PEPPERMINT PATTIES
I have made these every year as one of many Christmas treats. My family really loves them, it wouldn't be Christmas without them! When you dip, tap the fork on the edge of the pan to shake off excess. Slide the patty onto waxed paper -- you can use the fork to make a little swirl on the top to make it pretty.

Steps:
- In a large mixing bowl, combine condensed milk and peppermint extract. Beat in enough confectioners' sugar, a little at a time, to form a stiff dough that is no longer sticky. Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties. Let patties dry at room temperature two hours, turning once.
- In a medium saucepan over low heat, melt chocolate with shortening, stirring often. Remove from heat. Dip patties, one at a time, into chocolate by laying them on the tines of a fork and lowering the fork into the liquid. Let cool on waxed paper until set.

Steps:
- Sieve the icing sugar into a large bowl. Add a little of the egg white and a few drops of the peppermint essence and mix really well. You want the mixture to come together as a soft dough, so keep adding a little egg white until this starts to happen (you might not need to use all of it). Taste the mixture and add more peppermint essence if desired.
- Divide the mixture into 20 small balls, then flatten them gently with your fingertips into discs.
- Place baking parchment on a large board or tray and space out the discs. Meanwhile, tip the chocolate into a microwavable bowl and heat in 30 second intervals in the microwave until melted, stirring after each blast. Once melted, leave the chocolate to cool for 5-10 mins then carefully dip the peppermint creams in the melted chocolate until they are half coated. Lay them back on the baking parchment to set for 3-4 hours or overnight.

15 PEPPERMINT DESSERTS TO MAKE FOR THE HOLIDAYS
From thespruceeats.com
Estimated Reading Time 5 mins
- Peppermint Brownies. These ganache-coated peppermint brownies will use up leftover candy canes or peppermint candies so they don't go soft after the holidays, but you might want to buy extras just to make them.
- Classic Peppermint Bark. Peppermint bark is probably the most classic peppermint dessert around Christmas time and for good reason. If you don't have time or the inclination to temper the chocolate, use chocolate melting disks, or don't temper at all.
- Peppermint Bark Cheesecake. With a pretty contrasting peppermint bark and cookie crust and a nice crunch from crushed-up candies, this festive cheesecake tastes as great as it'll look on your dessert table.
- Grasshopper Pie. Turn the classic cocktail into a dessert with this boozy no-bake grasshopper pie. It comes out fluffy and impressive, but serve it to the adults only because it does have creme de menthe.
- Vegan Hot Cocoa Cupcakes. These hot chocolate cupcakes taste just like sipping a candy cane-spiked cup of cocoa, but without any dairy products. Chickpea flour acts as both a flour and a natural binder and buckwheat flour gives them a lovely depth of flavor without adding too much nuttiness.
- Christmas Peppermint Cake. This gorgeous festive cake uses crushed candy canes and peppermint extract in the filling for a tasty mint flavor that complements the deep chocolate cake perfectly.
- Andes Mint Cookies. The mint-chocolate flavor of Andes Mint cookies is easily obtained with the little candies. This delicious treat incorporates the chocolate mints into the batter in two stages.
- Christmas Bark. This chocolate candy dessert is easy to make and festive looking, perfect for the holiday but delicious any time of year. Dark chocolate is melted and combined with peppermint extract and then drizzled with both milk and white chocolate.
- Chocolate Mint Cupcakes. Because they start with a cake mix, these easy cupcakes make a perfect treat for a busy evening. Beat the frosting long enough to give it time to get soft and fluffy or use canned frosting for an even faster dessert.
- Peppermint Cookies. With a texture that tastes like a fudge brownie, but in cookie form, these treats have as much chocolate as minty goodness. Top them with crushed peppermint candies for extra texture and color that will impress both Santa and your cookie swap partners.
