LENTIL-SAUSAGE STEW



Lentil-Sausage Stew image

This stick-to-your-ribs stew with smoked sausage, lentils and sweet potatoes is perfect for chilly weeknights.

1 tablespoon olive oil
1 lb smoked sausage, cut into 1/4-inch slices
3 medium carrots, cut into 1/2-inch slices (1 1/2 cups)
1 large onion, chopped (1 cup)
1 large sweet potato, peeled, cut into1/2-inch pieces
2 cloves garlic, finely chopped
2 teaspoons chopped fresh thyme leaves
2 cups dried brown lentils, sorted, rinsed
2 cartons (32 oz each) Progresso™ chicken broth (8 cups)
1 can (14.5 oz) whole tomatoes, drained
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
4 cups fresh baby spinach leaves, coarsely chopped

Steps:

  • In 4-quart Dutch oven, heat oil over medium-high heat. Cook sausage in oil 5 to 6 minutes, stirring frequently, until golden brown. With slotted spoon, remove sausage to bowl; cover to keep warm.
  • Add carrots, onion and sweet potato to drippings in Dutch oven. Cook 8 minutes, stirring occasionally, until almost tender. Stir in garlic and thyme; cook 1 minute. Add lentils and broth. Heat to boiling; reduce heat. Cover; simmer 30 minutes or until lentils are tender.
  • Stir in sausage, tomatoes, salt and pepper, breaking up tomatoes. Cook uncovered 5 to 7 minutes. Stir in spinach; cook 2 to 3 minutes or until wilted.

Not all stews need to be time-consuming to prepare. A nontraditional stew with chunks of smoked sausage, both cooks and develops its flavor quickly. This is also the kind of recipe that can be prepared without bringing a load of groceries home. Most of the ingredients are pantry shelf staples and everyday vegetables.

6 carrots, peeled and julienned
2 medium onions, peeled and quartered
1 1/2 cups celery (diced or sliced)
1 (10 1/2 ounce) can beef broth or 1 (10 1/2 ounce) can beef consomme
1 cup water
1 bay leaf
1/8 teaspoon pepper
2 potatoes, peeled and diced
1 tablespoon flour
1 lb smoked sausage, cut into 1-inch pieces
salt, to taste
parmesan cheese, grated

Steps:

  • Place vegetables in a saucepan with consomme or broth, water, bay leaf and pepper.
  • Heat to boil; reduce heat, cover and simmer for ten minutes.
  • Add potatoes; cook ten minutes longer or until vegetables are tender.
  • Remove bay leaf.
  • Mix small amount of liquid with flour to make a paste; stir into vegetables.
  • Add sausage.
  • Cook, stirring occasionally until sausage is hot and liquid is thickened.
  • Add salt to taste.
  • Top each serving with Parmesan cheese.

4 large potatoes, cubed
2 pounds smoked sausage, cut into 3/4-inch pieces
2 bottles (12 ounces each) beer
2 cups reduced-sodium chicken broth
2 ribs celery, sliced
1 medium onion, chopped
2 garlic cloves, minced
2 bay leaves
1/2 teaspoon minced fresh thyme
1/4 teaspoon minced fresh rosemary
2 tablespoons butter, cubed

Steps:

  • In a 6-qt. slow cooker, combine the first 10 ingredients. Dot with butter. Cook, covered, on low until vegetables are tender, 8-10 hours. Discard bay leaves before serving.

1 package (16 ounces) smoked sausage links, halved lengthwise and sliced
1 small onion, chopped
2 cans (15 ounces each) black-eyed peas, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (8 ounces) tomato sauce
1 cup beef broth
1/4 teaspoon garlic powder
1/4 teaspoon Cajun seasoning
1/4 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon hot pepper sauce
1-1/2 cups frozen corn, thawed

Steps:

  • In a Dutch oven or soup kettle, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir in the peas, tomatoes, tomato sauce, broth, seasonings and hot pepper sauce. , Cook and stir for 10-12 minutes or until hot and bubbly. Stir in corn; cook 5 minutes longer or until heated through., Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.
