SAVORY PEACH SAUCE RECIPE
Dijon, lemon, thyme, garlic and chili flakes give this savory peach sauce recipe a great depth of flavor. A delicious pairing with chicken, turkey and pork.

- PEEL AND CUT THE PEACHES (Note 1): For easy peeling, carefully drop peaches into a medium pot of boiling water. Boil for 1 minute. Lift out peaches with a slotted spoon and slip off the skins. Cut peaches in half and remove pits. Chop into small chunks, about 1/2-3/4 inch (1.28-1.9 cm).
- MAKE THE SAUCE: In a medium saucepan (I use the same one as above), put in all ingredients. Heat to Medium-high heat to bring to gentle boil (lower heat to medium heat if boiling too rapidly). Gently boil for about 6-8 minutes uncovered, stirring frequently, or until you reach the desired consistency. The more you cook it, the thicker it will get. Taste and adjust seasonings, adding more lemon, sugar, chili flakes, thyme as needed. Serve hot or cold with chicken, fish, pork or grains.

PORK CHOPS WITH PEACH SAUCE

- Cook the jam, ketchup, 1 tablespoon Worcestershire sauce and 3 tablespoons water in a large skillet over medium-high heat, whisking, until thickened, about 5 minutes. Whisk in the vinegar, then the butter, a few pieces at a time; whisk in a few tablespoons water if the sauce is too thick. Remove from the heat and cover. Put the green beans in a microwave-safe bowl; sprinkle with water and season with salt and pepper. Cover with plastic wrap, pierce the plastic and microwave until tender, 8 to 10 minutes. Whisk 1 cup flour, the baking powder, 1/2 cup water, the egg white and the remaining 1 teaspoon Worcestershire sauce in a bowl; add a few more tablespoons water, if needed. Put the remaining 1/2 cup flour in a shallow dish. Heat 1/4 inch vegetable oil in a large skillet over medium-high heat until it reaches 375 degrees F on a deep-fry thermometer. Dredge the pork chops in the flour, then dip in the batter. Fry until golden, 3 to 4 minutes per side. Drain on paper towels. Serve with the peach sauce and green beans.

BARBECUE PEACH CHICKEN

- In a microwave safe bowl, combine peach preserves, vinegar, ginger, salt, pepper, and barbecue sauce.
- Microwave for 1 minute stirring halfway through.
- Place chicken in a zip-loc bag, or container that has a lid.
- Poor the mixture over the chicken.
- Seal bag or container and refrigerate for 6-24 hours.
- Occasionally turn chicken in bag or container for best taste and coverage.
- Lightly grease the grill before heating.
- Heat grill to medium.
- Turn chicken every 4 or so minutes until fully cooked.

PEACH SAUCE FOR THE MICROWAVE - FAT FREE
This is a really yummy sauce for ice cream, frozen yogurt, angel food cake, etc. I made some and froze it to pull out in the winter. I don't figure that the peaches will keep their shape very well after being frozen, but they will still taste great. Adapted from "500 Fat Free Recipes". Feel free to use just over 1/2 cup of brown sugar for the white sugar and molasses combination.

PEACH BBQ SAUCE
Our daughter brought us yellow peaches she cooked in simple syrup, peeled, and jarred. I used them to make this homemade BBQ sauce. It's great for basting, topping, and dipping chicken, pork, beef, etc. I used mine to baste and top chicken drumsticks cooked in an air fryer. It reheats nicely on the stovetop or in the microwave.

- You can skin the peaches before or after you cook them. Cut them in half and remove the pit. Cover the bottom of a deep sided pan with water. Add peaches and allow to cook until softened, approximately 20 minutes.
