ROSé WINE CUPCAKES



Rosé Wine Cupcakes image

These pretty pink cupcakes are made with rosé wine and a raspberry filling.

1 box Betty Crocker™ Super Moist™ white cake mix
3/4 cup water
1/2 cup rosé wine
1/3 cup vegetable oil
3 egg whites
5 drops liquid red food color
3/4 cup seedless raspberry jam
6 cups powdered sugar
1/3 cup butter, softened
1/8 teaspoon salt
1/3 cup rosé wine
Fresh raspberries

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make cake batter as directed on box, using cake mix, water, 1/2 cup wine, oil, egg whites and food color. Divide batter evenly among muffin cups (about two-thirds full).
  • Bake 20 to 22 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes.
  • Fit #6 round tip in decorating bag (opening about 1/8 inch in diameter). Spoon raspberry jam into decorating bag. Insert tip in center of cupcake, about halfway down. Gently squeeze decorating bag, pulling upwards until cupcake swells slightly and filling comes to the top.
  • In large bowl, beat powdered sugar, butter and salt with electric mixer on low speed until blended. Beat in 1/3 cup wine. If frosting is too thick, beat in more wine a few drops at a time. Frost cupcakes. Garnish with raspberries.

Swiss Meringue Buttercream, plus 1/2 recipe chocolate variation
Gel-paste food color, optional
Melted chocolate
Chopped roasted salted peanuts
Maraschino cherries
Assorted candy sprinkles
12 sugar cones
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
3/4 cup milk

Steps:

  • Preheat oven to 350 degrees. Remove center of a 12-inch tube pan and cover pan with a double layer of heavy-duty foil. Use a skewer or paring knife to poke 12 small holes in the foil, 2 1/2 inches apart. Gently place a cone in each hole, pushing it down until only about 1 inch of cone is showing.
  • Make cupcakes: Sift together flour, baking powder, and salt. With an electric mixer on medium-high speed, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Beat in vanilla. Add flour mixture in three batches, alternating with two additions of milk, and beating until combined after each. Fill each cone with 2 to 3 tablespoons batter. Bake, rotating pan halfway through, until a cake tester inserted in centers comes out clean, 18 to 20 minutes. Transfer pan to a wire rack to cool completely.
  • Decorate cupcakes: Tint some of the buttercream pink with gel-paste food color, if desired. Use an ice cream scoop to place buttercream (untinted or pink) on top of cupcake, then top with sprinkles. For "soft-serve" cones, use a pastry bag fitted with only a coupler (or a large plain tip) to pipe buttercream in a swirl over cone, then top with multicolored sprinkles; or, for "sundae" cones, drizzle melted chocolate over buttercream, then sprinkle with peanuts and top with a cherry. For soft-serve "twist" cones, fill a pastry bag fitted with an open-star tip (Ateco No. 828) with untinted and chocolate buttercreams, placing them side by side in bag; pipe two-tone swirls. Serve immediately.

15 ounce cake mix, vanilla
1 egg
½ cup butter
½ cup buttermilk
½ cup rosé wine
1 cup butter
1/4 cup vegetable shortening (optional)
4 cups confectioners sugar (also known as powdered sugar)
1/4 cup heavy cream
1/8 tsp salt
2 tsp vanilla extract
¼ cup rosé wine
2 drops pink food coloring

Steps:

  • Preheat oven to 400 degrees.
  • Line a cupcake pan with cupcake liners and set aside.
  • In a bowl (stand mixer or batter bowl with hand mixer), whip up the butter and egg until fluffy (around 3 minutes).
  • In 3 additions add the cake mix, buttermilk and rosé (beginning and ending with the cake mix).
  • Divide the batter between the cupcake liners.
  • Bake for 16 minutes or until done.
  • Remove from oven and place on a cooling rack to cool completely.
  • In a large bowl whip the butter, vegetable shortening and salt until light and fluffy, around 7 minutes.

  • Repeat the process, alternating between sugar and cream and whip up for 3 more minutes until it's light and airy.

The cupcake itself is more of a chiffon style than a regular sponge & dries out quickly so don't freeze them or store longer than 48 hours.

1 cup cake flour
2 tablespoons cake flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons milk
1/4 cup sunflower oil
3 egg yolks
1 teaspoon rose water
1 teaspoon lemon zest
4 egg whites
1 pinch cream of tartar
1 tablespoon sugar
3/4 cup pistachios
4 egg whites
3/4 cup sugar
1 tablespoon sugar
1 cup butter, at room temperature cut into small pieces
1 1/2 teaspoons rose water
1 -2 drop pink food coloring
16 -24 dried rosebuds or 16 -24 paper tea roses
2 tablespoons finely chopped pistachios

Steps:

  • Make the cupcakes:.
  • Heat oven to 325°F Line cupcake or mini muffin pans with papers.
  • In the bowl of a standing mixer fitted with the paddle attachment or in a large bowl and using a handheld whisk, blend the flour, baking powder & salt. Make a well in the center of the dry ingredients.
  • If using a stand mixer, add the milk, sunflower oil, egg yolks, rose water and lemon zest, & beat on low speed for one minute. (If using hand mixer, whisk together the wet ingredients in a separate bowl. ).
  • Make a well in the flour mixture, add the egg mixture, and, using a spatula, stir the mixture for 30 seconds to fully combine all the ingredients. This mixture will be thick.
  • In a clean metal bowl, beat the egg whites on medium speed until they hold soft peaks. Add the cream of tartar and sugar and beat on high speed just until the whites hold stiff peaks.
  • Add 1/3 of the flour mixture to the beaten whites and fold well to combine. Add the whites and pistachios to the bowl with the flour mixture and fold well to combine, making sure that there are no streaks left.
  • Fill each cup of the muffin pan ¾ full with batter. Bake the cupcakes until they spring back to the touch and a toothpick comes out clean, about 10 minutes for minis muffins and about 15 minutes for regular cupcakes.
  • Make the frosting:.
  • Set the bowl of a stand mixer over a pan of simmering water. Add the egg whites and sugar to the bowl. Whisk the mixture until the sugar has dissolved, the whites are starting to thicken and turn white, and the temperature is about 110°F (You don't need to be exact - just whisk for about 2 - 2 ½ minutes and you should be fine.).
  • Attach the bowl to the mixer. Using the whisk attachment, beat the mixture on high speed until the whites are completely cool - this will take about 8 minutes.
  • (You can do this step and the next using a handheld mixer, but it will take a littke longer & be more tiring!)
  • Once the whites are cool, add the butter one piece at a time, completely incorporating each piece before adding the next.
  • When you have added almost all of the butter, the mixture will start to separate and appear curdled, but don't worry - just keep beating and add the rest of the butter, and it will come together. I promise. Continue beating until the frosting is smooth and silky.
  • Add the rose water and 1 drop of the food coloring. Beat well to incorporate. The frosting should be a very pale rose pink color.
  • Assemble the cupcakes:.
  • When the cupcakes are completely cool, frost each one using a large angled star tip - to make the frosting look like a rose. If you dont have one, spoon some frosting on to the cupcake & swirl caredully with a fork.
  • Decorate each cupcake with a dried rosebud or paper tea rose and sprinkle a little bit of the reserved crushed pistachios around the rosebud.

COFFEE COOKIE BUTTER CONES

2 cups semisweet chocolate chips
1/4 cup refined coconut oil
1/2 gallon coffee ice cream
6 sugar cones
1/2 cup cookie butter
1/2 cup speculoos cookies, crushed
Assorted sprinkles, for decorating

Steps:

  • Melt the chocolate and coconut oil together in a double boiler. Meanwhile, remove the ice cream from the freezer to soften, about 10 minutes. Transfer the chocolate mixture to a bowl to cool to room temperature (it will not firm up until it's on the ice cream).
  • Set each cone upright in a mason jar filled with sprinkles or sugar (this will help the cone stand up). Drizzle a teaspoon of chocolate in each cone. Using a small offset spatula or spoon, spread some cookie butter on the insides of the cones. Using a small offset spatula or spoon, fill the cones with ice cream to the top of the cone. Add a teaspoon of cookie butter. Add a scoop of ice cream on top and place in the freezer for 1 hour.
  • Place the cookies and sprinkles each in a shallow bowl. Dip the ice cream into the chocolate mixture, using a spoon to coat if needed. Immediately roll the cones in the sprinkles or cookies to coat. Place back in the jars and return to the freezer to set, 15 minutes. Serve immediately or wrap in plastic wrap to store.

14 flat-bottom wafer ice-cream cones
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup plus 2 tablespoons milk
5 ounces unsweetened chocolate, chopped
12 tablespoons (1 1/2 sticks) unsalted butter
1 1/2 cups plus 2 tablespoons sugar
1 large egg, lightly beaten
1 1/2 teaspoons pure vanilla extract
1/2 cup heavy cream

Steps:

  • Heat oven to 350 degrees. Stand cones on an ungreased baking sheet. In a mixing bowl, whisk together flour, baking soda, and salt; set dry ingredients aside.
  • Fill a medium saucepan with water and set over medium heat; bring water to a boil. Reduce heat, and let water simmer. In the metal bowl of an electric mixer, combine milk, 2 1/2 ounces chocolate, and 1 stick butter. Set bowl over simmering water, stirring occasionally, until butter and chocolate have melted. Remove bowl from heat; stir in 1 cup sugar.
  • Transfer bowl to mixer fitted with the paddle attachment. Add reserved dry ingredients, and beat until well combined. Add egg and 1 teaspoon vanilla; beat to combine. Pour batter into cones, filling each cone three-quarters full.
  • Transfer baking sheet to oven, and bake until domes form and a cake tester inserted into the center of a cupcake comes out clean, 20 to 25 minutes. Remove from oven, and transfer to a wire rack to cool completely.
  • Meanwhile, make the icing: Combine remaining 1/2 cup plus 2 tablespoons sugar and cream in a heavy saucepan. Set over high heat, and bring to a boil, stirring constantly. Reduce heat to medium; simmer, without stirring, 5 minutes. Remove pan from heat; add remaining 2 1/2 ounces chocolate, stirring until melted. Stir in remaining 4 tablespoons butter and 1/2 teaspoon vanilla. Chill, stirring occasionally, until icing is cool enough to spread. Using an offset spatula, spread icing over cupcake tops. Serve.

150ml pot natural yogurt
3 eggs , beaten
1 tsp vanilla extract
175g golden caster sugar
140g self-raising flour
1 tsp baking powder
100g ground almond
175g unsalted butter , melted
100g white chocolate
140g unsalted butter
140g icing sugar

Steps:

  • Line a 12-hole muffin tin with paper cases and heat oven to 190C/fan 170C/gas 5. In a jug, mix the yogurt, eggs and vanilla extract. Put the dry ingredients, plus a pinch of salt, into a large bowl and make a well in the middle.
  • Add the yogurty mix and melted butter, and quickly fold in with a spatula or metal spoon - don't overwork it. Spoon into the cases (they will be quite full) and bake for 18-20 mins or until golden, risen and springy to the touch. Cool for a few mins, then lift the cakes onto a wire rack to cool completely. Keep in an airtight container for up to 3 days or freeze as soon as possible.
  • White chocolate frosting: Melt the chocolate in the microwave on High for 1½ mins, stirring halfway. Leave to cool. Beat the butter and icing sugar in a large bowl until creamy. Beat in the chocolate. Cover and chill for up to one month.
  • Up to 48 hrs before serving (or the day before if it's really hot), bring the frosting back to room temperature, then spread over the cakes. Put the ribbon around the cakes now if you like, tying or glueing in place. Keep cool, out of direct sunlight.
