Raspberry, Brie and Blue Grilled Cheese image

We gave classic grilled cheese a tantalizing grownup taste by using brie, blue cheese and a layer of raspberry preserves.

2 slices whole-grain bread
1 teaspoon salted butter
1 oz Brie cheese, rind removed
2 tablespoons crumbled blue cheese
1 teaspoon raspberry preserves

Steps:

  • Spread 1 side of each bread slice with butter. Place 1 slice, buttered side down, in small skillet. On same bread slice, carefully spread Brie (it helps to slice it a bit). Sprinkle with blue cheese. Spread raspberry preserves on unbuttered side of second bread slice. Place slice, buttered side up, on cheese-topped slice.
  • Cook over medium heat about 5 minutes or until bottom is golden brown. Carefully turn; press down lightly. Cook 2 to 3 minutes longer or until cheese is melted and bottom is golden brown.

My favorite appetizer is a raspberry-glazed cheese ball, so I used similar ingredients to dress up a plain grilled cheese sandwich. The quick combination was unique but delicious, and it became a popular request in my house.

2 tablespoons seedless red raspberry preserves
4 slices sourdough bread
2 tablespoons chopped pecans
1 to 2 tablespoons sliced green onion
4 slices Muenster or baby Swiss cheese
3 tablespoons butter, softened

Steps:

  • Spread preserves over bread slices; top with the pecans, onion and cheese. Top with remaining bread; butter outsides of bread. Toast on a hot griddle for 3-4 minutes on each side or until golden brown.

6 tablespoons softened butter, divided
8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons finely shredded Manchego or Parmesan cheese
3 tablespoons mayonnaise
1/8 teaspoon onion powder
4 ounces Brie cheese, sliced, rind removed
1 cup fresh blackberries

Steps:

  • Spread half the butter over one side of bread slices. In a large skillet, toast bread, buttered side down, over medium-low heat until golden brown, 2-3 minutes., In a small bowl, combine cheddar, Monterey Jack and Gruyere cheeses. In another bowl, combine Manchego cheese, mayonnaise, remaining 3 tablespoons butter and onion powder., On four slices of toast, layer Brie cheese, cheddar cheese mixture and blackberries. Top with remaining slices, toasted side down. Spread outsides of sandwiches with mayonnaise mixture. Toast sandwiches over medium heat until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
