EASY IMITATION LOBSTER BISQUE



Easy Imitation Lobster Bisque image

This is a wonderful recipe for easy lobster bisque I created after our store was selling imitation lobster meat at ridiculously low prices. It has become a family favorite. Sprinkle lightly with paprika, if desired, to add color.

Number Of Ingredients 15

4 medium onions, chopped
1 ½ cups chicken broth
2 cloves garlic, minced
5 tablespoons butter
4 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
6 tablespoons tomato paste
2 teaspoons Worcestershire sauce
1 teaspoon seafood seasoning (such as Old Bay®)
1 teaspoon salt
½ teaspoon cayenne pepper
24 ounces imitation lobster meat
¾ cup white wine
1 pinch ground paprika, or to taste

Steps:

  • Cook onions and 1/2 cup chicken broth in a large pot over medium heat for 5 minutes. Add garlic and cook for 2 minutes. Reduce heat to low, add remaining chicken broth, and bring to a simmer.
  • Melt butter in a medium saucepan. Whisk in flour until a creamy mixture is created. Gradually pour roux into the broth mixture, whisking constantly. Whisk in milk, cream, tomato paste, Worcestershire sauce, seafood seasoning, salt, and cayenne pepper; cook until thickened, 3 to 5 minutes.
  • Place imitation lobster in a food processor; pulse about 6 times.
  • Add imitation lobster and wine to soup; cook over low until heated through, 5 to 7 minutes.
  • Ladle soup into serving bowls and sprinkle lightly with paprika to add color.

Perfect Lobster Bisque image

This is a decadent lobster bisque that is surprisingly easy to prepare. Your guests will be impressed and feel pampered. I serve this with salad and hot, buttered French bread.

3 tablespoons butter
¼ cup chopped fresh mushrooms
2 tablespoons chopped onion
2 tablespoons chopped celery
2 tablespoons chopped carrot
1 (14.5 ounce) can chicken broth
⅛ teaspoon salt
⅛ teaspoon cayenne pepper
1 ½ cups half-and-half
½ cup dry white wine
½ pound cooked lump lobster meat

Steps:

  • Melt the butter in a large saucepan over medium-low heat. Add the mushrooms, onion, celery, and carrot. Cook and stir until tender, about 10 minutes. Stir in the chicken broth, and season with salt and cayenne pepper. Bring to a boil, then simmer for 10 minutes.
  • Pour the vegetable and broth mixture into the container of a blender, and add 1/4 cup of the lobster meat. Cover, and process until smooth. Return to the saucepan, and stir in the half-and-half, white wine, and remaining lobster meat. Cook over low heat, stirring frequently until thickened, about 30 minutes.

Quick Lobster Bisque image

Adjust the spices to suit your individual likes. You may also substitute cream for part of the half-and-half. Chicken stock will work if you can't get lobster stock.

6 tablespoons butter
6 tablespoons all-purpose flour
½ teaspoon sea salt
½ teaspoon celery salt
¼ teaspoon ground black pepper
4 cups half-and-half
1 ½ cups lobster stock
3 cups cooked lobster meat, shredded
3 tablespoons tomato paste
3 tablespoons minced onion
3 tablespoons minced celery
1 teaspoon paprika
½ teaspoon dried thyme
½ teaspoon seafood seasoning (such as Old Bay®)
1 cup cream

Steps:

  • Melt butter in a large pot over medium heat. Stir flour, sea salt, celery salt, and black pepper into the butter. Gradually stir half-and-half into the mixture, taking care that no lumps form. Add lobster stock; stir. Reduce heat to low and simmer, stirring constantly, until the soup begins to thicken, about 15 minutes.
  • Stir lobster, tomato paste, onion, and celery into the soup; season with paprika, thyme, and seafood seasoning. Continue cooking the soup to heat the onion and celery, about 10 minutes. Add cream; stir. Cook until hot, about 5 minutes.

  • Bring large pot of water to boil. Add lobster tails to water, and boil until cooked through and bright red, approximately 5 minutes.
  • Using tongs, transfer lobsters to large bowl. Reserve 2 cups cooking liquid, saving as much loose lobster meat with the liquid as possible.
  • Cool lobster tails by running under cool water. Crack tails and remove meat using the method of your choice - see Notes.
  • Coarsely chop lobster meat, then cover and chill. Coarsely chop lobster shells and transfer to medium bowl. Reserve juices from lobster in a bowl.
