Pasta Florentine (Vegetarian) image

Comforting and delicious, Pasta Florentine is packed with spinach and cheese and makes a great weeknight dinner!Super easy to pull together, the whole family will enjoy this.

1 lb penne pasta
4 Tbs butter
1 onion (chopped finely)
4 cloves garlic (minced)
1 lb fresh baby spinach (washed and drained)
4 Tbs all purpose flour
1 1/2 cups milk
1 cup mozzarella cheese (shredded)
1 cup ricotta cheese
salt and freshly ground pepper (to taste)
1 tsp crushed red pepper flakes
1 cup Parmesan cheese (shredded)

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare pasta according to directions. Drain and set aside. Lightly grease a baking dish.
  • Heat butter in a Dutch oven (or other heavy based pan) over medium-high heat; saute onion 5 minutes or until just brown. Add garlic, and cook about 1 minute. Reduce heat to medium-low and add spinach; cover and cook 5 minutes or until spinach is wilted, stirring occasionally.
  • Sprinkle spinach mixture with flour. Cook uncovered, stirring constantly, 1 minute. Gradually add milk, stirring well. Cook 5 minutes, stirring often, until thickened and smooth. Remove from heat; stir in cooked pasta, mozzarella, ricotta, sugar, salt and pepper, and red pepper. Place into prepared dish and sprinkle evenly with Parmesan.
  • Bake for 15 to 20 minutes until the cheese melts
  • Devour.

300g pasta (we used penne)
1 tbsp olive oil
500g chestnut mushroom , halved or quartered if large
2 garlic cloves , chopped
350g carton fresh spinach and cheese sauce (or make your own - see 'Try' below)
50g vegetarian parmesan -style cheese, (Twineham Grange Italian-style cheese is a good one) , grated

Steps:

  • Boil the pasta for 10 mins, drain, then tip back into the pan. Meanwhile, heat grill to medium. Heat the oil in a large frying pan, add the mushrooms, then cook over a high heat for 5 mins until lightly golden. Reduce the heat, add the garlic, then fry for another min until softened. Season and spoon into a large, shallow baking dish.
  • Tip the spinach sauce and half the cheese into the pasta, then put back on the heat for a few mins until heated through. Season to taste, then spoon the pasta over the mushrooms in an even layer. Scatter the remaining cheese over the top and grill for about 5 mins until the cheese is golden and the sauce is bubbling.

1 tablespoon olive oil
1 small onion (finely diced (about 1 cup))
2 medium cloves garlic (minced)
8 ounces cavatappi pasta (uncooked (can sub another tubular pasta like penne))
1 cup vegetable stock + more if needed
1 14.5 ounce can diced Italian style tomatoes (plain diced tomatoes work too)
4 ounces shredded Asiago cheese (about 1 cup + a little more for topping (optional))
4 cups tightly packed baby spinach
1/4 - 1/3 cup half-and-half or whole milk
Crushed red pepper for topping (optional)

Steps:

  • In a large high-sided skillet add olive oil and set over medium high heat. Once the oil is hot, add in the onion and sauté until translucent. Add in the garlic and sauté for 30 seconds more.
  • Add in the pasta, vegetable stock and tomatoes. Stir to combine, cover and let simmer, stirring occasionally, for about 12 minutes or until the pasta is tender. If the pan seems to be a little dry simply add a little more vegetable stock.
  • Once the pasta is fully cooked, add in the shredded cheese, baby spinach and half and half. Mix to combine and let the heat of the pasta wilt the baby spinach.
  • Top servings with additional shredded cheese and crushed red pepper.
  • Note: If the sauce is too thick, add a bit more half and half. If the sauce is too thin, let it simmer just a few minutes to thicken up.

Steps:

  • Heat oven to 375ºF.

16 uncooked, jumbo pasta shells
1 pkg (300 g) frozen, chopped spinach, thawed well-drained
1 cup (250 ml) low-fat (1%) cottage cheese
½ tsp (2 ml) dried basil leaves, crumbled
1 pinch pepper
1 398 mL can tomato sauce
½ cup (125 ml) shredded part-skim mozzarella cheese
1 cup (250 ml) All-Bran* Bran Flakes cereal
1 Tbsp (15 ml) margarine or butter, melted
¼ cup (50 ml) grated Parmesan cheese

Steps:

  • Cook pasta according to package directions until tender but still firm. Drain well and set aside.
  • Combine well-drained spinach, cottage cheese, basil and pepper, mixing well. Stuff each shell with a rounded 15 ml measure tablespoonful) or filling.

  • Cook and drain pasta.

¼ teaspoon baking soda
1 pinch salt
¼ cup butter
⅓ cup packed brown sugar
2 tablespoons light corn syrup
1 egg
½ cup flaked coconut
½ teaspoon vanilla extract
2 (1 ounce) squares semisweet chocolate
1 tablespoon butter

Steps:

  • Mix flour, soda and salt. Cream 1/4 cup butter or margarine. Gradually add sugar and beat until light and fluffy. Add corn syrup and egg. Blend well.
  • Stir in flour mixture, coconut and vanilla. Drop by half teaspoonfuls onto greased backing sheets, leaving 2 inches between. Bake at 350 degrees F (180 degrees C) about 10 minutes. Cool on baking sheets 1 minute, remove quickly and finish cooling on racks (if wafer hardens, return briefly to oven).

1 tablespoon minced garlic
3 cups fresh baby spinach
1 can diced tomatoes
Olive oil
Salt & pepper
1 box of penne
Jar of Alfredo sauce (I used about 3/4 of the jar)
2-3 tablespoons prepared pesto
Up to a 1/2 cup of milk
Parmesan cheese

Steps:

  • Cook pasta according to directions, drain and set aside. In small bowl mix Alfredo sauce and pesto, thin to desired consistently with milk. Season with pepper (and maybe a little Parmesan cheese). Blend well and set aside. Sauté chicken and garlic in olive oil, in large deep sided pan, season generously with salt and pepper. Once chicken is no longer pink, add spinach and tomatoes. Once spinach wilts, add pasta and stir to combine. Pour sauce over pasta mixture and stir. Sauce will thicken upon standing. Serve with a sprinkle of Parmesan and some crusty bread!
