A tropical version of the milky, rice drink Horchata. You can add rum to make this a tropical cocktail!

Number Of Ingredients 8

1 cup uncooked white rice
1 cup almonds
1 cup sweetened flaked coconut
3 cups boiling water
1 (14 ounce) can coconut milk
1 (14 ounce) can sweetened condensed milk
5 cups cold water, or more as needed
5 cups ice

Steps:

  • Place rice, almonds, and coconut flakes into a food processor. Process until ground to the consistency of sand. Pour rice mixture into a bowl and stir in the boiling water. Cover and rest for 6 hours or overnight.
  • Strain rice mixture through a sieve twice, discarding the ground rice, almonds, and coconut. Stir in the coconut milk and sweetened condensed milk. Stir in the cold water and serve over ice.

Horchata is a refreshing summer drink. I learned this recipe a couple years ago from a Mexican coworker, and I was immediately addicted!

Number Of Ingredients 6

2 quarts hot water
½ cup white sugar
1 ½ teaspoons ground cinnamon
1 cup long grain rice
1 cup milk
ice cubes, for serving

Steps:

  • Pour sugar, cinnamon, and rice into hot water; stir until sugar dissolves. Cover, and let stand at room temperature for at least 3 hours, but preferably overnight.
  • Stir in milk, then puree with a hand blender, or in batches in a standing blender until the rice resembles fine sand. Strain through several layers of cheesecloth, or through a very fine strainer. Serve over ice.

Horchata (cinnamon rice milk) has been a favorite addition to the many Mexican meals I've had in the Bay Area. It's lightly sweet and refreshing. This is a much easier recipe than the traditional method which requires up to 3 hours to make.

1 cup water
½ cup white sugar
¼ teaspoon ground cinnamon
2 quarts rice milk

Steps:

  • Heat water, sugar, and cinnamon in a saucepan over medium heat. Simmer until sugar is dissolved, whisking occasionally, about 5 minutes. Allow mixture to cool for 10 minutes.
  • Pour rice milk into a large pitcher.
  • Stir sugar water into rice milk. Serve chilled or over ice.

STRAWBERRY HORCHATA

A fun and refreshing twist to the traditional horchata. The optional cinnamon stick adds another layer of flavor. Adjust your sweetener depending on how sweet your strawberries are.

3 cups hot water
⅔ cup blanched almonds
⅓ cup long grain rice
1 (2 inch) stick cinnamon
2 cups strawberries, sliced
½ cup water
¼ cup stevia powder, or to taste
4 cups ice, or as needed

Steps:

  • Combine 3 cups hot water, almonds, and rice in a powerful blender, such as a Vitamix®; blend until smooth. Pour into a container, add cinnamon stick, and cover; let sit at room temperature for 24 hours.
  • Remove cinnamon stick from mixture break up into small pieces. Pour mixture and cinnamon pieces into the Vitamix® and blend until cinnamon pieces are pulverized and blended.
  • Strain mixture over a sieve. Pour back into Vitamix® and add strawberries, 1/2 cup water, and stevia. Blend until smooth.
  • Pour over ice and serve, or chill until ready to serve.
