Creamy blue cheese is slathered over toasted rye bread and topped with juicy pear slices, peppery arugula and tangy balsamic glaze to make this open-faced pear sandwich.

2 tablespoons walnuts
4 slices of rye bread
2 tablespoons vegetarian blue cheese
Handful of arugula
1 small pear (sliced)
1 teaspoon balsamic glaze (or standard balsamic vinegar)

Steps:

  • Toast the walnuts in a dry frying pan over a medium heat, tossing often, until the nuts are golden and fragrant, then allow them to to cool. Transfer the nuts to a small blender or food processor and whiz until fine, or crush them in a mortar and pestle.
  • Toast the bread and allow it to cool, then spread it with the blue cheese. Top with arugula and slices of pear. Drizzle with a little balsamic and sprinkle with the walnut dust. Enjoy immediately.

1 pre-baked pizza crust
2 cloves garlic, minced
1 tablespoon Dijon mustard
2 sprigs fresh rosemary, chopped
¼ cup white wine vinegar
½ cup olive oil
¼ cup crumbled blue cheese
salt and pepper to taste
¼ cup crumbled blue cheese
⅓ cup shredded mozzarella cheese
2 pears - peeled, cored and sliced
¼ cup toasted walnut pieces

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the pizza crust on a pizza pan. Bake in the preheated oven until just crisp, about 5 minutes.
  • Meanwhile, combine the garlic, Dijon mustard, rosemary, and vinegar in a food processor or blender. Turn on, and drizzle in the olive oil slowly until the dressing has thickened. Quickly pulse in 1/4 cup of blue cheese; season to taste with salt and pepper.
  • Spread the vinaigrette over the pizza crust. Sprinkle 1/4 cup of blue cheese evenly over the crust, followed by the mozzarella cheese. Arrange the sliced pears over the cheese, and sprinkle with the toasted walnuts.
  • Bake in the preheated oven until the cheese has melted and is bubbly, 7 to 10 minutes. Let cool slightly before cutting into slices.

3 tablespoons butter
1 tablespoon olive oil
4 sweet onions, thinly sliced
salt and pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed
2 firm pears, peeled, quartered, and sliced
¾ cup crumbled blue cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  • Melt the butter and olive oil in a large skillet over medium heat. Stir the onions into the butter, and cook until the onions have softened and caramelized to a deep, golden brown, 30 to 40 minutes. Stir frequently as the onions cook to keep them from burning. Once done, season with salt and pepper, and set aside to cool.
  • Use a sharp knife to cut each sheet of puff pastry into 9 squares. Cut each square in half diagonally to yield 36 triangles. Place the triangles onto the prepared baking sheets, and top with the caramelized onions, pears, and 1 teaspoon of blue cheese.
  • Bake in the preheated oven until the pastry is puffed and golden brown, 20 to 30 minutes. Allow to cool to room temperature before serving.

1/2 cup crumbled blue cheese
1/4 cup toasted walnuts, chopped
1 tablespoon snipped fresh chives

Steps:

  • Peel and core pears.
  • Cut into 1/4 inch dice.
  • Combine in a bowl with other ingredients, tossing to mix well.
  • (Many times, I don't even bother with toasting the walnuts and it works out just fine).
  • Serve with crackers or toasted pita wedges for scooping.

6 ounces stilton blue cheese
1 ripe pear
2/3 cup walnuts, toasted (see recipe for Toasted Walnuts)
8 slices bread (white or dark)
4 tablespoons unsalted butter, softened
1 small shallot, chopped fine (or onion)
salt and pepper (optional)
fresh tarragon, chopped fine (or herb of choice)

Steps:

  • Toast the walnuts, then finely chop.
  • Remove the core from the pear and slice thinly. Set aside.
  • In a bowl, combine the crumbled cheese and nuts.
  • Add the butter, tarragon, shallot, optional salt and pepper to this mixture and mix well.
  • Spread the seasoned butter onto 8 slices of bread.
  • Lay thinly sliced pears on four of the bread slices.
  • Cover with the remaining four slices of bread.
  • Wrap each sandwich securely with plastic wrap and refrigerate until cold and mixture is set.
  • Unwrap the sandwiches and trim the crusts.
  • Cut each sandwich into 4 triangles or squares.
  • Note: To add a little color to the sandwiches, you might like to sprinkle a bit of the herbs on top of each square or trangle.

4 pears, halved and cored
extra virgin olive oil
1/4 bunch fresh thyme
salt & freshly ground black pepper
1/4 cup crumbled good-quality blue cheese
1/4 cup walnut pieces

Steps:

  • Preheat oven to 375 degrees F.
  • Arrange the pears, cut side up, on a baking sheet.
  • Drizzle with olive oil and sprinkle with salt and pepper.
  • Strip the leaves from the thyme branches and sprinkle over the pears.
  • Bake 20 minutes, then remove from oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half.
  • Return to oven and roast until they are tender and cheese is soft, about 10 minutes.
  • Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes; chop.
  • When the pears are cooked, transfer them to a serving plate and sprinkle with toasted walnuts.
  • Serve hot.

  • In a medium bowl, stir cream cheese with a wooden spoon until softened. Mix in walnuts; season with salt and pepper. Gently fold in blue cheese, breaking up as little as possible. Transfermixture to a small bowl; smooth top. Serve with crackers or crostini. To store: Cover with plastic wrapand refrigerate, up to 1 week.
