PEPPERONI PIZZA LOAF
This savory stromboli starts with frozen bread dough, so it comes together in practically no time. The golden loaf is stuffed with cheese, pepperoni, mushrooms, peppers and olives. - Preheat oven to 350°. On a greased baking sheet, roll out dough into a 15x10-in. rectangle. In a small bowl, combine the egg yolks, Parmesan cheese, oil, parsley, oregano, garlic powder and pepper. Brush over the dough. , Sprinkle with the pepperoni, mozzarella cheese, mushrooms, pepper rings, green pepper and olives. Roll up, jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under., Position loaf with seam side down; brush with egg whites. Do not let rise. Bake until golden brown and dough is cooked through, 35-40 minutes. Warm the pizza sauce; serve with sliced loaf., Freeze option: Freeze cooled unsliced pizza loaf in heavy-duty foil. To use, remove from freezer 30 minutes before reheating. Remove from foil and reheat loaf on a greased baking sheet in a preheated 325° oven until heated through. Serve as directed.

- Preheat oven to 375°. In a large bowl, combine the eggs, 3/4 cup pizza sauce, bread crumbs, onion, green pepper, oregano, garlic, salt and pepper. Crumble beef and sausage over mixture and mix well., On a piece of parchment, pat beef mixture into a 12x10-in. rectangle. Layer the ham, 1-1/2 cups cheese and mushrooms over beef mixture to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling parchment away as you roll. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish; brush with remaining pizza sauce., Bake, uncovered, 1 hour. Sprinkle with remaining cheese. Bake until no pink remains and a thermometer reads 160°, 15-20 minutes longer. Using 2 large spatulas, carefully transfer meat loaf to a serving platter. Freeze option: Securely wrap and freeze cooled baked meat loaf in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased shallow baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

PIZZA LOAF
Steps:
- Preheat the oven to 250 degrees F (convection) or 275 degrees F (conventional).
- Blend pork, beef, cream, ketchup, breadcrumbs, ice water, salt, lemon juice, ground mustard, dehydrated onion, smoked paprika, white pepper, sugar, garlic powder and eggs in a food processor until well blended.
- Turn out into a bowl and add the Cheddar, Swiss cheese, olives, peppers and tomatoes (or add your favorite pizza toppings like salami, pepperoni, mushrooms...).
- Pack into a 9-by-5-by-3-inch loaf pan.
- Bake until internal temperature reads 160 degrees F, about 2 hours.
BRAIDED PIZZA LOAF

- Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. - Preheat oven to 350°F.
- Stretch out pizza dough on a floured surface into a nice large rectangle.
- If you are using sauce, spread a very thin layer on the dough.
- Layer pepperoni, mozzarella, ham or your choice, roasted red pepper or your choice and fresh basil.
- Roll the dough up into one log. Press seam together well.
- Transfer onto a baking sheet with the seam down. I use silpat on the baking sheet.
- Bake 25-35 minutes, until the top begins to brown.
- Slice and serve.

PIZZA PUFF PINWHEELS

- Preheat oven to 200C/180C fan/gas 6. Unroll the pastry onto a lightly floured surface and roll it out to 40 x 32cm. Spread a layer of pasta sauce over it, leaving a 1cm border around the edges. Arrange the ham evenly on top, then scatter the grated cheese over.
- Starting at one of the short ends, roll the pastry up as tightly as possible. Chill in the fridge for 10 minutes or so.
- Take a very sharp knife and cut the roll into 12 equal slices, laying them flat on 2 non-stick baking trays as you go. Brush each pinwheel lightly with beaten egg and sprinkle over the herbs. Bake for 12-15 minutes until puffed and golden. Leave to stand for 5-10 minutes before serving.

Steps:
- Cook beef with mushrooms, onion, garlic, salt & pepper in a skillet till beef is no longer pink. Feel free to add more veggies as per taste.
- Drain fat.
- Punch down dough on a large greased cookie sheet.
- Mix baste ingredients (the last seven listed) and brush onto dough.
- Spoon meat filling down center 1/3 of dough and sprinkle with cheese.
- Roll, pinch seams and tuck ends under.
- Brush top of loaf with egg whites.
- Bake at 350° for 30 - 40 minutes until golden.
- Cut in thick slices, serve with sauce for dipping.

- In a small saucepan, combine milk and 2 tablespoons butter over low heat. Heat until bubbles appear on the sides then turn off heat and set aside.
- Measure out 1/4 cup of warm water and combine it with yeast and sugar. Let sit for 5-10 minutes, until foamy. Optional: while yeast is is dissolving, stick pepperoni in the microwave on a paper towel lined plate for 30-40 seconds to remove a bit of grease. Lightly butter an 81/2 x 4 x 2 loaf pan.
- Gently whisk the egg with the milk/butter mixture. In the bowl of an electric mixer (using dough hook attachment), combined flour and salt and lightly mix to combine. With the mixer on low speed, add in milk/butter mixture, then yeast mixture. Mix on medium speed until dough comes together, about 5-6 minutes. Remove dough from bowl and lightly flour your workspace, then knead by hand for a minute or two. Add a few more teaspoons of flour if dough is sticky until it becomes smooth.
- Melt the two tablespoons of butter. Brush one tablespoon all over a bowl, then place dough in bowl and coat with butter. Cover the bowl and set in a warm place to double in size for about one hour.
