Quick Fruitcake image

This fruitcake recipe is very easy to make through use of prepared mincemeat and mixed candied fruit for a quick Christmas-time classic.

2 ½ cups sifted all-purpose flour
1 teaspoon baking soda
2 eggs, lightly beaten
1 (28 ounce) jar prepared mincemeat pie filling
1 (14 ounce) can sweetened condensed milk
1 cup chopped walnuts
2 cups candied mixed fruit

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Butter cake pans, and line with wax paper. Butter the wax paper.
  • Sift the flour with the baking soda.
  • In a large bowl, combine eggs, mincemeat, condensed milk, fruit, and nuts. Fold in dry ingredients. Pour into prepared pans.
  • Bake for 2 hours, or until center springs back and top is golden brown. Cool. Turn cakes out onto wire rack; remove wax paper.

I make these cookies in place of Fruitcakes. They go much faster. These cookies will keep indefinitely in the refrigerator, or store in a closed tin after baking. They are better after several days. Best if made a week or two before Christmas, and hope some are left for Christmas

1 cup butter
2 cups packed light brown sugar
4 eggs
1 pound golden raisins
1 pound raisins
½ pound red candied cherries
½ pound red candied pineapple
½ pound green candied cherries
½ pound green candied pineapple
1 cup bourbon
2 tablespoons milk
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3 ½ cups all-purpose flour
1 pound walnut halves
1 pound pecan halves

Steps:

  • In a medium bowl, dredge candied fruit and raisins in 1 cup flour.
  • In a large bowl, cream together brown sugar and butter. Beat in eggs. Gradually beat in bourbon and milk. Mix in remaining flour and spices. Stir in fruit and nuts. Refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Drop dough by teaspoonfuls, about 2 inches apart, onto ungreased cookie sheets.
  • Bake for approximately 15 minutes. Remove from oven, and cool on wire racks.

Fruitcake Cookies are a festive Holiday cookie. The cookies have warm seasonings from cinnamon and nutmeg and festive fruit that is added to fruitcake. A traditional Holiday drop cookie loaded with dried citrus for an easy Christmas cookie.

1 ⅓ cups all-purpose flour
½ cup unsalted butter (1 stick), room temperature
½ cup light brown sugar
½ cup granulated white sugar
1 large egg
2 teaspoons vanilla extract
½ teaspoon salt
½ teaspoon baking soda
2 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 ½ cups chopped fruitcake mix (Note 1)

Steps:

  • In a small mixing bowl, stir together the flour, salt, baking soda, cinnamon, nutmeg, set aside.
  • Preheat the oven to 350°F. Spray a cookie sheet with non-stick baking spray, set aside.
  • In a large mixing bowl using a hand mixer, mix together the brown sugar, white sugar, and butter until well combined, about 1-2 minutes.
  • Once the sugar mixture is well blended, add in the flour mixture, egg, and vanilla. Mix together until blended well, about 1 minute.
  • Gently fold the fruitcake mix into the dough.
  • Use a 1-inch cookie scooper to make 1-inch dough balls and place them on the greased cookie sheet. Keep the dough about 2 inches apart.
  • Bake in the oven for about 10-12 minutes until golden brown.
  • Once the time is done, allow the cookies to cool a bit before transferring to a cooling rack.
  • Ready to serve.

1/2 cup chopped pecans

  • Prepare quick bread batter according to package directions. Stir in the remaining ingredients. Pour into a greased 9x5-in. loaf pan. , Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

3 eggs
1 cup sugar
1 cup flour
1/2 teaspoon baking powder
2 cups fruit

Steps:

  • Preheat the over to 350F (180C). Butter an 8x8 baking dish.
  • In a big bowl whisk together the eggs and the sugar just until it all comes together, about 30 seconds, no more.
  • Add the flour (and baking powder if using) and wisk together just until the flour disappears and there are no more lumps, about 45 seconds, no more. The batter will be quite thick and there won't be a lot of it.
  • Spread the fruit over the bottom of the dish and spread the batter over. It will barely cover the fruit and it'll look like it's not enough, but it will be great. Alternatively you can mix the fruit with the batter.
  • Bake for 45-55 minutes depending on your oven. A toothpick inserted into the cake should come out clean when the cake is ready.

1/2 teaspoon ground cinnamon
1/2 cup (1 stick) butter, room temperature
1/2 cup packed light brown sugar
2 large eggs, lightly beaten
1/4 cup whole milk
3 1/2 cups coarsely chopped pecans
1 cup candied cherries, chopped
3 slices candied pineapple, chopped
Half of a 15-ounce box golden raisins, chopped

Steps:

  • Preheat the oven to 300 degrees F. Line 2 cookie sheets with parchment.
  • Sift together the flour, baking soda and cinnamon in a bowl. Cream the butter and sugar in a separate bowl, then gradually add the eggs. Add the dry ingredients alternately with the milk, blending well. Mix the pecans, cherries, pineapple and raisins in a large bowl, then pour the batter over them. Fold the fruit and nuts into the batter by hand, mixing well. Drop the batter by tablespoonfuls onto the prepared cookie sheets. Bake for 20 to 25 minutes, or until golden and done.
