FRESH PAPAYA JAM
I have a tree in my backyard and needed to get the large papayas used up. So here is a delicious jam recipe.

Steps:
- Stir together papaya, orange juice, and pectin in a very large pot over medium-high heat until it begins to boil. Stir constantly as the mixture heats. Once boiling, stir in the sugar, and return to a boil, stirring constantly. Once the jam has returned to a boil, start a timer, and boil for exactly 1 minute.
- Ladle the hot jam into the hot, sterilized canning jars and seal with lids and rings. Allow to cool to room temperature, and refrigerate any jars that do not seal.

PAPAYA POACHED IN CINNAMON-LIME SYRUP
Fruit simmered in cinnamon syrup is a typical after-dinner treat throughout Mexico.

Steps:
- Bring 2 cups water and sugar to boil in heavy medium saucepan over medium-high heat, stirring until sugar dissolves. Boil until syrup thickens slightly, about 6 minutes. Add papaya wedges, fresh lime juice, lime peel strips and cinnamon stick. Reduce heat to medium and simmer until papayas are just tender, about 8 minutes. Using slotted spoon, transfer papayas to bowl. Boil syrup until reduced to 1 cup, about 6 minutes. Pour syrup over papayas and chill at least 2 hours and up to 1 day.
- Spoon papayas and syrup into 6 dessert dishes. Drizzle with sour cream and garnish with additional lime peel.
PAPAYA PICK ME UP
I had a vey ripe papaya and a few odds n ends in the refridgerator to use up, so whipped this together and loved it!

GREEN PAPAYA SLAW

- Whisk together 2 tablespoons Asian fish sauce such as nam pla, 1 tablespoon plus 1 1/2 teaspoons peanut oil, 1/4 cup fresh lime juice, 1 tablespoon plus 1 teaspoon palm sugar, and 2 tablespoons tiny dried shrimp in a large bowl. Add 1 peeled and very thinly sliced shallot and 1 fresh Thai chile, thinly sliced crosswise, and let stand for 15 minutes, then add 1/2 green papaya, peeled, seeded, and julienned, and 1 peeled and julienned medium carrot and let stand for 15 minutes to 30 minutes longer. Tear 2 tablespoons fresh mint leaves and 1/4 cup cilantro leaves; crush 1/4 cup peanuts. Stir herbs and nuts into salad. Taste and adjust seasoning with additional fish sauce, lime juice, sugar, and chile so there is a proper balance of hot, sour, salty, and sweet. Serve immediately.
- Green papaya can be found in most Asian markets. The flesh should be pale green and the seeds should be white. If the flesh is not green and the seeds are gray or black, the papaya is too ripe and will be too sweet. As a substitute, try a combination of julienned carrot, jícama, and Belgian endive.
- Palm sugar, from the Palmyra palm or the date palm, is golden brown in color and sold in many guises (most often in blocks or tins or as a paste in tubes). It is available at Asian markets. Light brown sugar can be substituted.
- Dried shrimp are used in Asian and Latin American cooking. Look for them in Asian markets.
PAPAYA KETCHUP
Another recipe from one of my favourite cookbooks - Marcus Samuelsson! This is one I haven't tried yet as I haven't seen any nice ripe papayas yet, but I think it sounds awesome! He says it goes good with grilled shrimp or chicken and with roti.

Steps:
- Heat the olive oil in a large saute pan over med hig hieat.
- Add the garlic and saute for 2 to 3 min, until softened.
- Add the tomatoes, chili, sugar, and vinegar, reduce the heat to med, and cook, stirring frequently, until the tomatoes are very soft, about 5 minutes. Remove from heat and let cool slightly.
- Transfer tomato mixture to a blender.
- Add the soy sauce, ginger, sesame oil, papaya, and lime juice and puree until smooth.
- Store in a tightly cover container in the fridge for up to 5 days.
