This got me first place in a Spam® 'cookoff' that a local TV station held. They are fast and easy hors d'oeuvres and are always a hit during Sunday football!

- Preheat an oven to 350 degrees F (175 degrees C).
- Mix together the meat, Cheddar cheese, baking mix, water, and cayenne in a large bowl. Form the mix into 1-inch balls and place on a greased baking sheet.
- Bake in preheated oven until golden brown, about 12 to 14 minutes. Serve warm.

These tasty open faced Spam burgers are simple to make. Few ingredients, quick cooking time and great taste make them a winner.

Steps:
- Preheat your oven's broiler.
- Combine the lunch meat, eggs, cheese and onion in a food processor, or run them through a grinder. Once everything is minced, stir in enough of the mayonnaise to hold it together. Spoon equal amounts of the mixture onto open buns, and place two pieces of bacon on top of each one.
- Broil a few inches from the heat for 5 to 8 minutes, or until the bacon is crisp. Watch carefully so the burgers do not burn.

MEATLOAF 'CUPCAKES' RECIPE BY TASTY

Steps:
- Preheat oven to 350°F (180°C).
- In a bowl, mix together the meatloaf ingredients.
- Line a muffin tin with cupcake liners.
- Fill the muffin liners with the meatloaf mixture and pat down to form a dome.
- Bake meatloaf cupcakes for 25-30 minutes or until cooked through.
- In a saucepan over medium heat, add the potatoes, water to cover the potatoes, and salt.
- Bring potatoes to a boil, then reduce the heat and cover.
- Simmer for 15-20 minutes or until potatoes are fork-tender.
- Drain the water and add in the butter and milk.
- Mash the potatoes with a fork until smooth.
- Fill a ziplock bag with the mashed potatoes.
- Pipe the potatoes onto each meatloaf cupcake to resemble frosting.
- Sprinkle with parsley.
- Enjoy!

- Preheat oven to 350.
- In a large bowl, grate the SPAM.
- Add eggs, oats and milk, and mix well.
- Lightly spray a 12- cup muffin tin with cooking spray.
- Fill each cup 2/3 full with SPAM mixture.
- Using back of spoon, press mixture into tins.
- In a small bowl, whisk together the brown sugar, mustard, vinegar and water.
- Lightly spoon glaze mixture over SPAM mixture.
- Bake for 35 to 30 minutes or until set.
- Remove cupcakes from oven.
- Place oven rack 2-3 inches from top heat element (broil).
- Top each cupcake with potatoes.
- Broil cupcakes until lightly browned, 2-3 minutes.
- Let cool in tin for 5 minutes before serving.

Once again, I accepted a challenge from another AR member. She asked me to make a dessert using SPAM® luncheon meat. It was a success!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 24 muffin cups or line with paper muffin liners.
- Heat a large skillet over medium-high heat. Cook and stir grated luncheon meat in hot skillet until browned and crispy, 5 to 7 minutes. Transfer meat to a paper towel-lined plate and cool completely.
- Beat cake mix, water, mayonnaise, and eggs together in a large bowl with an electric mixer on low speed until just moistened. Increase speed to medium and beat until smooth, about 2 minutes. Fold 2/3 of the fried luncheon meat into cake batter. Spoon batter into prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, about 20 minutes. Cool in the pans set on wire racks until completely cool.
- Melt butter in a small saucepan over medium heat. Add brown sugar and heavy cream; stir until sugar dissolves. Bring to a simmer and cook sauce without stirring for 1 minute. Remove from heat, stir salt into sauce, and cool completely.
- Transfer sauce to a large bowl and beat in confectioners' sugar 1 cup at a time until frosting reaches desired consistency. Spread frosting onto cooled cupcakes and top with remaining fried luncheon meat.

SPAM, I AM... (HOME-MADE SPAM)
Okay... So none of us want to admit that we truly like SPAM. And there may be some who will never even try it. Then again, some may have never heard of it. This is a recipe I found some time ago while searching the web (although I have "tweaked" it a bit).. I was planning to make "SPAM Cupcakes" and didn't have a can of SPAM in the house. (YES... I said "SPAM Cupcakes"... they are not as gross as you may think. Give them a try sometime). Anyway, this recipe actually does work for making SPAM. I believe it is actually cheaper than buying a couple of cans, but it takes some time. And the nice thing is, you know exactly what ingredients are in the SPAM loaf (no preservatives). I hope you give it a try. Thanks for your consideration of this recipe and please feel free to give your honest opinion... as I am still "tweaking" this recipe. I've made this a couple of times now... and actually we like this as much as the canned. *Note: Prep time includes the 'overnight' refrigeration time.

- Preheat oven to 300°F.
- Grind the pork shoulder in a meat grinder (Either use a tabletop meat grinder or a KitchenAid mixer with the meat grinder attachment. Set aside.
- Finely mince the ham with the garlic in a food processor.
- Dump the ground pork shoulder, minced ham / garlic mixture and the Tender Quick into a large bowl and mix by hand until fully combined.
- Pack the meat mixture into a bread pan and cover with foil. Place the bread pan into a large baking dish filled 3/4 full with water. (Basically, a 'hot water bath').
- Place the baking dish in the oven and bake for three hours (the internal temperature of the SPAM loaf should reach 155* F).
- Remove from the oven and uncover the bread pan (there will be a lot of grease, but do not worry.). Pour off all of the fat into a jar or can to dispose of later. *Note: This is a very important step, so DO NOT skip it. If you do, your loaf will be covered in a thick coat of gelatine.
- Cover the bread pan loosely with foil and place a heavy weight on top of the foil. (You can use cold bricks wrapped in foil and put them in another bread pan and put that bread pan on the SPAM loaf).
- Place the weighed down SPAM loaf into the refrigerator and keep it there overnight. In the morning, your SPAM will be ready to use however you choose to use it.
- *Note: This homemade SPAM is not canned and does not contain preservatives, so it will not last forever. Keep it as long as you would keep ham.
