Simple yet delicious, these Parmesan Panko Pork Chops are going to be a new family favorite!

four 1 inch loin pork chops
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs beaten
1 cup Panko
1/3 cup grated Parmesan heese
1/3 cup butter

Steps:

  • Pre-heat your oven to 400 °F. Whisk together the flour, salt and pepper.
  • Coat a pork chop in beaten egg, then dip in the flour mixture. Dip into the eggs again, then dip into the breadcrumb mixture. Cover them completely.
  • Set pork chops on a small baking sheet. Chill in the fridge for 20 minutes. This helps the batter stay on.
  • When the chops are chilled, melt the butter and pour over the pork chops evenly. Place the baking sheet in the oven and cook until they reach an internal temperature of 145 °F. Remove and let rest for 3-4 minutes.
  • Serve and enjoy!

2 tablespoons of Mayonnaise
1 pound of Pork Chops (4 boneless chops about 1" thick)
Salt and Black Pepper, to taste
Baking Sheet with cooking rack (see post)
Cooking Spray

Steps:

  • Preheat oven to 375°F.
  • Combine the panko bread crumbs and grated parmesan cheese in a small mixing bowl and set aside.
  • Brush a light layer of mayonnaise on each side of the pork chops; season the chops then coat in the panko parmesan mixture.
  • Place on a baking sheet lined with a bakeable cooling rack. Lightly mist some cooking spray (like Pam) over the pork chops before baking.
  • Bake 25 minutes or until golden brown.

No need for frying, this oven baked, lower fat pork chop recipe is delicious served with pasta and your favorite simple marinara or puttanesca sauce.

6 center loin pork chops, 3/4 inch thick cut
½ cup flour
1 egg + 1 tbsp water whisked together, eggwash
1 cup Panko crumbs
1/3 cup freshly grated Parmesan cheese
Salt and pepper to season
3 clove minced garlic
3 tbsp olive oil
8 large very ripe, tomatoes (or one 32 oz can crushed tomatoes)
2 tbsp brown sugar
4 tbsp balsamic vinegar
1/2 tsp chili flakes, or to taste
3 tbsp chopped capers, optional
1/2 tsp anchovy paste, optional
2 tbsp chopped basil
2 tbsp chopped oregano
salt and pepper to season
1/4 cup chopped kalamata olives, optional

Steps:

  • Season the pork chops with salt and pepper. Mix the Parmesan with the panko crumbs. Dredge the pork chops in the flour, then dip in the egg wash and finally in the panko crumbs.
  • Place the chops on a lightly oiled baking sheet and mist or drizzle the tops with a little olive oil.
  • Bake for about 35 minutes in a preheated 375 degree F oven. I like to flip them over half way through the cooking time.
  • Use a meat thermometer to check that the center of the pork hops has reached 145 degrees F. Let the chops rest for 5 minutes before serving with the Quick Puttanesca Sauce.
  • In a large Saute pan over medium heat, cook the garlic in the olive oil for only a minute. It should soften but not brown.
  • Add all of the remaining ingredients and simmer together for about 10 - 20 minutes stirring often, until a chunky, thick sauce develops. The amount of time this takes, varies, depending up on the water content of the tomatoes.

1 teaspoon milk
1 clove garlic, minced fine
salt and pepper
1 1/2 cups panko breadcrumbs
8 thin cut pork chops
1 cup vegetable oil (for frying)

Steps:

  • Mix together eggs, milk and garlic and let set for flavors to mix.
  • Place panko crumbs in a shallow dish.
  • Salt and pepper pork chops to taste and dip in the egg mixture.
  • Coat with Panko crumbs, then dip in egg again and coat with another layer of crumbs.
  • Place chops on a plate and let them set for at least 10 minutes to set the coating.
  • Heat oil in large skillet over medium high heat.

¼ cup oil

Steps:

  • Place beaten eggs on a large plate.

1 1/2 cups panko breadcrumbs (Japanese Bread crumbs)
1 teaspoon kosher salt
2 teaspoons cumin
2 teaspoons smoked Hungarian paprika
2 teaspoons dried chipotle powder
2 teaspoons dried ancho chile powder
1 teaspoon fresh cracked black pepper
1/2 teaspoon ground ginger
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup freshly grated parmesan cheese (don't use the stuff in the green can)
2 tablespoons sesame oil (don't substitute any other oil)

Steps:

  • Heat oven to 350°F.
  • Mix together panko, salt, cumin, paprika, chipotle, ancho, pepper, ginger, garlic powder, onion powder, and Parmesan cheese.
  • Coat pork chops with crust mixture by rolling them in it as well as pressing it into the meat.
  • Heat sesame oil in large skillet until very hot.
  • Cook pork chops on the stove until each side is crispy.
  • Put into the oven for 15-25 minutes depending on thickness of the pork chop. Enjoy!
