2 cups frozen roasted Roma tomato sauce, thawed
1 tablespoon chopped chipotle chiles in adobo sauce
4 teaspoons unsweetened baking cocoa
2 cups pulled pork, roughly chopped
8 Old El Paso™ flour tortillas for burritos (8 inch)
1 1/2 cups crumbled queso fresco cheese (6 oz)
1/4 cup chopped green onions (4 medium)
1/4 cup chopped fresh cilantro

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 4-quart saucepan, heat tomato sauce, chipotle chiles and cocoa to a simmer over medium heat. Reduce heat to medium-low; continue to cook 5 minutes to combine flavors. Transfer 1 cup of the sauce to small bowl. Add pork to sauce in pan; toss to coat.
  • Place tortillas in baking dish. Divide pork mixture among tortillas; divide 1/2 cup of the cheese among tortillas; wrap tortillas around filling, placing seam side down. Top with reserved sauce. Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil, sprayed side down.
  • Bake 25 to 30 minutes or until hot and bubbly. Top with reserved cheese, green onions and cilantro.

3 tablespoons ground black pepper
2 tablespoons ground coriander
7 to 9 dried avocado leaves
4 sprigs fresh oregano

1/2 fresh jalapeno, minced (remove seeds for less heat)
8 to 10 shallots, thinly sliced
1 cup cider vinegar
1 cup red wine vinegar
2 tablespoons ground cumin
2 tablespoons chopped garlic
2 tablespoons fresh oregano

1 small beet, cut in half
1/2 habanero chile, cut in half
6 beefsteak tomatoes
1/4 cup vegetable oil

Oil, for cooking enchilada shells
3 to 4 corn enchilada shells
1 ounce crumbled Cotija

Steps:

  • For the braised lamb: Combine the lamb, tomato juice, Dijon, salt, garlic, lime juice, vinegar, cumin, pepper, coriander, avocado leaves, oregano, thyme, shallots, jalapeno and enough water to cover in a large pot. Simmer on low heat, uncovered, for 3 hours.
  • Remove meat and let cool, reserving liquid. Shred meat, removing as much fat and cartilage as possible.
  • For the pickled shallots: Cover shallots in a bowl with water.
  • Combine vinegars, cumin, garlic, oregano, salt, beet and chile in a saucepot and bring to a boil. Turn off the heat and strain the liquid into the bowl with the shallots. Add the beet. Refrigerate until cooled, 4 to 6 hours. Strain the liquid and discard the beet.
  • For the Oaxacan red chile-chocolate mole: Char tomatoes on a grill or over an open flame until blackened and splitting.
  • Preheat the oven to 400 degrees F.
  • Heat oil in a large pot, then add corn, garlic, celery, carrot, poblano, onion and jalapeno and saute until soft.
  • Spread pumpkin seeds, pecans, sesame seeds and corn and flour tortillas on a baking sheet and bake until browned, 5 to 7 minutes.
  • Blend tomatoes, blend with toasted nuts and seeds. Add to the pot, then add the tomato juice, tomatillos, ancho chile powder, raisins, chipotle chile powder, guajillo chile powder, cumin, salt, brown sugar, granulated sugar, cinnamon, oregano, thyme, chocolate discs, bananas, bay leaves and 1 1/2 gallons water. Simmer on low heat, stirring frequently, for 2 hours.
  • Puree in a blender until smooth.
  • For the tinga spice: Mix paprika, salt, granulated sugar, cumin, pepper, brown sugar, chile powders, garlic powder, onion powder, oregano and cayenne together in a bowl. Transfer to an airtight container.
  • For the enmoladas: Place crushed peanuts in a large skillet and heat and toss until they begin to release their oils; add some tinga spice and toss to coat. Turn off heat and set aside.
  • Put several inches of oil into a Dutch oven and heat up until hot. Dip enchilada shells into the oil with tongs until pliable, 5 to 8 seconds. Place on a large rimmed plate. Place 2 ounces warmed shredded lamb (including any jus) on each shell. Using your fingers, roll each shell. Ladle Oaxacan mole sauce over entire plate-enmoladas are about the sauce!
  • Garnish the enchiladas with Cotija, spiced crushed peanuts and 2 ounces pickled shallots. (Save remaining meat, shallots, mole and tinga for another use.)

1 19-ounce can red enchilada sauce
10 corn tortillas
2 cups pulled pork
1 15-ounce can black beans or pinto beans, drained and rinsed
1 cup frozen fire-roasted corn
2 cups shredded Mexican cheese blend (about 8 ounces)
Sour cream, sliced scallions and chopped fresh cilantro, for topping

Steps:

  • Preheat the oven to 400˚. Coat an 8-inch square baking dish with cooking spray. Spread 1/2 cup enchilada sauce in the bottom of the pan and top with 3 corn tortillas, slightly overlapping and cutting as needed to fit. Top with half each of the pork, beans and corn; sprinkle with 1/2 cup cheese. Top with 3 more tortillas and spread with another 1/2 cup enchilada sauce. Top with the remaining pork, beans and corn and sprinkle with another 1/2 cup cheese. Top with the remaining 4 tortillas; spread the remaining enchilada sauce on top.
  • Cover with foil and bake until hot and bubbling around the edges, 20 to 25 minutes. Uncover, top with the remaining 1 cup cheese and continue to bake until melted and bubbling all over, about 10 minutes. Top each serving with sour cream, scallions and cilantro.

1 tbsp vegetable oil
750g trimmed pork shoulder , cut into large chunks
1 tsp tomato purée
200ml hot chicken stock
strips of zest and juice 1 orange
1 cinnamon stick
2 thyme sprigs
2 onions , cut into chunks
2 garlic cloves
250g pack cherry tomato
2-3 tbsp vegetable oil
2 x 335g packs corn tortillas
50g flaked almond
50g raisin
2 tsp each ground coriander and cumin
1-2 tsp chipotle paste
25g plain chocolate , finely chopped
200g radish , trimmed and thinly sliced
2 avocados , chopped
juice 2 limes
bunch coriander , leaves only
1-2 green chillies , finely chopped

Steps:

  • Heat the oil in a casserole dish. Brown the pork for about 10 mins until golden all over, stir in the tomato purée and cook for 1 min. Pour over the chicken stock, then add the strips of orange zest and juice, cinnamon and thyme. Bring to the boil, reduce the heat, then cover and simmer for 1½ hrs.
  • Meanwhile, make the sauce. Heat a non-stick frying pan and dry-fry the onions and whole garlic cloves for about 5 mins, turning often until softened and lightly charred all over. Tip into a blender. Add the tomatoes to the pan. Cook for 3 mins until starting to blister and char, then tip into the blender. Add 1 tbsp oil to the pan. Fry 1 of the tortillas for 1 min on each side until golden. Tear into pieces and tip into the blender. Adding more oil if you need, fry the almonds for 3 mins until golden. Add to the blender. Finally add the raisins, coriander and cumin to the pan and cook for 1-2 mins until the raisins are plump. Add these to the blender along with the chipotle paste and finely chopped chocolate. Whizz together until a rough paste forms.
  • Using a slotted spoon, remove the meat from the pan to a board, leave to cool a little, then use forks or your fingers to tear into shreds. Remove the cinnamon, orange zest and thyme sprigs from the pan and discard. Pour a little of the cooking liquid into the blender, then carefully whizz together with the mole sauce. Tip sauce into the pan with the rest of the pork cooking juices. Simmer on the hob for 10-15 mins, then return the shredded pork to the pan and cook for 20 mins more. Season to taste. Can be made up to this point up to 2 days in advance and stored in the fridge or frozen for up to 3 months.
  • Just before serving, microwave the tortillas for 1 min to warm them. Toss together all the salsa ingredients and season well. Set everything out on the table. To serve, spoon some of the pork mole onto a tortilla, top with some salsa, then roll up and eat.

1 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
2 cups chopped deli rotisserie chicken (from 2-lb chicken)
6 low-carb flour tortillas (6 inch)
3 cups shredded lettuce
1 1/2 cups refrigerated prechopped tomato
1/4 cup crumbled queso fresco cheese (1 oz)
6 medium green onions, chopped (6 tablespoons)

Steps:

  • Heat oven to 425°F. Place mole sauce in medium saucepan. Gradually add broth, stirring with wire whisk until smooth. Cook over medium-high heat, stirring often, until thoroughly heated.
  • Meanwhile, place chicken in small microwavable bowl. Cover with microwavable plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on High 1 to 2 minutes or until thoroughly heated.
  • Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Spoon 1/3 cup chicken down center of each tortilla. Spoon 1 tablespoon sauce over chicken on each tortilla; fold 2 sides toward center. Place enchiladas, seam sides down, in baking dish. Pour remaining sauce over enchiladas.
  • Bake uncovered 9 to 10 minutes or until thoroughly heated.
  • Place 1 enchilada on each serving plate; top with lettuce, tomato, cheese and onions.

3 cups enchilada sauce
1 1/2 cups monterey jack pepper cheese, shredded
1 1/2 cups aged cheddar cheese, shredded
1 tablespoon olive oil
2 cups pork Carnitas
1 cup red kidney beans, rinsed and drained
1 (15 ounce) can corn kernels, drained
6 large corn tortillas
6 tablespoons light sour cream, for garnish
6 -8 large cherry tomatoes, quartered
1 avocado, diced, for garnish
2 tablespoons cilantro, chopped, for garnish

Steps:

  • Preheat oven to 350ºF. In a 9 x 13-inch baking dish, spread on the bottom a fine coat of enchilada sauce; set aside. In a small bowl, combine the two cheeses together; set aside.
  • In a skillet over medium-high heat, add oil. When hot but not smoking, add pork and cook to warm it up, tossing continuously, about 2 minutes. Transfer to a bowl and add red kidney beans, corn, and ½ cup mixed cheese; stir to combine.
  • Fill each tortilla with ½ cup of pork mixture. Roll up by folding the ends and transfer into the prepared dish. Ladle over the remaining enchilada sauce and transfer into the preheated oven; bake for 10 minutes. Remove from the heat and sprinkle the remaining cheese on top. Return the baking dish to the oven and bake for another 10-12 minutes or until the cheese is melted and golden. Sit for 5 minutes before serving. Spread sour cream across, add tomatoes, avocado and sprinkle cilantro.

1 (10 ounce) can enchilada sauce
½ teaspoon onion powder
1 cup reduced fat sour cream

2 cups shredded Colby-Monterey Jack cheese
1 (10.75 ounce) can condensed tomato soup
¼ teaspoon garlic powder
½ teaspoon ground cumin
6 (7 inch) flour tortillas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine cooked pork, enchilada sauce, onion powder, 1/2 cup sour cream, green chilies, and one cup of the shredded cheese in a large bowl. In a separate bowl, stir together tomato soup, remaining 1/2 cup sour cream, garlic powder, and cumin.
