Steps:
- Preheat oven to 350 (F). Line two large baking sheets with parchment paper; set aside.
- In a large bowl using a whisk, beat together the browned butter and both sugars until well combined, about 2 minutes. Don't worry if they look a little separated here.
- Whisk in the eggs and yolk, beating until well combined. About 45 seconds. Whisk in the vanilla.
- In a separate large bowl, whisk together the flour, baking soda, cinnamon, salt, oats, coconut, pecans, and chocolate chips.
- Fold the dry ingredients into the wet ingredients, mixing just until combined.
- Scoop 2-inch balls of cookie dough onto the prepared baking sheets, leaving 2-inches between each ball so they have room to spread.
- Bake, one sheet at a time, in preheated oven for 12 minutes, or until cookies are golden and set at the edges and still slightly soft in the center.
- Press extra chocolate chips and pecans on top of cookies when they come out of the oven (optional). Sprinkle with sea salt, if desired.
- Cool cookies on baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats and chocolate chips. Drop by rounded teaspoonfuls onto the prepared baking sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing.

SKINNY COWBOY COOKIES
Cowboy cookies is a family recipe that I've adapted. Reduced sugar, fat & eggs have reduced the calorie content. I've also used whole wheat flour & added flax seed to increase the fiber content. I make them as mini cookies so you feel like you're getting more. This makes a very small batch, 38 cookies will fit on 2 sheets.

- Preheat oven to 375 degrees F.
- Cream butter, oil & brown sugar.
- Add next ingredients, in order, stirring after each.
- Drop 1 1/2 teaspoon sized cookies onto lightly sprayed cookie sheet. This will make a ball 1 to 1 1/2 inches in diameter. Cookies spread very little when baking, so can be fairly closely spaced.
- Bake for 4-6 minutes. Cool for 2- 3 minutes, then remove from sheet.

Laura Bush's cowboy cookies, a classic chocolate chip cookie that's been beefed up with oats, pecans, coconut and cinnamon, beat Tipper Gore's ginger snaps by a mile. Here is an adaptation of that winning recipe.

- Heat oven to 350 degrees.
- Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
- In a very large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, and combine thoroughly.
- Add eggs one at a time, beating after each. Beat in vanilla.
- Stir in flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.
- For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
- Bake for 15 to 17 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.

- Set aside to cool.In the medium bowl, add the flour, oats, baking powder, salt, and whisk together.Next add the coconut, pecans, bran flakes, and chopped chocolate to the dry ingredients.Add the vanilla and 1 egg to the wet ingredients.
- Whisk it in right away.Add the honey or agave and stir.Add the dry ingredients to the wet ingredients and stir together with a wooden spoon until it's incorporated. (Don't overdo it, stop when the flour streaks are gone.) The dough is quite sticky.Cover the dough and let chill in the fridge for 30 minutes, or if you're in a rush you could do 15 minutes in the freezer.Once the dough is chilled, preheat the oven to 325 degrees F.Shape the dough into balls a little smaller than a golf ball.
- Use your hands to flatten them out a little bit. (see photos).Place them on a silpat or parchment lined baking sheet, about 2 inches apart.Bake in the preheated oven for 11-13 minutes, or until they are just getting golden on the edges.Immediately after coming out of the oven, press additional chocolate chips and peanut butter chips into the top of each cookie.Let the cookies set on the baking sheet for 5 minutes, then remove to a wire rack to cool.
