BEEF AND ASPARAGUS WITH OYSTER SAUCE
Steps:
- Slice 1/2 pound steak across the grain into strips. Marinate for 1/2 hour in 2 Tablespoons soy sauce, 1 teaspoon peanut oil and 1 teaspoon cornstarch. In wok, heat 2 Tablespoons peanut oil. Add ginger and garlic. saute until brown. Remove and discard ginger and garlic. Stir-fry meat for about 2 minutes. Add asparagus, mushrooms and onions. Stir-fry until asparagus turns bright jade green. Stir sauce ingredients together until well blended. Pour over vegetable-meat mixture. Reduce heat. Cook 1 to 2 minutes until sauce is thickened. Steps:
- Season the steaks on all sides with the salt and pepper.
- Heat oil in a pan or a skillet over high heat until smoking.
- Sear the steaks for about a minute to a minute and a half on each side, depending on the thickness of your steak for medium-rare. If you would like your steak rarer or more well-done, cook your steak shorter or longer accordingly.
- In the same pan, cook the asparagus with salt and pepper until tender but still slightly crunchy. Remove from heat.
- After the steaks have rested for about 5 minutes, slice, then serve with the asparagus!
- Enjoy!

- Heat a large wok or skillet over high heat. Add 1 tablespoon oil, swirl to coat, and add steak. Season with salt and sear, stirring occasionally, until golden brown, about 3 minutes. Transfer to a plate.
- Add remaining tablespoon oil to wok and swirl to coat. Add ginger, chiles, and scallion whites and cook, stirring, 30 seconds. Add asparagus and cook until crisp-tender, about 2 minutes. Return steak to wok, along with scallion greens. Toss to combine and heat through. Remove from heat and season with salt. Serve over rice with lime wedges for squeezing and peanuts.

Steps:
- Snap off tough ends of asparagus.
- Cook asparagus in boiling water for 2 minutes or until crisp-tender.
- Drain well and chill.
- Combine soy sauce and next 4 ingredients (soy sauce through garlic), reserving 1/3 cup soy sauce mixture.
- Set aside.
- Place remaining soy sauce mixture, asparagus, and steak in a zip-top plastic bag; seal.
- Marinate in regrigerature 1 hour, turning occasionally.
- Remove asparagus and steak from bag, and discard mixture.
- Place a grill pan (10-inch heavy non-stick skillet) over medium-high heat.
- Add asparagus and steak and cook steak 3 minutes on each side or until desired degree of doneness, turning asparagus as needed.
- Place steak on a platter, and cover with foil.
- Let stand for 5 minutes.
- Cut steak diagonally across grain into thin slices.
- Combine 1/3 cup reserved soy sauce mixture, spinach, rice, celery, oil, and onions, toss to coat.
- Divide asparagus, steak, and wild-rice pilaf evenly among 4 plates.
GRILLED FLANK STEAK WITH GORGONZOLA CREAM SAUCE AND ASPARAGUS

- Melt 1 tablespoon butter in a medium saucepan over medium heat. Add the shallot and cook until tender, about 1 minute. Add the heavy cream and simmer until reduced by half. Whisk in the gorgonzola until it melts. Season with salt and pepper and keep warm.
- Heat a grill pan over medium heat. Brush the steak lightly with 1 tablespoon olive oil and season liberally with salt and pepper. Grill the steak, 4 to 5 minutes per side for medium-rare, turning once. Remove from the heat and cover with foil. Let the steak rest for 5 minutes before slicing.
- Meanwhile, combine the sugar, paprika and onion powder in a small bowl. Reserve 4 teaspoons and store the rest in an airtight container. (Seasoning will keep in the pantry for up to 6 months.) Mix the stick of softened butter with 3 teaspoons of the seasoning in a small bowl; cover and refrigerate.
- Toss the asparagus with the remaining 1 teaspoon barbecue seasoning mix and 1 tablespoon olive oil; add salt and pepper to taste. Cook the asparagus in a grill pan over medium heat until tender, turning once, about 6 minutes total. Reserve 4 stalks for another use.
- Reserve a quarter of the steak for another use; cut the rest into 1/8-inch-thick slices. Top with the gorgonzola cream sauce, reserving about 1/2 cup for another use, and serve with the asparagus and some barbecue butter.

- Mix together Marinade ingredients in a bowl and add steak slices. Mix Stir-Fry Sauce ingredients together in a small bowl and have Stir-Fry Ingredients ready on a plate or cutting board.
- Heat oil in a wok or large skillet. Remove a spoonful of oil and add to marinated beef; toss to loosen up meat. Add beef to wok and spread in a single layer; let brown then flip to brown other side (do not overcook - you want it to be rare inside at this point). Remove beef from wok using a slotted spoon.
- Stir-fry ginger, white parts of scallion and asparagus in remaining oil until asparagus is crisp tender, about 2-3 minutes. Add Stir-Fry Sauce and beef; toss everything together and stir-fry another minute or two. Remove to serving bowl and sprinkle with toasted sesame seeds, if desired.
