1 (3 1/2-pound) beef rib roast, de-boned* and tied
1 jar peeled whole garlic cloves
1 packet Italian dressing mix
About 1 cup cracked black peppercorns

Steps:

  • Preheat oven to 375 degrees F.
  • Rinse the roast and pat dry. Bring roast to room temperature. Stud prime rib with garlic cloves by cutting slits into the meat and placing cloves inside. Rub Italian dressing mix all over roast. Pour black peppercorns into a shallow dish and dredge the roast in the pepper so that it's completely covered. Transfer to a roasting pan lined in aluminum foil.
  • Place roast in the oven and cook for 1 hour. Turn oven off and let meat sit in oven until meat reaches the desired degree of doneness, about 130 to 135 degrees F for medium rare. Let rest for 10 minutes before carving.
  • *Cook's Note: Have butcher remove ribs from roast and tie it.

1/4cup1/4 cup Dijon mustard
2tablespoons2 tablespoons mayonnaise
1/2cup1/2 cup Panko breadcrumbs
1/8cup1/8 cup whole black peppercorns, crushed
11 (4- to 4 1/2-pound) boneless prime rib
Salt, to taste

Steps:

  • Preheat the to 350°F. Spread garlic cloves out on a small oven-safe pan. Toss with 1 teaspoon oil, cover the pan with foil and bake 15 to 20 minutes, or until the garlic is soft enough to mash with a fork. To make the garlic & peppercorn crust, mash roasted garlic in a medium-size mixing bowl until there are no large pieces. Add mustard, mayonnaise, bread crumbs, and peppercorns. Mix well and set aside. In a skillet large enough to fit the roast, heat 2 tablespoons of oil over medium-high heat until the oil begins to ripple. Season roast with salt then carefully place it into skillet. Sear until all sides are brown, about 5 to 8 minutes per side. Move meat to a roasting pan and make sure the fatty side is facing up. Let roast cool a bit before evenly pressing the crust all over the top. Roast 90 to 120 minutes, or until desired doneness. (At 125°F, the roast is medium rare. At 130°F, the roast is medium.) Let the roast rest for 15 minutes before slicing.

This recipe adapts very well for use with chuck eye, rolled cross rib or rump roast. It is recommended getting your roast coated in the crust and allowing to sit overnight to absorb some of the wonderful flavors. Just remember that the roast must be removed from the refrigerator at least a few hours before you are planning on roasting it, to warm. Roasting time will vary with size of roast and desired doneness. Roasting times are given in recipe.

6 -10 lbs prime rib roast (or 2, 3-5 lb roasts)
3/4 cup olive oil
9 garlic cloves, peeled, crushed
3 cups breadcrumbs
3/4 cup chopped fresh parsley or 1/4 cup dried parsley
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
2 teaspoons salt
1 1/2 teaspoons black pepper

Steps:

  • To prepare for crust:
  • Wipe down the roast and place on a roasting rack.
  • Heat your oil in a skillet and add the garlic.
  • Sauté 2 minutes, pressing the juice from the garlic into the oil.
  • Take the pan off of the heat.
  • Mix in bread crumbs, parsley, seasonings, salt and black pepper, allowing to cool slightly, press the mixture onto the roast, coating well.
  • The roast can be sealed tightly and refrigerated at this point
  • When ready to put into oven, preheat oven to 450ºF.
  • Insert meat thermometer into the thickest portion of the muscle.
  • When the oven has reached 450ºF, place the roast in and cook at this temperature for approximately 20 minutes.
  • This will sear the meat, keeping the juices inches
  • Reduce the heat to 325ºF and continue cooking until done to your taste.
  • This type of roast does not need to be basted.
  • Roast at 325ºF until meat thermometer registers 140ºF for rare (16 to 18 minutes per lb.), 160ºF for medium (20 to 22 minutes per lb.) or 170ºF for well done (24 to 26 minute per lb.) *.
  • Remove from the oven and place a sheet of aluminum foil and then several kitchen towels over the roast. It will continue to cook after being removed from the oven, the juices will settle and the texture will be firmer which will allow easier carving.
  • Allow to stand for 15 to 20 minutes before carving.
  • (*Remember if roasting more than one item at a time in a oven that it will always take longer. Figure your appropriate time frame for roasting and estimate additional time depending upon how much food will be in the oven at any one time. It is better to overestimate the amount of time needed than to under estimate. Meat can always be pulled from the oven early if done sooner than you expect and covered with towels as described above. The meat will stay hot and juicy for a long period of time.).

  • Preheat the oven to 400°. Rub the pepper mix all over the roast. Place the roast on a rack set over a roasting pan. Add 2 cups of the broth to the pan and roast for 30 minutes, until the meat is well browned. Add 2 more cups of the broth and loosely tent the roast with foil. Reduce the oven temperature to 350°. Roast for about 2 1/2 hours, until an instant-read thermometer registers 115°; add the remaining 2 cups of broth halfway through. Set the roast on a cutting board to rest for about 30 minutes (the center of the roast will register at 125° for medium rare).
  • Strain the pan juices into a small saucepan. Skim off as much fat as possible and bring to a simmer. Carve the roast and serve with the pan jus.
