Homemade Hot Chocolate image

Hot-chocolate mix is a wintertime staple. A homemade version is delicious and natural-containing only cocoa, sugar, and salt-and especially economical compared with store-bought mixes.

Yield Makes 5 3/4 cups dry mix or 92 eight-ounce servings

Number Of Ingredients 4

Ingredients

3 1/2 cups sugar
2 1/4 cups cocoa
1 tablespoon table salt
Whole milk for serving

Steps:

In a large bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store the mixture in an airtight container.
For individual servings, pour 1 cup whole milk into a microwave-safe mug, and microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. For a larger batch of cocoa, warm the milk in a saucepan set over medium-low heat, taking care not to let the milk boil; as it warms, stir in 2 tablespoons of mix for each cup of milk.

HOT CHOCOLATE MIX:
8 cups nonfat dry milk powder
3-3/4 cups instant chocolate drink mix
1-1/2 cups powdered nondairy creamer
1-1/4 cups confectioners' sugar
3 tablespoons instant coffee granules
1/4 teaspoon ground cinnamon
1 envelope unsweetened orange or raspberry Kool-Aid mix
CHOCOLATE CUPS:
1/2 cup semisweet chocolate chips
1 teaspoon shortening
Whipped cream in a can

Steps:

In a large bowl, combine the first seven ingredients. Store in an airtight container for up to 6 months., For chocolate cups, in a microwave, melt chips and shortening; stir until smooth. With a small pastry brush or 1/2 teaspoon measure, spread chocolate mixture on the inside of 1-in. foil or paper candy cups. , Place on a baking sheet. Refrigerate for 45 minutes or until firm. Just before serving, remove foil or paper cups and add whipped cream., To prepare hot chocolate: For each serving, combine 1/3 cup mix and 1 cup boiling water; stir to dissolve. Place one filled chocolate cup in each mug; stir until melted.

My husband and I just returned home from a 4-day Branson vacation in a condo with 2 other couples. We had a blast experimenting with new dishes and called it a night in front of the fireplace with Maple Pumpkin Spice Popcorn (see recipe) and homemade hot chocolate. My friend, Evon, suggested I add a spoon of peanut butter to the hot chocolate. What a pleasant surprise it was!
