Runner beans, chorizo & almonds image

Growing runner beans in the garden? Enjoy them at their very best in the late summer in this stunning light lunch or starter with chorizo, eggs and almonds

320g runner beans, halved
50ml olive oil
1 tbsp sherry vinegar
3 anchovies, finely chopped
¼ large chorizo ring, sliced
4 large eggs
pinch of smoked paprika
30g flaked almonds, toasted
¼ bunch of parsley, finely chopped

Steps:

  • Cook the beans in a pan of boiling salted water for 3-4 mins or until tender. Drain and set aside.
  • Whisk the olive oil, vinegar and anchovies together until smooth. Season with black pepper and toss with the warm beans.
  • Heat a dry frying pan over a medium heat and fry the chorizo for 2-3 mins until golden brown. Cook the eggs in a pan of simmering water for 6 mins 30 seconds. Drain, then rinse under cold running water to cool. Peel and halve.
  • Spoon the beans onto plates and top with the chorizo and eggs. Sprinkle with the paprika, almonds and parsley, then serve.

1 1/2 pounds (750g) runner beans, sliced diagonally into 2-inch pieces
2 cloves garlic, finely chopped
A few good lugs (ounces) extra virgin olive oil
1 (28 pound) can chopped tomatoes
Salt and freshly ground black pepper

Steps:

  • Steam the beans in a foil covered colander over your potatoes or blanch in salted boiling water until tender.
  • Whilst the beans are cooking, make a quick tomato sauce by frying the garlic gently in some olive oil. Add the tomatoes and bring to the boil.
  • Add a little salt and pepper and simmer for about 15 minutes until you have a thick tomato sauce. Season, to taste.
  • Stir the beans into the sauce until they are all covered

1 tablespoon (1 turn around the pan) extra-virgin olive oil
1 tablespoon butter
Salt
Toasted slivered or sliced almonds, for garnish

Steps:

  • Cook green beans 5 minutes in 1-inch boiling water, covered. Drain beans and return pan to heat.
  • Add oil and butter pat to the pan. Toss beans in oil and melted butter. Season beans with a little salt and transfer to a serving plate.
  • Garnish green beans with toasted slivered or sliced almonds.
