SIMPLE LONDON TWO-TIERED CHEESECAKE RECIPE BY TASTY

Steps:
- Preheat the oven to 180°F. Then, to prepare the cheesecake base: Beat cookies into crumbs and place into a greaseproof lined cake tin.
- Pour in 70g (½ cup) melted butter and add in almond extract. Bake the base for 10 minutes, retrieve, and let cool.
- To prepare the cake, beat cream cheese, yogurt, flour, and sugar together till soft.
- Gradually stir in 3 large eggs and one egg yolk, keeping an eye on the consistency
- Add ½ tsp of vanilla extract to the above mixture and combine.
- Pour mixture into two tins, one medium and one small.
- Place tins into the top shelf of the oven for 45 minutes at 160 degrees°F and bake.
- Chill for half an hour in the fridge, then carefully remove both cakes from the tins and layer slowly.
- Slice and serve.

- Crack two eggs in a bowl and whisk. Now, add brown sugar whisk until the sugar dissolves completely.
- Next, add the oil and orange zest and mix thoroughly.
- In a separate bowl, sift together the dry ingredients. Then, mix these into the wet ingredients to create a thick batter.
- Add the rum gradually into the mixture and mix well. Adjust rum amount according to your taste.
- Lay a parchment paper on your baking tray, grease it, and pour the mixture into it. Bake for about 30 mins at 350°F.

- Now, apply the frosting evenly and top with the reserved half to create a sandwich, of sorts.
- Press together gently, let cool, and cut into pieces. Serve.

- Put the shortbread biscuits into a plastic bag and bash with a rolling pin until broken. Divide between two dessert glasses. Beat together the soft cheese with the zest of a lime and 2 tbsp icing sugar until smooth. Put this on top of each biscuit base and smooth out with the back of a spoon.
- Take the mixed frozen berries, defrost and blend half with 1 tbsp icing sugar and the juice of the lime. Pour this on top of each cheesecake and scatter with a few extra whole berries. Serve or sit in the fridge for a few hours before serving.
