CORNISH HENS ROASTED WITH LEMON PEPPER
This little bird is neither a game bird or a hen. Game hens are commercially raised, young chickens and can be a hen or a tom. They have tender meat and look a bit fancy on the plate! So here is a quick and easy way to cook and serve them!

Steps:
- Cut each hen in half lengthwise. Sprinkle half the salt on pepper on the inside of each half. Turn. Drizzle the skin side with olive oil, then evenly sprinkle the remaining salt and pepper over it.
- Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and cook for about another 45 minutes to an hour (or until internal temperature in the thigh reaches 170 degrees). Remove from the oven and let sit for 10 to 15 minutes before serving. There should be no pink left in the meat. Be careful not to over cook or it will dry out - it should be fork tender and moist!
- Serve with rice. Pour the dripping over the rice and the bird at serving. There is very little fat in the hens, so the dripping are almost all olive oil with the seasonings.

- Season hens with lemon pepper, salt and sprinkle with minced garlic. Pour chicken broth in crockpot and carefully set hens into the broth. Crock all day on low. Serve with rice if desired.

This is my fiance's favorite slow cooker meal of mine. I usually serve it with the veggies over wild rice. You can turn this recipe for 2 into 4 by splitting the hens lengthwise after cooking.

- Coat the hens with about 1/4 of the mushroom soup.
- Mix the remaining mushroom soup with mushrooms, olives, zucchini, and garlic salt in a bowl. Stuff the mixture inside the hens. Arrange hens, breast sides up, in the slow cooker. Spoon any remaining soup mixture over the hens.
- Cook the hens in the slow cooker on High for 4 hours.

Steps:
- Preheat grill to medium high.
- Cut Cornish hens in half lengthwise. Wash and pat dry.
- Mix garlic powder, lemon pepper seasoning and paprika in a bowl.
- Lift up skin and rub meat with seasoning mixture. Replace skin.
- Cook on grill skin side down for 25 minutes, keeping grill lid closed.
- Flip and cook for 15 minutes.
- Mix lemon juice and olive oil. Brush on hens, then sprinkle with salt.
- Cook for additional 10 minutes, or until internal temperature is 180°F.

Steps:
- Rinse chicken, pat dry with paper towels, and use your fingers to loosen the skin over the breast and thighs.
- Stir butter and lemon pepper in a small bowl and insert seasoned butter beneath the loosened skin using a teaspoon. Push butter from spoon using the skin. Place lemon slice and garlic cloves into the chicken cavity.
- Place chicken into a slow cooker. Rub skin with olive oil and sprinkle seasoned salt, thyme, and cracked black pepper over the bird.
- Cook on High for 3 hours; reduce heat to Low and cook until chicken is very tender and an instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, reads at least 160 degrees F (70 degrees C), 2 to 3 more hours. If desired, cook bird on Low setting 6 to 8 hours.
