SEA SHELL CRAB CASSEROLE

- Cook pasta according to package directions. Meanwhile, in a large skillet, saute the onion, green pepper and celery in butter until tender. , In a large bowl, combine milk and mayonnaise until blended. Stir in the salt, mustard, paprika and Worcestershire sauce. Drain pasta; add the pasta, olives, crab and vegetables to milk mixture., Transfer to a greased shallow 2-qt. baking dish. Cover and bake at 350° for 25 minutes. Uncover; bake 5-10 minutes longer or until heated through.

SEASHELL CASSEROLE
This is a dish my mom made alot when we were growing up. I recently started making it for my husband and he LOVES it; even my 18-month old daughter cleans her plate when I make it.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Spray a large casserole dish with cooking spray.
- (I have a 4 quart casserole dish I use for this.) In a large skillet, brown together ground beef and onion; drain grease and return to pan.
- Add tomato sauce, mushroom soup, 1/2 cup of the cheese, salt, pepper, and garlic.
- Simmer uncovered.
- While meat mixture is simmering, cook the pasta according to package directions.
- Combine the pasta and the meat mixture together in the casserole dish; mix well.
- Sprinkle remaining cheese on top.
- Bake for 20 minutes or until cheese is bubbly.
CHOCOLATE SEASHELLS WITH WHITE COFFEE ICE CREAM PEARLS
Steps:
- At least 1 day before serving, start the ice cream: Heat the coffee beans, half-and-half, heavy cream, and vanilla bean in a saucepan over medium heat just to a boil, stirring occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. Turn off the heat and let cool. Cover and refrigerate overnight to infuse the coffee flavor.
- The next day, whisk the egg yolks and sugar together in a bowl. Strain the vanilla and coffee beans out of the cream mixture and re-warm it in a heavy saucepan. When the cream mixture reaches a fast simmer (do not let it boil), turn off the heat. In a thin stream, whisk half of the cream mixture into the egg yolk mixture, then pour in the remaining half and whisk well.
- Pour the mixture back into the saucepan. Cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees F, the mixture will give off a puff of steam. When the mixture reaches 180 degrees it will be thickened and creamy, like eggnog. Test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough yet. When it is ready, quickly remove it from the heat.
- Pour the cream mixture through a fine sieve into a bowl. Rest the bottom of the bowl in the ice bath. Let the mixture cool for 2 hours, stirring occasionally. Then freeze according to the directions of your ice cream machine.
- Chocolate Shells: Cut pieces of aluminum foil large enough to more than cover the back side of each clam shell. Cover the back (outside) of each shell with foil, folding it over the rim to hook it tightly to the shell. Press the foil against the surface, rubbing to smooth it so that it acts as a skin for the shell. Arrange the wrapped shells on a pan, with the wrapped sides facing up. Melt the chocolate. Spoon 1 to 2 tablespoons of chocolate onto the wrapped side of one shell, spreading it with the back of the spoon to cover the shell all the way to the edge. As needed, add more chocolate until the entire back of the shell is well coated with chocolate. Repeat with the remaining shells and chocolate. Refrigerate until set, about 20 to 30 minutes.
- Once the chocolate is set, carefully unhook the foil from all around the rim of the shell. Lift the real shell out of the foil, leaving you with the chocolate-covered foil cups. Place the shells back in the refrigerator for 15 minutes to re-harden. Taking the shells out of the refrigerator one at a time, carefully peel the foil back to reveal the chocolate shell. Repeat with the remaining shells. Store in an airtight container until ready to serve. (The shells can be made up to 1 week in advance.) To serve, pour raw sugar on a platter to look like sand. Place a scoop of ice cream in each clam shell and rest it on the sand. Serve immediately.
BAKED SHELLS

- Bring a large pot of water to a boil over medium heat. Salt the water, add the shells and cook for 2 to 3 minutes less than the package directions. Heads up: Remove and reserve 1 cup of cooking water just before draining.
- Meanwhile, heat a medium-sized pot or high-sided skillet over medium heat with the extra-virgin olive oil. Add the onions and garlic and saute for 3 to 4 minutes. Stir in the spinach, pulling it apart as you add it, and season with a little freshly grated nutmeg and salt, and pepper, to taste. When the spinach mixture is warmed through, transfer it to a small dish and reserve. Return the pot to the heat, add the butter and let it melt. Stir in the tomatoes and break them up with a spoon. Season with salt and pepper, to taste, add the basil leaves, and cook to thicken the sauce, about 7 to 8 minutes.
- Preheat the oven to 400 degrees F.
- Drain the pasta and return it to the hot pot. To the pasta, add the spinach, reserved pasta cooking water, ricotta cheese, and half of the Parmigiano-Reggiano. Adjust the salt and pepper, to taste, and transfer it to a baking dish. Top the pasta mixture with the tomato sauce, mozzarella, and remaining Parmigiano. Bake until the cheeses are melted and bubbly, 6 to 8 minutes. Remove the shells from the oven and serve.
ITALIAN SHELLS CASSEROLE
This is another recipe I ran across early in our marriage 30 short yrs ago. (I bought a little blank, hardbound book to write special recipes in). DH loves it. Falls into the comfort food category. Cheesy and mmm, mmm good. Add a salad, and dinner is complete!

Steps:
- Cook shells and drain (while waiting, go on to next steps).
- Brown ground beef and drain. Add salt, pepper, and marinara sauce. Simmer 20 minutes.
- In deep pan, line bottom with 1/2 of the shells. Cover with half of the meat sauce. Spread half of the sour cream lightly over and then sprinkle with half of both the cheeses. Repeat.
- Cover and bake at 350°F for 40 minutes.
- Uncover and bake 20 minutes more.
CHRISTMAS SEAFOOD CASSEROLE
This is passed down to me from my aunt. Serve with tossed salad if desired.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Melt 3 tablespoons butter in a skillet, and saute the onions and celery until tender.
- Heat the milk in a saucepan over medium heat, and mix in the flour and 1 1/2 teaspoons butter until well blended. Gradually blend the cheese into the mixture. Season with salt and pepper.
- In a medium bowl, mix the onions and celery with the cheese sauce mixture. Toss in the crabmeat, lobster, shrimp, and scallops. Transfer to the prepared baking dish.
- Bake uncovered in the preheated oven 25 minutes, or until the seafood is opaque and the surface is lightly browned.
