4 cubes butter (2 cups), softened (use real butter!)
1 1/2 cups granulated sugar
2 cups brown sugar, packed
3 eggs
1 tablespoon pure vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
5-6 cups flour
1 cup chopped walnuts
2 cups chocolate chips
1 cups shredded coconut
1/2 cup toffee bits
sea salt or kosher salt, to taste (optional)

Steps:

  • Preheat your oven to 350 degrees F.
  • Cream butter and sugars together.
  • Add the eggs and vanilla. Mix well.
  • Add two cups of the flour, along with the salt and baking soda. Mix well.
  • Add the remaining three to four cups of flour and mix well. (You might want to start out with less flour and bake a couple "test" cookies to see if you need more flour).
  • Add the chocolate chips, chopped walnuts, and shredded coconut, and blend.
  • Using a cookie scoop, place balls of dough two inches apart on ungreased baking sheets. (I prefer to use stoneware , baking mats, or parchment paper).
  • Bake at 350 degrees for 10-12 minutes. You want the edges to just barely be browned, but the centers will still be soft. Note that it will take cookies longer to bake if you use stoneware--especially the first batch.
  • As soon as you remove the cookies from the oven, sprinkle with toffee bits. You can press them gently into the tops of the cookies to help them stick. Then sprinkle with sea salt or kosher salt if desired.
  • Let rest on the baking sheets for 5-10 minutes before transferring to a wire rack to cool completely.

1 teaspoon vanilla
1 egg
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup semisweet chocolate chips (or chunks)
3/4 cup milk chocolate chips or chunks
3/4 cup chopped pretzels
1/2 cup toffee bits
1/2 teaspoon sea salt

Steps:

  • Preheat the oven to 350 degrees F. Line baking sheet with parchment paper.
  • In a large bowl, beat together softened butter, brown sugar, granulated sugar, vanilla, and egg with an electric mixer on medium speed until smooth.
  • Add in the flour, baking soda, and salt. Mix well. The dough will be a little stiff.
  • Gently stir in the semisweet and milk chocolate chips, pretzels, and toffee bits. Being careful not to overmix the dough.
  • Drop 1/2 cup rounded scoops of dough onto the prepared baking sheet. Cookies should be at least 4 inches apart.
  • Sprinkle each cookie with a touch of sea salt.
  • Bake for 13 to 16 minutes in the preheated oven. When finished, cookies should be golden around the edges, but still soft in the center.
  • Allow cookies to cool on baking sheet for 5 minutes. Then allow them to cool completely on a wire rack.
