about 30-60 seconds more, otherwise that area can be undercooked. If you insert a thermometer it should read 145 degrees F.
