SLOW-ROAST PORK BELLY WITH CELERIAC & PEAR MASH
Soft tender pork with crisp crackling is a treat enough, but contrast with sweet mash for extra indulgence

- Heat oven to 220C/200C fan/gas 7. Take the pork out of the fridge and pat the skin dry. Put the rosemary leaves, salt and pepper in a mini chopper and grind together (or do this with a mortar and pestle). Rub the rosemary salt all over the pork, making sure it gets into the cuts in the skin. Sit the pork in a large roasting tin, ideally on a rack, and roast for 30 mins.
- Reduce heat to 170C/150 fan/gas 3 and roast for 1½ hrs more. Turn oven back up to 220C/200C fan/gas 7 and roast for 20-30 mins to crisp. Leave to rest on a board for 10 mins before carving.
- When the pork is nearly ready to come out, put the celeriac and potato in a large pan of water, bring to the boil and cook for 10 mins until just tender. Add the pears and cook for 2 mins more. Drain well, then mash until smooth - a mouli or potato ricer does this job best. Beat in a splash of cream and some butter, and serve with the pork and broccoli.

- Put the prepared carrot, onion and the sliced off tail ends of the pork into a medium sized pan with two teaspoons of olive oil. Cook on a high heat for approximately 5 minutes, stirring occasionally to allow the vegetables to almost char in the pan.
- Add the cider and water to the vegetable pan, cook at a high temperature to reduce the volume by half. Add the chicken stock pot and simmer for 5 minutes. Then strain through a sieve. For the belly pork and black pudding, rub a level tablespoon of salt into the skin of the remaining belly pork and leave for 5 minutes. Dry with a paper towel to remove all moisture.
- Put the salted belly pork into a roasting tin and cook for approximately 10 minutes at 230°C then a further 25 minutes at 180°C. Add the black pudding and cook for a further 5 minutes. For the mash, cover the potatoes with water, bring to the boil and simmer for 10 minutes. Then add the celeriac and cook together for a further 5 minutes until tender. Drain, then mash, adding 50g of butter and salt and pepper. Serve the belly pork with the black pudding, celeriac mash, the cider jus and Bramley Apple and Liquorice Jam on the side.

- For the Crispy Pork Belly, season the underside of the pork with salt, pepper and fennel seeds. Score the skin with a sharp knife then pat dry with paper towel. Rub the oil and salt into the skin. Cut into 8 evenly sized rectangular portions and place onto a shallow baking tray. Place into the oven and cook for 30 minutes. Decrease the oven temperature to 200C and cook for a further 30 minutes until the pork is tender.
- Turn the oven to the fan grill setting and carefully grill pork skin until crisp, being careful not to burn the skin. Remove from the oven and set aside to rest. Reserve the pan juices for the Glaze.
- For the Celeriac Puree, chop celeriac into 2cm cubes and place into a medium saucepan along with the milk, cream, shallots, butter and salt. Place over a medium heat and bring a simmer. Reduce the heat to low and simmer the celeriac gently for 30-35 minutes, until tender. Transfer the celeriac to a blender and enough cooking liquid to blend to a smooth puree. Pass through a fine drum sieve into a clean saucepan and season with salt, to taste. Cover and set aside to keep warm.
