SAUCY MAPLE APPLE PORK CHOPS

Saucy Maple Apple Pork Chops image

These Saucy Maple Apple Pork Chops are amazingly tender, hugely flavorful, and the perfect autumn dinner. Easy enough for weeknights; delicious enough for weekends.

Provided by Chew Out Loud

Categories     Dinner     Main

Time 25m

Number Of Ingredients 12

4 center cut pork chops (at least 1-inch thick (boneless or bone-in))
2 teaspoons chili powder
1 tsp paprika
1 tsp onion powder
1 teaspoon kosher salt
3 tablespoons apple cider vinegar
1 apple (any variety, peeled and thinly sliced)
1/2 cup regular strength chicken broth
1/2 cup pure maple syrup
2 tsp coarse ground mustard (with seeds)
3 tablespoons olive oil (divided)
Garnish with freshly chopped parsley (if desired)

Steps:

  • Use paper towels to dry excess moisture from pork chops. In a small bowl, whisk together the chili powder, paprika, onion powder, and salt. Press seasoning evenly over both sides of the pork chops. Set aside.
  • In a saucepan set over medium-high heat, add the apple cider vinegar and reduce it by half. Stir in apples, chicken broth, maple syrup, and mustard. Bring to a boil and continue boiling (uncovered) until reduced, 6 minutes. Turn heat off. Add 1/4 tsp table salt, or to taste. Keep warm.
  • In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and cook until browned, about 2 minutes per side (cook in 2 batches if needed; don't crowd pan.) Reduce the heat to medium-low, with lid on but slightly ajar to allow steam to escape. Cook 2-3 more minutes or just until center is cooked; do not over cook.
  • Transfer to a serving platter and serve with the maple apple sauce. Garnish with parsley, if desired.

Baked Pork Chops With Apples & Spiced Maple Sauce image

When I saw the ingredients I knew right away I had to try an apple and pork combination. So I tested out my recipe and got the approval of my family and so I decided to enter. This is a very simple recipe that cooks quickly. It is great with stuffing and a green veggie of your choice.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 16

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
1/4 teaspoon paprika
4 boneless pork loin chops (1-inch thick)
5 cups apples (cored and sliced, peel on if preferred)
1 cup red onion (sliced)
1/2 cup chicken broth
1/2 cup maple syrup
2 tablespoons lemon juice (fresh squeezed)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/8 teaspoon clove
1 tablespoon brown sugar

Steps:

  • Mix all ingredients in spice rub together and sprinkle over chops top and bottom.
  • Preheat oven to 350 degrees Fahrenheit.
  • Spray an oven proof, non-stick skillet with lid with cooking spray.
  • Brown chops 3 minutes per side on medium high heat, uncovered. Remove from skillet and set aside.
  • Add apples and onions to skillet and cook for 2 to 3 minutes or until they start to brown.
  • Place chops over apple/onion mixture.
  • Pour in chicken broth, cover and cook about 20 minutes. The pork chops should reach 150 degrees Fahrenheit.
  • Take the chops out of the oven and let stand for 10 minutes to completely cook the chops and not dry them out.
  • After taking chops out of oven combine spiced maple sauce ingredients in a small sauce pan.
  • Bring to a boil, stirring constantly, until mixture reduces to desired consistency. We like ours thin, so we only cooked about two minutes.
  • Pour sauce over chops and apples. Enjoy.

8 cups chicken stock
6 ounces frozen concentrated Granny Smith apple juice

2 tablespoons ancho chile powder
1/2 cup ancho chile powder
1/2 cup pasilla chile powder
1/2 cup chopped garlic
1 center cut pork loin (9 bones)
2 tablespoons unsalted butter
1/2 cup coarsely chopped red onion
1 tablespoon minced jalapeno

2 medium oranges, zest removed and finely sliced, flesh cut into segments
2 cups fresh orange juice
1/2 cup red wine vinegar

2 tablespoons honey
6 medium Granny Smith apples, peeled, cored, halved and thinly sliced
2 tablespoons chopped cilantro
2 tablespoons finely diced red pepper

  • Preheat oven to 400 degrees F. In a small bowl, combine the chile powders and garlic.
  • Season the pork loin to taste with salt and pepper and rub all surfaces with the chile mixture. In a large roasting pan, roast the loin until medium rare, about 40 minutes.
  • When cool enough to handle, cut between the bones into 8 chops. In a heavy ridged grill pan, sear the chops 3 minutes on each side until grill marked. Place on a serving platter and brush with maple glaze. Serve with sauce and chutney on the side.
  • In a large saucepan over medium heat, melt the butter and saute the onion and jalapeno until the onion is translucent.
  • Add the ginger, orange zest, orange juice, vinegar, brown sugar and honey and cook until the sauce is reduced by half and has a glazed appearance. Reduce the heat to low, add two thirds of the apple slices, and cook until the fruit is just tender.
  • Turn off the heat and gently fold in the remaining apples and the orange segments. Pour the chutney into a bowl and allow to cool to room temperature.
  • Mix in the cilantro, red bell pepper and salt and pepper to taste.

Provided by Food Network Kitchen

Categories     main-dish

Yield 4 servings

Number Of Ingredients 13

1/2 cup olive oil
1/2 cup Calvados brandy
2 tablespoons fresh thyme, chopped
2 bay leaves
Salt and pepper, to taste
4 double-cut pork loin chops, 1 1/2 to 2 inches thick (bone in)
2 tablespoons butter
2 tablespoons olive oil
1 bunch fresh flat-leaf parsley, chopped
1 bunch fresh thyme, chopped
4 Granny Smith apples, peeled, cored and sliced
1 cup brown sauce, prepared or chicken broth
1/4 cup cider vinegar

Steps:

  • In a shallow pan, pour marinade over pork chops and marinate for 1 hour.
  • Remove the meat from the marinade and drain off the excess. In a skillet over high heat, pan-sear the pork chops on both sides in butter and oil to seal in juices. Sprinkle with a handful of fresh chopped parsley and thyme; season with salt and pepper. They should be well browned on the outside and pink in the center. Transfer the pork chops to a roasting pan, place in a single layer and set aside.
  • In the same skillet, saute apples in a bit more butter and oil, add more parsley and thyme. Deglaze the pan with brandy. Pour in brown sauce and cider vinegar to create a pan sauce. Spoon the apple sauce over the pork chops. Sprinkle with more chopped herbs and salt and pepper.
  • Roast in a preheated 325 degree oven for 15 to 20 minutes. A meat thermometer inserted into the pork should read 155 degrees F.
