As a busy mom, I love my slow cooker meals! Beef tips remind me of a childhood favorite. I cook this beef tips recipe with mushrooms and red wine, then serve over brown rice, noodles or mashed potatoes. -Amy Lents, Grand Forks, North Dakota

1/2 pound sliced baby portobello mushrooms
1 small onion, halved and sliced
1 beef top sirloin steak (1 pound), cubed
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil
1/3 cup dry red wine or beef broth
2 cups beef broth
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch
1/4 cup cold water
Hot cooked mashed potatoes

Steps:

  • Place mushrooms and onion in a 3-qt. slow cooker. Sprinkle beef with salt and pepper. In a large skillet, heat 1 teaspoon oil over medium-high heat; brown meat in batches, adding more oil as needed. Transfer meat to slow cooker., Add wine to skillet, stirring to loosen browned bits from pan. Stir in broth and Worcestershire sauce; pour over meat. Cook, covered, on low 6-8 hours or until meat is tender., In a small bowl, mix cornstarch and cold water until smooth; gradually stir into slow cooker. Cook, covered, on high until gravy is thickened, 15-30 minutes. Serve with mashed potatoes.

A really easy dish to throw together. You can use whatever kind of beef roast you want, or try pork. I have honestly never paid attention to what size roast I have used or measured the onions or Worcestershire, but I think that this is close. I will update it if necessary the next time I make it. Serve over mashed potatoes or pasta to catch the sauce. Enjoy!

3 -4 lbs beef roast
10 ounces condensed cream of mushroom soup, low fat (1 can)
10 ounces mushrooms, drained (1 can)
1 cup onion, diced
1 teaspoon Worcestershire sauce
salt and pepper, to taste

Steps:

  • Place roast in crock pot. Mix other ingredients in a separate bowl and pour over the roast.
  • Cook roast on low for 6-7 hours or on high for 3-4 hours. Add more seasoning if desired after tasting the completed dish.

2 pounds Beef Sirloin Tip Steak, cut into 1 inch pieces , can also use stew meat.
1/2 cup Worcestershire Sauce
1 cup Italian Dressing (not creamy)
2 teaspoons Garlic Pepper Seasoning
1 cup Barbecue Sauce
3 teaspoons water
3 teaspoons corn starch

Steps:

  • In a crock pot on low, place steak pieces on the bottom.
  • Add Worcestershire Sauce, Italian Dressing, Garlic Pepper Seasoning & Barbecue Sauce. Stir to mix.
  • Cook on low for 3 - 4 hours or until internal temperature of beef comes to 160*F (Medium).
  • Once beef comes to 160*F, in a small bowl, mix together the water & corn starch. Add to steak mixture and mix.
  • Cook until sauce has thickened..
  • Serve over mashed potatoes or noodles.

Add some of the beef in a single layer, not touching, and cook for 30 seconds or so until golden, flip and brown on the other side. Transfer beef to the insert of 6-quart slow cooker. Repeat with remaining beef, adding additional oil, if needed (let it heat up before adding more beef pieces).
  • Once the beef has all been browned and transferred to the slow cooker, add the onions to the skillet set over medium heat. If the skillet is dry, add a teaspoon or so of oil.
  • Cook the onions for 3-4 minutes, until translucent. Scrape up any browned bits from the bottom of the skillet. Add the garlic and cook for another minute. Pour in the beef broth or stock and Worcestershire sauce and bring to a simmer, scraping up bottom of pan.
  • Pour mixture into the slow cooker with the beef. Add the bay leaves and thyme. Cover and cook on low for 8-9 hours or 4-5 hours on high until beef is tender.
