Salt and Vinegar Potato Galette image

2 tablespoons unsalted butter
1 large onion, thinly sliced
Kosher salt
Neutral oil, for frying
2 medium potatoes (about 1 pound), thinly sliced (1/8 inch thick)
2 tablespoons chopped chives
3 tablespoons white vinegar
Freshly ground black pepper
8 ounces your favorite pie dough
1 large egg
1/2 cup shredded Parmesan
Flaky salt, for topping

Steps:

  • In a large skillet, melt the butter over medium heat. Add the onions and a pinch of salt and cook, stirring occasionally, until caramelized, about 25 minutes.
  • Meanwhile, preheat the oven to 375 degrees F.
  • Heat 1 1/2 inches of oil in a large cast-iron skillet over medium heat until shimmering. Working in batches, fry the potatoes, flipping once, until just tender and beginning to brown around the edges, 3 to 5 minutes. Remove the potatoes to a baking sheet lined with paper towels to drain, then remove the paper towel. Sprinkle the potatoes with the chives, 2 tablespoons of the vinegar and salt and pepper to taste. Toss gently to combine.
  • Roll your pie dough out into a 13-inch circle and place it on a baking sheet lined with parchment. Whisk the egg with a splash of water in a small bowl and brush it onto the dough, leaving a 2-inch perimeter. In the center of the dough, layer up the toppings in this order: half the onions, half the Parmesan cheese and then half of the potatoes, in a fanned even layer. Top with the remaining onions, remaining cheese, the other half of the potatoes and any additional chives or black pepper from the bottom of the pan. Brush the edges of the crust with egg and then fold them up around the potatoes. Brush the outside edges with egg and sprinkle with flaky salt.
  • Bake until the pie crust edges are golden brown, about 25 minutes. Sprinkle the top of the galette with the remaining tablespoon of vinegar before serving.

2 thyme sprigs
2 oven-ready quail , strings removed
olive oil , for rubbing and drizzling
small drizzle clear honey
4 quail eggs
3 leeks , trimmed and halved lengthways
8 salad potatoes , like Pink Fir Apple or Charlotte, sliced
2 tsp wholegrain mustard
1 tbsp cider vinegar
3 tbsp walnut oil

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put a thyme sprig in the cavity of each quail. Rub each bird with a little oil and honey, and season generously. Put the quail in a shallow roasting tin and roast for 20 mins until golden, then leave to rest in a warm place.
  • While the quail are roasting, bring a large pan of salted water to the boil. Cook the eggs for 2 mins exactly, then scoop out into a bowl of cold water. Peel and set aside. Put the leeks in the boiling water and cook for 10 mins until soft. Scoop them out, put in a bowl and drizzle with olive oil while still hot. Boil the potatoes in the same pan for 8-10 mins until just cooked, then drain and add to the leeks.
  • To make the dressing, whisk the mustard and vinegar together, then gradually add the oil to make a thick dressing and season. Halve the eggs and carve the quail (see step-by-step images).
  • To serve, arrange a tangled nest of leeks, potatoes and quail breasts in the centre of each plate. Tuck in the eggs and top with the quail legs. Drizzle the dressing over and dot around the outside of the plate.

4 teaspoons salt
2 teaspoons szechuan peppercorns, crushed
1 teaspoon Chinese five spice powder
4 quail
1 teaspoon salt and pepper, mix (see above)
1 teaspoon sugar
1 tablespoon light soy sauce
1 tablespoon rice wine
2 -3 tablespoons plain flour (all purpose)
oil (for deep frying)
lemon wedge, to serve

Steps:

  • To make the spicy salt and pepper, combine the ingredients and dry fry over a low heat for 2-3 minutes or until aromatic.
  • Split each quail in half down the middle and clean well.
  • Marinate with the teaspoon of spicy salt and pepper, sugar, soy and rice wine for 2-3 hours, turning frequently.
  • Coat each quail piece in flour, dustin off the excess.
  • Fill a wok to 1/4 full with oil and heat the oil to 190c.
  • Fry the quail for 2-3 minutes each side then remove from the wok and drain on kitchen paper.
  • Serve with the lemon wedges on the side.

The following recipe calls for semiboneless quail. This means that the rib cage and backbone have been removed, but the wings and legs are left intact.

Number Of Ingredients 13

4 semi-boneless quail*
4 teaspoons Worcestershire sauce
2 tablespoons plus 1 teaspoon olive oil
1/4 teaspoon dried thyme, crumbled
1 cup all-purpose flour
2 tablespoons paprika
1 tablespoon unsalted butter
4 fresh large shiitake mushrooms, stems discarded and caps sliced thin
1 small garlic clove, minced
1 cup chicken broth
1/4 cup Tawny Port
1/4 teaspoon balsamic vinegar
*available at butcher shops and some supermarkets

Steps:

  • Sprinkle each quail with 1/2 teaspoon Worcestershire sauce, 1 teaspoon oil, thyme, and salt and pepper to taste and rub gently into cavity and skin. In a resealable plastic bag set in a shallow pan marinate quail, chilled, at least 4 hours or overnight.
  • Preheat oven to 300°F. Line a plate with wax paper.
  • Pat quail dry inside and out and in a shallow dish combine flour, paprika, and salt and pepper to taste. Dredge quail in mixture, 1 at a time, shaking off excess, and transfer to prepared plate.
  • Heat a large heavy skillet (preferably cast iron) over moderately high heat until hot and add remaining 1 tablespoon oil and butter. Heat fat until foam begins to subside and sauté quail until golden brown and cooked through, about 3 to 5 minutes on each side. Transfer quail to a shallow baking pan and keep warm in oven.
  • In fat remaining in skillet sauté mushrooms with garlic, stirring, until liquid mushrooms give off is evaporated and add broth, Port, and remaining 2 teaspoons Worcestershire sauce. Simmer sauce until thickened and reduced to about 3/4 cup, about 15 minutes, and stir in vinegar and salt and pepper to taste.
  • On a cutting board halve quail and stir any quail juices from pan and board into sauce.
