INSTANT STRAWBERRY ICE CREAM

Want ice cream but you didn't plan ahead and get it going? Just too busy? No ice cream maker? I've got the answer -- and it's done in an instant. As in a minute or so! You need 3 things: frozen fruit, liquid, and a high-powered blender. Serves 4 to 5 (1-cup servings).

Number Of Ingredients 4

1 1/2 cups cream (whole milk, kefir, or yogurt -- or even water or juice for sorbet)
16 ounces organic strawberries (frozen about 3 to 4 cups -- or mixture of berries or other frozen fruit altogether)
1/4 to 1/3 cup sweetener (dry, or to taste -- whizzed fine* separately beforehand)
1 teaspoon vanilla extract

Steps:

  • Combine all ingredients in the order listed in the Vitamix or Blendtec container.
  • Put the lid on.
  • Start the speed on low and increase slowly as the fruit gets broken up fully and the mixture starts circulating pretty freely.
  • If using the Vitamix, use the tamper while blending to help the mixture circulate.
  • If using the Blendtec, stop and scrape sizes as needed or use the Twister jar with lid that has side scrapers built in (and a smaller batch).
  • When there are no longer chunks of fruit and it's all smooth, it's done.
  • Serve!

2 cups frozen strawberries
1 cup plain Greek yogurt
1/2 cup heavy cream
1 1/2 teaspoons vanilla
3 ounces dark chocolate, chopped, plus more for shaving

Steps:

  • Place the frozen fruit in a food processor with the Greek yogurt, heavy cream and vanilla. Process until smooth. Add the chopped chocolate and pulse until the chocolate pieces have become small bits. Serve immediately in bowls and garnish with shaved dark chocolate over the top.

300ml semi-skimmed milk
1 tbsp caster sugar
¼ tsp vanilla extract
1kg ice
6 tbsp rock salt
hundreds and thousands , to serve
2 medium zip-seal freezer bags
1 large zip-seal freezer bag
sticky tape

Steps:

  • Place the milk, sugar and vanilla into the doubled-up medium zip-seal bags. Close and secure with sticky tape if the seal isn't strong. Tip the ice and salt into the large bag, then place the smaller bags inside the larger one, and seal well.
  • You will need to keep the bags moving for 10-15 mins to freeze the milk. Gently throw the bag from hand to hand or take turns shaking it - it's a good idea to wear gloves to keep your hands warm! Remove the ice-cream bag, open and scoop into bowls. Sprinkle with hundreds & thousands.

food colouring of your choice
2kg ice
12 tbsp rock salt
sprinkles

Steps:

  • Place the milk, sugar, vanilla and food colouring of your choice into a medium zip-seal bag, then place this in a second bag to double bag it.
  • Squeeze the air out, close and secure with sticky tape if the seal isn't strong.
  • Tip the ice and salt into a large zip-seal bag, then place the medium bag containing the milk inside and seal well.
  • You will need to keep the bag moving for 10-15 mins to freeze the milk. Gently throw the bag from hand to hand or take turns shaking it - it's a good idea to wear gloves to keep your hands warm!

200g strawberries (as red as you can get), hulled
1 large mango , deseeded and peeled
¼ lemon , juiced
3 very ripe bananas , peeled
200g condensed milk
600ml double cream
4 kiwi fruit , peeled
sprinkles or finely chopped strawberries and mango, to serve

Steps:

  • Mash or purée the strawberries and mango in two separate bowls. In another bowl, add the lemon juice and the banana and mash.
  • Beat the condensed milk and cream in a large bowl with an electric whisk until thick and quite stiff, a bit like clotted cream. Divide the mixture between the three bowls. Fold a fruit purée into each. Transfer each one into a freezer container and freeze until solid.
  • Purée the kiwi and sieve out any seeds if you like. Serve a scoop of each ice cream in bowls or sundae dishes and top with the kiwi sauce, sprinkles, or the chopped fruit.

This is perhaps the easiest ice cream recipe out there! It is a ton of fun to make too! I first made this in Chemistry class a couple of years ago...so it is educational as well! Feel free to mess around with this one- maybe sneak a little malted milk in the mix, or a little chocolate syrup. It's is not exactly gourmet ice cream or anything, but it's tasty!

1 cup 1% low-fat milk (Or any kind of milk, I always have 1% in the house)
2 tablespoons sugar or 2 tablespoons artificial sweetener
1 teaspoon vanilla
3 cups ice cubes
1/4 cup rock salt (Whatever kind of salt you have on hand works fine)

Steps:

  • In a quart-sized (regular) ziploc plastic bag, mix together the milk, sugar, and vanilla.
  • Seal the bag tightly, without leaving a lot of air inside.
  • (If you are a little paranoid about it leaking out, feel free to tape it up!).
  • In a gallon-sized ziploc plastic bag, mix the ice and salt.
  • Place the sealed quart-sized bag in the gallon-sized one.
  • Securely seal the gallon-sized bag without leaving very much air in the inside.
  • Shake, mush, and squish the bag for 6-10 minutes, or until the ice cream has set to a soft serve consistency.
  • Remove the inside bag (maybe even rinse off the salt) and you can either eat the ice cream right out of the bag with a spoon, or pour it into a small dish.
  • If you want the ice cream to be more firm, feel free to throw the bag into the freezer for a little while!
  • Enjoy!
