SMOKED HADDOCK FISH CAKES (FINNAN HADDIE AND POTATO CAKES)



Smoked Haddock Fish Cakes (Finnan Haddie and Potato Cakes) image

Crispy fish cakes made with smoked haddock and mashed potatoes will be a family favorite in no time!

Number Of Ingredients 10

1 egg
breadcrumbs
olive oil
12 oz smoked haddock (or other flaky fish)
milk
12 oz mashed potatoes (floury potatoes are best)
1 egg
about 3/4 tsp Diamond Kosher or sea salt
freshly ground black pepper, as desired
chopped parsley, as desired

Steps:

  • Place the smoked haddock in a shallow pot and pour in enough milk to cover the fish.
  • Remove the fish and bring the milk to a boil.
  • Add the haddock again, reduce the heat and simmer for 4 minutes.
  • Remove the cooked haddock from the milk and set aside to cool. Next, remove the skin and flake the fish. Use the milk for a seafood chowder or Cullen Skink (you can freeze it to use later, too).
  • Put the mashed potatoes, flaked fish, 1 egg, salt, pepper and parsley into a bowl and mix together gently until well combined.
  • Form the potato and fish mixture into patties. You can make them smaller, as appetizers, or larger for a main dish serving.
  • Place on a cookie sheet and place in the fridge for about 15 minutes.
  • Beat the other egg and place in a tray or plate for dipping. In another tray or plate, place breadcrumbs. I like these trays. Dip each smoked haddock and potato cake in egg and coat evenly. Next, dip in the breadcrumbs and place on a tray or cookie sheet.
  • Put some oil in a nonstick or stainless steel frying pan and heat on medium high. Start adding a few smoked haddock fish cakes at a time. Fry until nicely golden brown before turning.
  • When cooked, remove from pan and place on paper towel-lined plate. Serve hot and enjoy!

500 g floury potatoes, peeled, cut into large chunks
15 g butter
350 g smoked mackerel
1/2 lemon, juice and 1 tsp finely grated zest
2 tablespoons dill, chopped
1 teaspoon mustard
1/4 teaspoon sea salt
1/2 teaspoon black pepper
1 tablespoon flour, for dusting
15 g butter, for frying
1 1/2 tablespoons olive oil, for frying
150 ml sour cream
2 teaspoons cider vinegar
1/2 teaspoon mustard
1 tablespoon horseradish, grated (can be from a jar)
1/2 apple, peeled, cored and grated

Steps:

  • Boil the potatoes until tender, drain and mash with the butter. Allow to cool enough to handle.
  • Remove the skin and bones from the mackerel and break the flesh into large chunks. Combine with the potato, lemon juice, zest, dill, mustard, salt and pepper. Mix well.
  • With wet hands form the mixture into eight cakes. Lightly dust with flour, place on a plate or tray and cover with clingfilm before refrigerating for 30 minutes to firm up (this makes the cakes easier to handle).
  • Meanwhile gently combine sour cream with the rest of the ingredients. Set aside and keep in the fridge.
  • Heat half the butter and oil and fry the cakes over a medium heat, four at a time, on both sides for 6 minutes on the first side, then about four on the other. Don't turn the cakes over until they have a nice crust. Keep warm.
  • Serve with the horseradish and apple sauce and lemon wedges.

  • Bring the milk to a gentle simmer in the saucepan. Place the fish into the milk to poach for around 6 minutes until the fish is just cooked. The time will depend on the thickness of your fish, thicker fillets may need a couple of minutes longer.
  • Remove the fish gently from the milk and set aside. In a small bowl, add the cornflour and mix with a little drop of water to form a thin liquid. Return the milk to a low heat and whisk the cornflour liquid in.
  • Continue to whisk gently. Add the mustard powder and whole grain mustard until the sauce thickens. If you prefer a thicker or thinner sauce then add more or less cornflour - just change the Points and calories etc accordingly. Season the sauce with salt and pepper.

  • Meanwhile, place the fish and mint stalks in a large pan and cover with the milk plus 300ml water. Poach, covered, for 5 minutes until just beginning to flake. Lift out onto a plate, discard the mint stalks and leave to cool, then flake the fish into large pieces.

  • For the haddock cakes, bring the milk to a simmer in a heavy-based pan and add the haddock fillets. Cook over a low heat for 3–4 minutes, or until the fish is cooked through, then remove from the pan and set aside to cool slightly.
  • Meanwhile cook the potatoes in a pan of boiling salted water for 15 minutes, or until tender. Drain, then return the potatoes to the pan and cook for one minute to drive off any excess moisture.
  • Peel and chop the two hard-boiled eggs and stir into the fish and potato mixture. Add the capers, gherkins, shallots and parsley to the bowl and mix well to combine.
  • With slightly damp hands, divide the mixture into eight equal portions and shape each portion into a small cake. Dredge each cake in the flour, then dip into the beaten eggs and then roll in the breadcrumbs to coat.
  • Half-fill a deep, heavy-based pan with vegetable oil and heat to 180C/350F, checking the temperature using a digital thermometer. (CAUTION: hot oil can be dangerous.
  • For the wilted watercress and spinach, heat the butter in a frying pan until foaming, then fry the watercress and spinach for 1–2 minutes, or until wilted.
  • To serve, divide the wilted watercress and spinach among four serving plates and top each serving with two fish cakes.
