TUNA AND BEAN SALAD



Tuna And Bean Salad image

The combination of tuna with olive oil, lemon juice, and beans is inspired by the cuisine of Italy. The beans are green beans and cannellini beans, also known as white kidney beans. Serve cold or at room temperature.

1 cup frozen French-style green beans
1 (5 ounce) can tuna, drained
½ cup drained canned cannellini beans
1 red onion, chopped
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon minced garlic
2 tablespoons grated Parmesan cheese
salt and pepper to taste

Steps:

  • In a large bowl, mix together green beans, tuna, cannellini beans, chopped onion, olive oil, lemon juice, garlic, and cheese. Season to taste with salt and black pepper. Cover, and chill in the refrigerator for about 2 hours.

1 (15 ounce) can white beans
1 (6 ounce) can tuna, drained and flaked
1/4 red onion, finely chopped
2 -3 sprigs fresh rosemary, finely chopped
2 cups arugula, finely chopped
1 lemon, juice of
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Drain beans well and place half the beans into a bowl.
  • Mash remaining beans with a fork.
  • Combine mashed and whole beans with tuna, onion, rosemary, and arugula.
  • Dress the salad with lemon juice, olive oil, salt, and pepper.
  • Serve with crackers.

2 (28 ounce) cans baked beans
1 (12 ounce) bottle chili sauce
1 large sweet onion, chopped
2 cups packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet.
  • Cook over medium high heat until evenly brown.
  • Drain, crumble and set aside.
  • In a large bowl combine beans, chili sauce, onion, brown sugar and bacon.
  • Pour into a 9x13 inch casserole dish.
  • Bake in preheated oven for 45 minutes to 1 hour.

Mellow garbanzo or cannellini beans are dressed up with herbs, red onion, and tuna in this Italian-influenced marinated salad.

⅓ cup extra virgin olive oil
¼ cup NAKANO® Natural Rice Vinegar
1 tablespoon minced garlic
¼ teaspoon salt
⅛ teaspoon pepper
1 (15 ounce) can garbanzo or cannellini beans, drained
½ medium red onion, sliced into thin lengthwise slivers (use less onion if strong)
2 tablespoons minced fresh mint
2 tablespoons minced fresh cilantro
1 tablespoon minced fresh Italian (flat) or curly parsley
10 each pitted kalamata olives, cut in half
1 (12 ounce) can solid white albacore tuna in water, drained

Steps:

  • In a small bowl, whisk together oil, vinegar, garlic, salt, and pepper; set aside dressing. In a medium bowl, toss beans, onion, mint, cilantro, parsley, and olives, if desired. Add tuna and enough dressing to lightly coat; toss gently (refrigerate leftover dressing, if any, for another use). Adjust salt and pepper to taste. Cover; refrigerate at least 15 minutes (or up to 24 hours). Serve with crostini (toasted Italian bread), if desired.
