CHIPOTLE BLENDER SALSA

Steps:
- Pulse the onion and garlic a few times in a food processor or blender.
- Add remaining ingredients and continue pulsing until you've reached your desired texture.
- Adjust seasoning, if necessary.
- Transfer salsa to mason jars, or container of choice, and store in the refrigerator for up to one week.
SWEET AND SPICY CHICKEN THIGHS
These sweet and spicy chicken thighs combine the flavors of honey and chipotle for the spicy heat that you crave. Serve them whole or shred the chicken from the bone for sandwiches or tacos.

- Preheat oven to 400℉.
- Heat oil in skillet on medium heat. Salt and pepper each piece of chicken, as desired.
- Once oil is heated, add chicken pieces. Sear each side until golden, about 3-4 minutes each side. Remove to plate.
- While chicken is cooking, add all remaining ingredients to a small bowl and whisk together. Pour mixture into same skillet. Heat through, about 2 minutes.
- With tongs, pick up one of the chicken thighs and place it in the sauce skin side down to coat then turn it over with skin side up and leave it in the skillet. Repeat for the remaining pieces of chicken.
- Place entire skillet with chicken (uncovered) in oven and cook until the inside of the chicken reaches 165℉, about 30-45 minutes, depending on the size of the thighs. About halfway, spoon sauce over the top to keep them from getting dry.
- Allow to cool 10 minutes before serving. Cover with as much sauce as desired and serve with a little bowl of sauce, if desired.

CHIPOTLE SALSA

- Combine all ingredients in a small pot and place over medium heat. Stir frequently until the tomatoes begin to release their liquid. Simmer until tomatoes are broken down and very soft. This happens quickly.
- You can serve it warm (nice!) or refrigerate first. Keep refrigerated for 10 days.
HOMEMADE CHIPOTLE MAYONNAISE
Steps:
- Crack one egg in na wide mouth Mason jar.
- Carefully add the remaining ingredients to the jar.
- Insert the immersion blender and place the blade at the bottom of the jar.
- Turn on the blender and keep the blade at the bottom of the jar for at least five seconds. Then slowly move the blender up until emulsion forms. Finally move it up and down until the rest of the oil incorporates.
- Store in a sealed container or closed jar for no more than a week.
CHIPOTLE SAUCE
This a smoky cream sauce that tastes great. Add a few tablespoons to any kind of burrito with rice and beans in it, or to a steak or chicken bowl. Very quick and easy to make and tastes great!

- Cover bottom of a 10- to 12-inch grill pan or heavy frying pan with foil and set over high heat. When hot, set tomatoes, onions, and garlic on foil. Turn occasionally until browned in spots all over, 5 to 6 minutes for garlic, 9 to 12 minutes for onions and tomatoes; remove each as done. Add dried chiles (omit this step if using canned chiles) to pan and turn often just until slightly softened and darkened in spots, 1 to 2 minutes. Let cool.
